The purpose of this study was to evaluate the microbiological and sensory quality as well as the safety of ready-to-eat (RTE) cooked foods prepared in and distributed from a centralized kitchen to schools in Argentina. A total of 101 cooked food samples delivered as hot RTE cooked foods (group A) and as RTE cooked foods at room temperature (group B) and 140 surface swab environment samples were collected from February to November 1999. Petrifilm plates were used for aerobic (PAC), coliform (PCC), and Escherichia coli (PEC) counts. Standard methods were used to determine Enterobacteriaceae (EntC) and thermotolerant coliform counts (TCC). Samples were also tested for the presence of Salmonella spp., Staphylococcus aureus, Bacillus cereus, and Clostridium perfringens. Food temperatures just before samples were put into containers ranged from 80 to 98 degrees C and from 28 to 32 degrees C for group A and group B, respectively. For group A food samples, PAC ranged from 1.04 to 3.50 log CFU/g, and PCC, PEC, TCC, and EntC were not detected. For group B food samples, PAC ranged from 3.63 to 6.48 log CFU/g, PCC ranged from 1.90 to 5.36 log CFU/g, TCC ranged from 1.30 to 3.95 log CFU/g, and EntC ranged from 3.60 to 5.46 log CFU/g. Of the foodborne pathogens, only B. cereus was isolated (63.4% of samples) in both food groups (<4 log CFU/g). The microbiological and sensory quality and the safety of group A foods were satisfactory. Large numbers of PAC and EntC detected in group B foods show that better control is needed to avoid potential foodborne diseases.  相似文献

Novel and potent inhibitors of Plasmodium falciparum plasmepsin II were identified by post‐processing the results of a docking screening with BEAR, a recently reported procedure for the refinement and rescoring of docked ligands in virtual screening. FRET substrate degradation assays performed on the 30 most promising compounds resulted in 26 inhibitors with IC50 values ranging from 4.3 nM to 1.8 μM .

Dietary supplementation with conjugated linoleic acid (CLA) may reduce body fat mass and increase lean body mass in various species. The objective of this study was to study the effects of conjugated linoleic acid (CLA) supplementation on body composition, serum leptin and triacylglycerol levels in Wistar rats. Rats received linoleic acid (group C) or conjugated linoleic acid (group AE, supplemented with AdvantEdge CLA, and group CO, supplemented with CLA One) in the concentrations of 2% of daily feed consumption. Serum leptin and triacylglycerol levels of rats were measured by means of commercial kits. After 42 days of supplementation, rats in the control group exhibited body fat contents of 53.94 +/- 6.80 g, and those in groups AE and CO had 45.43 +/- 4.86 g and 43.75 +/- 1.93 g, respectively, corresponding to a mean body fat reduction of 18%. Water, whole body protein and ash contents of rats supplemented with CLA were statistically higher relative to control group content (corresponding to a mean increasing of 7.65%; 6.5% and 12.35%, respectively). Experimental groups AE and CO, which received CLA supplementation, had statistically lower serum leptin levels (3.45 +/- 0.46 ng/mL and 3.08 +/- 0.19 ng/mL, respectively) relative to the control group (4.21 +/- 0.22 ng/mL) which received linoleic acid. Triacylglycerol levels did not change after CLA supplementation (p > 0.05). Supplementation with conjugated linoleic acid in the concentration of 2% of mean daily feed consumption was able to change body composition of rats after 42 days of experimentation.  相似文献

Chromatographic techniques were used to separate secondary products generated by thermal degradation of methyl linoleate hydroperoxides (MLHP). The MLHP were obtained by oxidation, selected, and concentrated by solid-phase extraction (SPE) and thin-layer chromatography (TLC). The purified MLHP were then thermo-degraded in the gas-chromatographic glass liner and analyzed on-line by gas chromatography-mass spectrometry (GC-MS). The MLHP were also thermodegraded and collected in a short silicic acid-packed column, eluted, separated by TLC, and then analyzed by GC. By considering the elution in TLC, the GC retention times and the GC-MS analyses, it was possible to characterize the mono- and the dioxygenated secondary products, particularly those having a boiling point higher than methyl linoleate. The peaks that corresponded to the mono-oxygenated products (epoxy, hydroxy, and keto) were identified, and, on the basis of their MS spectra, molecular structures were proposed. A specific elution order was suggested for keto derivatives: 9-keto,Δ10,12- and 13-keto,Δ9,11-octadecadienoate. The hydroxy derivatives, which show the typical fragmentations of 9-hydroxy,Δ10,12- and 13-hydroxy,Δ9,11-octadecadienoate, were also identified. On the other hand, identification of the di-oxygenated compounds was more difficult, and, therefore, it was not possible to indicate each positional isomer; however, their elution order could be epoxy-hydroxy and epoxy-keto derivatives.  相似文献

