Meringues are characterized by a predominant air phase and their overall quality is intimately related with microstructure. The formation of meringues microstructure relies on the capacity of egg white (EW) proteins to form voluminous and stable foams and it is ultimately related with the chemical properties of proteins and with the addition of ingredients such as sugars, salts, acids and surfactants.The study aimed at assessing the influence of sugar/EW ratio, citric acid and EW type on the microstructural and mechanical properties of meringues. Meringues prepared with different sugar/EW, citric acid level and different EW type were subjected to microstructural analysis by X-ray microtomography and to mechanical assessment by compression tests.Results demonstrate the ability of X-ray microtomography to reconstruct the 3D microstructure of meringues allowing the measurement of porosity, size, shape and distribution of pores. Citric acid, sugar concentration and EW type play a fundamental role on meringues microstructural parameters and mechanical properties. Low sugar/EW ratios as well as increasing citric acid levels increase the air phase and result in a softer texture of meringues. Moreover, low sugar/EW ratios and increasing citric acid in the meringue result in a reduction of pore size and also influence the shape of pores. Meringues microstructural and mechanical properties are affected by the EW quality: fresh and pasteurized EWs and EWs stored at refrigerated temperatures scored the highest structural and mechanical performances, while powdered and frozen EWs and albumens from old eggs showed the worst results. In this work, the influence of packaging mass transport properties on quality loss of fresh‐cut cauliflower mixtures was addressed. The study was organised in two subsequent experimental steps; first, the selection of micro‐perforated packaging films was carried out by monitoring the package headspace gas concentrations of fresh‐cut white, green cauliflower and roman cabbage. Then, the effects of the barrier properties of the selected micro‐perforated film on shelf life of two different fresh‐cut cauliflower mixtures, stored at 4 ± 1 °C, were addressed. Results suggested that, among the investigated films, the micro‐perforated polymeric matrix with the lowest oxygen transmission rate value showed the best performance as it created the optimum headspace gas composition for each cauliflower variety, as well as, for the product mixtures. The appearance of visible moulds was the factor limiting product shelf life that accounted for about 18 days for both the investigated cauliflower mixtures. 相似文献

In this paper, an active inductor (AI) with high linearity and high dynamic range, including a minimum number of components, is presented. The AI is composed by a single transistor, and by a passive compensation network; the latter allows the control of the values of both the inductance and the series resistance. In order to show the feasibility of the proposed AI for filter applications, a prototype board on a TLX8 substrate with a first‐order active band‐pass filter has been fabricated and tested. The filter has a center frequency of 2470 MHz (useful for Bluetooth applications) and a measured noise figure (NF) of 9 dB with a ?5 dBm P1dB compression point, and a 75 dB dynamic range. Viscose cellulosic fibers from eucalyptus wood were treated with organosilanes to introduce specific functionalities on the fibers and enhance their wettability and adhesion with phenolic matrices in composites. Modeling procedures were employed to optimize the conditions of the treatments of the fibers with the silanes (3‐aminopropyl) trimethoxysilane (APS) and 3‐(2‐aminoethylamino) propyltrimethoxysilane (AAPS). The analyzed responses were relative intensities of the bands 1565/897 and 1120/897 cm−1, measured by Fourier transform infrared spectroscopy, and the silicon amount incorporated into the cellulosic fibers, which was determined by energy dispersive X‐ray analysis. In addition, surface morphology of the silane treated fibers was observed using scanning electron microscopy. The treatments of the cellulosic fibers with 2.2% APS for 120 min and 1.5% AAPS for 100 min were selected as optimums. According to contact angle measurements, both treatments enhanced the wettability between the fibers and a resol‐type phenolic resin, revealing the possible use of the silane treated fibers as reinforcement in phenolic composites. © 2015 Wiley Periodicals, Inc. In this work, the combined effects of sodium lactate and modified atmosphere packaging (MAP) in extending the shelf life of a ready‐to‐cook fresh skewer, made up of raw pork chops and semi‐dried vegetable