Dietary fiber from coconut flour: A functional food   总被引:2,自引:0,他引:2  
To determine the effectiveness of dietary fiber present in coconut flour as a functional food, the following studies were conducted: (a) Dietary Fiber Composition and Fermentability of Coconut Flour; (b) The Effect of Coconut Flour on Mineral Availability from Coconut Flour Supplemented Foods; (c) Glycemic Index of Coconut Flour Supplemented Foods in Normal and Diabetic Subjects; and (d) The Cholesterol Lowering Effect of Coconut Flakes in Moderately Raised Cholesterol Levels of Humans. The dietary fiber content of coconut flour was 60.0 ± 1.0 g/100 g sample, 56% insoluble and 4% soluble. Fermentation of coconut flour produced short chain fatty acids with butyrate (1.73 ± 0.07 mmol/g fiber isolate) > acetate (1.40 ± 0.12; (< 0.05) > propionate (0.47 ± 0.01; < 0.05). Iron and zinc availability were highest for carrot cake (Fe, 33.3 ± 0.7%; Zn, 12.6 ± 0.1%) supplemented with 20% coconut flour while multigrain loaf supplemented with 10% and macaroons with 25% coconut flour were highest for calcium availability (63.4 ± 8.0% and 38.7 ± 1.1%, respectively). Increasing concentrations of dietary fiber from coconut flour did not affect mineral availability from all test foods. The significantly low glycemic index foods (< 60 mmol × min/l) investigated were: macaroons (45.7 ± 3.0), carrot cake (51.8 ± 3.3) and brownies (60.1 ± 5.4) with 20–25% coconut flour. The test foods containing 15% coconut flour has a glycemic index ranging from 61 to 77 mmol × min/l. Among the test foods, pan de sal (87.2 ± 5.5) and multigrain loaf (85.2 ± 6.8) gave significantly higher glycemic index with 5% and 10% coconut flour. On the other hand, granola bar and cinnamon which contained 5% and 10% coconut flour, respectively gave a glycemic index ranging from 62 to 76 mmol × min/l and did not differ significantly from the test foods containing 15% coconut flour (< 0.05). A very strong negative correlation (r = − 85, n = 11, < 0.005) was observed between the glycemic index and dietary fiber content of the test foods supplemented with coconut. There was a significant reduction (%) in serum total and LDL cholesterol for: oat bran flakes, 8.4 ± 1.4 and 8.8 ± 6.7, respectively; 15% coconut flakes, 6.9 ± 1.1 and 11.0 ± 4.0, respectively; and 25% coconut flakes, 10.8 ± 1.3 and 9.2 ± 5.4, respectively (< 0.05). Serum triglycerides were significantly reduced for all test foods: corn flakes, 14.5 ± 6.3%; oat bran flakes, 22.7 ± 2.9%; 15% coconut flakes, 19.3 ± 5.7%; and 25% coconut flakes, 21.8 ± 6.0% (< 0.05). Results from the above study can be a basis in the development of coconut flour as a functional food.

Industrial relevance

The functionality of coconut flour in terms of prevention for risk of chronic diseases, e.g. diabetes mellitus, cardiovascular diseases (CVD) and colon cancer, revealed increase production of coconut and coconut flour. The production of coconut flour is very economical because it can be produced in a small or large scale. The raw material is obtained from the by-product (waste) of the coconut milk industry and the process and equipment used in its production is simple and cheap. Coconut flour as a good source of dietary fiber can be added to bakery products, recipes and other food products for good health.  相似文献

The Sacramento-San Joaquin Delta is the major drinking water source for 23 million California residents. Consequently, many studies have examined disinfection byproduct (DBP) formation in relation to Delta dissolved organic carbon (DOC) concentration. However, DOC characteristics within the Delta are not the same as those entering downstream water treatment facilities. As water is transferred to Southern California through the California Aqueduct, a 714.5 km-open channel, it is exposed to sunlight, potentially altering DBP precursors. We collected water from three sites within the Delta and one nearthe California Aqueduct, representing different DOC sources, and irradiated them in a solar simulator at a dose equivalent to that received during four days conveyance in the aqueduct. Photolytic changes in DOC were assessed by measuring CO2 and organic acid production, fluorescence, and ultraviolet absorbance over time. Trihalomethane (THM) and haloacetic acid (HAA) formation potentials, as well as the distribution of hydrophobic, transphilic, and hydrophilic acid fractions were determined at exposures equivalent to one and four days. Solar irradiation significantly decreased ultraviolet absorbance and fluorescence intensity, produced organic acids, and increased the hydrophilic fraction of waters. These changes in DOC caused a shift in bromine incorporation among the THM and HAA species. Our results are the first to demonstrate the importance of sunlight in altering DOC with respect to DBP formation.  相似文献

Felix 01 (F01) is a bacteriophage originally isolated by Felix and Callow which lyses almost all Salmonella strains and has been widely used as a diagnostic test for this genus. Molecular information about this phage is entirely lacking. In the present study, the DNA of the phage was found to be a double-stranded linear molecule of about 80 kb. 11.5 kb has been sequenced and in this region A + T content is 60%. There are relatively few restriction endonuclease cleavage sites in the native genome and clones show this is due to their absence rather than modification. A restriction map of the genome has been constructed. The ends of the molecule cannot be ligated although they contain 5' phosphates. At least 60% of the genome must encode proteins. In the sequenced portion, many open reading frames exist and these are tightly packed together. These have been examined for homology to published proteins but only 1 to 17 shows similarity to known proteins. F01 is therefore the prototype of a new phage family. On the basis of restriction sites, codon usage and the distribution of nonsense codons in the unused reading frames, a strong case can be made for natural selection that reacts to mRNA structure and function.  相似文献