The objective of this work was to evaluate the influence of oil concentration and homogenization pressure on the emulsion and particle properties during the microencapsulation of basil essential oil by spray drying, using gum arabic as the wall material. Experiments were planned according a 22 rotational central composite design. The independent variables were oil concentration with respect to total solids (10–25%) and homogenization pressure (0–100 MPa). Emulsions were analyzed for droplet mean diameter, stability, and viscosity, and particles were analyzed for oil retention, moisture content, particle size, and morphology. Emulsion viscosity was not affected by any of the independent variables. The increase in the homogenization pressure from 0 to 100 MPa resulted in smaller emulsion droplet size (down to 0.40 µm) and, consequently, higher oil retention (up to 95%). On the other hand, higher oil loads (25%) resulted in poorer oil retention (51.22%). Microencapsulation of basil essential oil using gum arabic as the wall material proved to be a suitable process to obtain powdered basil essential oil, presenting great oil retention with the use of lower oil concentration and higher homogenization pressure.  相似文献

Triblock copolymer additives are found to stabilize thin-film dewetting of B-type homopolymers with degree of polymerization (DOP) P deposited on silicon oxide. The triblock copolymers’ architectures are ABA and BAB, where A and B represent anchoring and nonadsorbing blocks with DOP's N A and N B, respectively. Upon adding 1 vol.% of the ABA additive, dewetting is only observed for anchoring block molar fractions, f A, below 4%. Dewetting is arrested in films containing 1 vol.% ABA, BAB, or AB that have similar values of f A ~ 8%, showing that chain architecture is not the only indicator of a successful additive. Compared with films containing diblock copolymers, the interfacial excess, z*, of triblock copolymers at the melt/substrate interface is relatively small as measured by low-energy forward-recoil spectrometry. Because adsorbed copolymers can reduce the capillary driving force for dewetting and participate in entanglements with matrix chains, the higher coverage and grafting density observed for diblock copolymers suggests that diblocks are more effective than triblocks in improving thin-film stability.  相似文献

Thermomonas hydrothermalis is a Gram‐negative thermophilic bacterium that is able to live at 50 °C. This ability is attributed to chemical modifications, involving those to bacterial cell‐wall components, such as proteins and (glyco)lipids. As the main component of the outer membrane of Gram‐negative bacteria, lipopolysaccharides (LPSs) are exposed to the environment, thus they can undergo structural chemical changes to allow thermophilic bacteria to live at their optimal growth temperature. Furthermore, as one of the major target of the eukaryotic innate immune system, LPS elicits host immune response in a structure‐dependent mode; thus the uncommon chemical features of thermophilic bacterial LPSs might exert a different biological action on the innate immune system—an antagonistic effect, as shown in studies of LPS structure–activity relationship in the ongoing research into antagonist LPS candidates. Here, we report the complete structural and biological activity analysis of the lipo‐oligosaccharide isolated from Thermomonas hydrothermalis, achieved by a multidisciplinary approach (chemical analysis, NMR, MALDI MS and cellular immunology). We demonstrate a tricky and interesting structure combined with a very interesting effect on human innate immunity.  相似文献

Significant antiproliferative effects against various tumor cell lines were observed with novel ampicillin salts as ionic liquids. The combination of anionic ampicillin with appropriate ammonium, imidazolium, phosphonium, and pyridinium cations yielded active pharmaceutical ingredient ionic liquids (API‐ILs) that show potent antiproliferative activities against five different human cancer cell lines: T47D (breast), PC3 (prostate), HepG2 (liver), MG63 (osteosarcoma), and RKO (colon). Some API‐ILs showed IC50 values between 5 and 42 nM , activities that stand in dramatic contrast to the negligible cytotoxic activity level shown by the ampicillin sodium salt. Moreover, very low cytotoxicity against two primary cell lines—skin (SF) and gingival fibroblasts (GF)—indicates that the majority of these API‐ILs are nontoxic to normal human cell lines. The most promising combination of antitumor activity and low toxicity toward healthy cells was observed for the 1‐hydroxyethyl‐3‐methylimidazolium–ampicillin pair ([C2OHMIM][Amp]), making this the most suitable lead API‐IL for future studies.  相似文献