mix (i.e. zucchini, peppers and tomatoes), were investigated. In the first experimental step, a sodium lactate solution was used to dip pork chops at three different concentrations: 20, 40 and 60% w/w. The second part of the work was focused on the use of MAP. In particular, the following MAPs were tested: MA1 (50%O2/30%CO2/20%N2), MA2 (70%O2/30%CO2), MA3 (30%O2/70%CO2) and MA4 (30%O2/30%CO2/40%N2). Finally, the optimal concentration of sodium lactate and the best gas composition were combined. The samples were stored at 4 °C; their microbial and sensory qualities were monitored along the entire observation period. The results indicate that the shelf life of the investigated ready‐to‐cook meal can be extended by approximately 83%, if compared with the control skewer packaged in air. The best preservation strategy is the combination of dipping of meat pieces in 40% sodium lactate solution and packaging under MA1. Copyright © 2014 John Wiley & Sons, Ltd. 相似文献

The massive migration flows from rural to urban areas in China, combined with an expected decline in the total population over the next decades, leads to two important challenges for China's housing: the growth of its urban housing stock and the shrinkage of rural housing. The rural and urban housing systems in China were analyzed using a dynamic material flow analysis model for the period 1900–2100 for several scenarios assuming different development paths for population, urbanization, housing demand per capita, and building lifetime. The simulation results indicate that new housing construction is likely to decline for several decades due to the fast growth over the past 30 years and the expected increased longevity of dwellings. Such an oscillation of new construction activity would have significant implications for the construction industry, employment, raw material demand, and greenhouse gas emissions to produce the construction materials. Policy and practical options for mitigating the negative impacts are considered. Les flux migratoires massifs des zones rurales vers les zones urbaines en Chine, conjugués à un déclin prévu de la population totale au cours des prochaines décennies, entraînent deux défis importants pour le logement en Chine : la croissance de son parc de logements urbains et la diminution des logements ruraux. Les systèmes de logements ruraux et urbains en Chine ont été analysés en utilisant un modèle d'analyse dynamique des flux de matériaux sur la période 1900-2100 appliqué à plusieurs scénarios supposant différentes voies de développement concernant la population, l'urbanisation, la demande de logements par habitant et la durée de vie des bâtiments. Les résultats de la simulation indiquent qu'il est probable que la construction de logements neufs diminuera pendant plusieurs décennies en raison de la croissance rapide des 30 dernières années et de l'accroissement prévu de la durée de vie des logements. Une telle oscillation de l'activité de construction de logements neufs aurait d'importantes implications pour l'industrie du bâtiment, l'emploi, la demande en matières premières et les émissions de gaz à effet de serre résultant de la production des matériaux de construction. Les choix politiques et pratiques qui permettraient d'en atténuer les effets négatifs sont envisagés. There is growing evidence that hypertension is the most important vascular risk factor for the development and progression of cardiovascular and cerebrovascular diseases. The brain is an early target of hypertension-induced organ damage and may manifest as stroke, subclinical cerebrovascular abnormalities and cognitive decline. The pathophysiological mechanisms of these harmful effects remain to be completely clarified. Hypertension is well known to alter the structure and function of cerebral blood vessels not only through its haemodynamics effects but also for its relationships with endothelial dysfunction, oxidative stress and inflammation. In the last several years, new possible mechanisms have been suggested to recognize the molecular basis of these pathological events. Accordingly, this review summarizes the factors involved in hypertension-induced brain complications, such as haemodynamic factors, endothelial dysfunction and oxidative stress, inflammation and intervention of innate immune system, with particular regard to the role of Toll-like receptors that have to be considered dominant components of the innate immune system. The complete definition of their prognostic role in the development and progression of hypertensive brain damage will be of great help in the identification of new markers of vascular damage and the implementation of innovative targeted therapeutic strategies. 相似文献