The current study used the melt mixing approach to create a variety of agar/SiO2 nanoparticle (AG/Si) nanocomposites films. Silica nanoparticles were included as a filler in different proportions, varying from 0% to 5% (w/w). The study examined how the composition impacted the chemical properties, mechanical characteristics, thermal properties, water vapor barrier, surface color, and antimicrobial capabilities. After the addition of SiO2, the tensile strength increased significantly from 30.77 to 40.97 MPa at 4% SiO2. Moreover, the presence of SiO2 was improved the contact angle from 53.81° to 63.24°, brightness of the film (L*) from 70.63 ± 3.34 up to 84.80 ± 2.26, maximum degradation temperature (Tdmax) from 315 to 317°C and melting temperature (Tm) from 109 to 125°C. In the meantime, following the integration of SiO2 content, the density of agar film dropped from 1.27 to 1.16 kg/m3. The AG/Si film effectively prevented bacterial growth and extended the shelf life of fresh beef, suggesting a novel biobased option for antimicrobial packaging film.  相似文献

Microbial dysbiosis (MD) provokes gut barrier alterations and bacterial translocation in the bloodstream. The increased blood bacterial DNA (BB-DNA) may promote peripheral- and neuro-inflammation, contributing to cognitive impairment. MD also influences brain-derived neurotrophic factor (BDNF) production, whose alterations contribute to the etiopathogenesis of Alzheimer’s disease (AD). The purpose of this study is to measure BB-DNA in healthy elderly controls (EC), and in patients with mild cognitive impairment (MCI) and AD to explore the effect on plasma BDNF levels (pBDNF), the inflammatory response, and the association with cognitive decline during a two-year follow-up. Baseline BB-DNA and pBDNF were significantly higher in MCI and AD than in EC. BB-DNA was positively correlated with pBDNF in AD, plasma Tumor necrosis factor-alpha (TNF-α), and Interleukin-10 (IL-10) levels in MCI. AD patients with BB-DNA values above the 50th percentile had lower baseline Mini-Mental State Examination (MMSE). After a two-year follow-up, AD patients with the highest BB-DNA tertile had a worse cognitive decline, while higher BB-DNA levels were associated with higher TNF-α and lower IL-10 in MCI. Our study demonstrates that, in early AD, the higher the BB-DNA levels, the higher the pBDNF levels, suggesting a defensive attempt; BB-DNA seems to play a role in the AD severity/progression; in MCI, higher BB-DNA may trigger an increased inflammatory response.  相似文献

Abstract

The one-step method for graphene oxide (GO) simultaneous reduction and carboxylation via ultraviolet irradiation in the inert atmosphere has been reported. X-ray photoelectron spectroscopy (XPS) and X-ray absorption spectroscopy (XAS) data revealed that the proposed approach allows to obtain reduced graphene oxide (rGO) films, containing up to 10 at.% of carboxyl groups. The carboxyl groups concentration can be tuned within the range of 3 to 10 at.% by controlling the oxidation degree of the irradiated GO via the preliminary low-temperature air heating. Furthermore, no carboxylation effect is observed in the case of irradiation of the completely reduced GO films. This coincides with our previous results, validating the proposed model of GO carboxylation based on photoinduced conversion of basal-plane hydroxyl groups and ketones into carboxyl ones. Despite a different degree of carboxylation, all the obtained samples demonstrate almost complete elimination of basal plane groups and restoration of the graphene flakes aromatic structure. This fact is emphasized by the sheet resistance measurements, demonstrating that the obtained C-xy graphene exhibits high electrical conductivity. As a net result, the material obtained by the presented method shows promising applications in the manufacturing of biosensor transducers owing to both its conductive nature and presence of carboxyl groups, playing the role of the anchoring points for biomolecules.  相似文献

Treating neuroinflammation-related injuries and disorders through manipulation of neuroinflammation functions is being heralded as a new therapeutic strategy. In this study, a novel pectic galactan (PG) polysaccharide based gene therapy approach is developed for targeting reactive gliosis in neuroinflammation. Galectin-3 (Gal-3) is a cell protein with a high affinity to β-galactoside sugars and is highly expressed in reactive gliosis. Since PG carries galactans, it can target reactive gliosis via specific carbohydrate interaction between galactan and Gal-3 on the cell membrane, and therefore can be utilized as a carrier for delivering genes to these cells. The carrier is synthesized by modifying quaternary ammonium groups on the PG. The resulting quaternized PG (QPG) is found to form complexes with plasmid DNA with a mean diameter of 100 nm and have the characteristics required for targeted gene therapy. The complexes efficiently condense large amounts of plasmid per particle and successfully bind to Gal-3. The in vivo study shows that the complexes are biocompatible and safe for administration and can selectively transfect reactive glial cells of an induced cortical lesion. The results confirm that this PG-based delivery system is a promising platform for targeting Gal-3 overexpressing neuroinflammation cells for treating neuroinflammation-related injuries and neurodegenerative diseases.  相似文献

The electrorheological (ER) behavior of modified montmorillonite (MMT) suspensions in polydimethylsiloxane is studied. As established by rotational viscometry, the samples with a dispersed phase concentration from 1 to 8 wt % reveal viscous Newtonian behavior and dramatically change their properties to elastic when electric field is applied. The rheological characteristics of the suspensions over 0–7 kV mm−1 range of electric field strengths are also studied. Novel X-ray diffraction method is developed to evaluate the suspension of the filler in a siloxane medium and to calculate the degree of its exfoliation. The dependence of exfoliation degree, dielectric, and ER characteristics on the type of modifier in the MMT structure is considered. Based on the obtained data, a new model of system behavior with the various types of fillers is proposed and the prospects of utilizing MMT as a filler for ER fluids are demonstrated. © 2019 Wiley Periodicals, Inc.
