Strawberry purées were prepared using a commercial polygalacturonase (PG) and a highly purified pectinesterase (PE) preparation, respectively. To elucidate the effect of pectin on color stability following enzymatic pulp maceration, pectin composition was studied by isolating and fractionating the alcohol-insoluble residue from the strawberry purées. The purées were stored at +20 and +4 °C in the dark over a period of 24 weeks monitoring the amounts of monomeric and polymeric anthocyanins as well as antioxidant activities (FRAP, TEAC). Individual anthocyanins were analyzed by HPLC–DAD–MS n , and color measurements were obtained in the CIE L*a*b* system. Pectin composition was significantly modified following enzymatic maceration of the purées. While PG treatment generally resulted in pectin losses, oxalate-soluble pectins were increased in PE-treated purées. After 24 weeks of storage, the best anthocyanin retention was observed in PE-treated purées. Such products also revealed greatest anthocyanin half-life values and lowest proportion of polymeric pigments. Compared to an untreated control, enzymatic purée maceration using the PG was also beneficial for pigment retention, but less effective than PE. In contrast, color and antioxidant activity were independent of both enzymatic treatments. An initial heating step (90 °C, 10 s) for immediate inactivation of native enzymes such as polyphenoloxidases slightly improved pigment stability, while lowered temperature during mash maceration was less effective. However, by far best color and pigment retention were achieved when the purées were stored at 4 °C in the dark.  相似文献

A cost‐effective and robust encapsulation system for chemical admixtures with delayed release mechanisms for construction materials like dry mix mortars is presented. Based on supplementary cementitious materials, a superplasticizer was encapsulated in matrix‐based encapsulations. Subsequently, the particle characteristics of the agglomerates and the release behavior of the superplasticizer were examined. The main objective of this research was to prove the functionality of such encapsulations for the future use in construction materials. The results obtained indicate that the performance of construction chemicals could be improved by encapsulation and controlled release for the future development of new construction materials. Furthermore, material characteristics of the supplementary cementitious material like the incline to excessive dusting or the materials density were improved by encapsulation.  相似文献

During operation, thermomechanical stresses occur in refractory linings. Under elevated stress and temperatures, these ceramics experience primary creep, which can further proceed to the secondary and tertiary creep stages. This necessitates a characterization of their three-stage creep behavior. Hence, two advanced uniaxial tensile and compressive creep testing devices are utilized. The Norton-Bailey creep equations and an inverse identification procedure are applied for the evaluation of the creep curves. To account for the full three-stage creep behavior in thermomechanical modelling activities, a creep-stage transition criterion is identified and subsequently implemented together with the Norton-Bailey creep-strain rate representations in a new developed creep model. The finite element simulation results from different creep testing procedures are in accordance with the corresponding experimental results of a magnesia-chromite refractory ceramic. The study also reveals the temperature-dependent asymmetrical creep behavior of the material in terms of the creep-strain rates and critical creep strains.  相似文献

Mechanical testing of carbon containing refractories at high temperatures requires measures to protect the sample from oxidation. Therefore, special setups for tensile and compressive creep testing were developed to prevent the oxidation of carbon in the sample. A MgO-C refractory was selected for a case study. These developments allow the quantification of the tensile and compressive creep behaviour of MgO-C refractories at temperatures up to 1500?°C. The creep parameters are determined by an inverse evaluation method for the obtained experimental data. They enable the consideration of creep in a thermomechanical finite element simulation of refractory linings in service.  相似文献

Spreadsheet programs are probably the most successful example of end-user software development tools and are used for a variety of purposes. Like any type of software, they are prone to error, in particular as they are usually developed by non-programmers. While various techniques exist to support the developer in finding errors in procedural programs, the tool support for spreadsheet debugging is still limited. In this paper, we show how techniques from model-based diagnosis can be applied and extended for spreadsheet debugging by translating the relevant parts of a spreadsheet to a constraint satisfaction problem. We additionally propose both problem-specific and generalizable extensions to the classical diagnosis algorithms which help to detect potential problems in a spreadsheet based on user-provided test cases more efficiently. The proposed techniques were integrated into a modular framework for spreadsheet debugging and evaluated with respect to scalability based on a number of real-world and artificially created spreadsheets. An additional error detection exercise involving 24 subjects was performed to assess the general applicability of such advanced spreadsheet debugging techniques for end users.  相似文献

The author byline is an indispensable component of a scientific paper. Some journals have added contribution lists for each paper to provide detailed information of each author’s role. Many papers have explored, respectively, the byline and contribution lists. However, the relationship between the two remains unclear. We select three prominent general medical journals: Journal of the American Medical Association (JAMA), Annals of Internal Medicine (Annals), and PLOS Medicine (PLOS). We analyze the relationship between the author byline and contribution lists using four indexes. Four main findings emerged. First, the number, forms, and names of contribution lists significantly differed among the three journals, although they adopted the criteria of the International Committee of Medical Journal Editors. Second, a U-shaped relationship exists between the extent of contribution and author order: the participation levels in contribution lists were highest for first authors, followed by last and second authors, and then middle authors with the lowest levels. Third, regarding the consistency between author order in the contribution list and byline, every contribution category has a high consistency in JAMA and Annals, while PLOS shows a low consistency, in general. Fourth, the three journals have a similar distribution for the first authors in the contribution category; the first author in the byline contributes the highest proportion, followed by the middle and second authors, and then the last author with the lowest proportion. We also develop recommendations to modify academic and writing practice: implement structured cross-contribution lists, unify formats and standards of contribution lists, draft the author contribution criteria in the social sciences and humanities, and consider author contribution lists in scientific evaluation.  相似文献
