Enterocin AS-48 was tested in apple juice against the cider-spoilage, exopolysaccharide-producing strain Lactobacillus diolivorans 29 in combination with high-intensity pulsed-electric field (HIPEF) treatment (35 kV/cm, 150 Hz, 4 μs and bipolar mode). A response surface methodology was applied to study the bactericidal effects of the combined treatment, with AS-48 concentration and HIPEF treatment time as process variables. At subinhibitory bacteriocin concentrations, microbial inactivation by the combined treatment increased as the bacteriocin concentration and the HIPEF treatment time increased (from 0.5 to 2.0 μg/ml and from 100 to 1000 μs, respectively). Highest inactivation (4.87 logs) was achieved by 1000 μs HIPEF treatment in combination with 2.0 μg/ml AS-48. While application of treatments separately did not protect juice from survivors during storage, survivors to the combined treatment were inactivated within the following 24 h of storage, and the treated samples remained free from detectable lactobacilli for at least 15 days at temperatures of 4 °C as well as 22 °C. Describes the testing of an active-alert induction procedure which sufficiently controlled conditions to permit a comparison between the alterations produced by that procedure and those produced by the traditional relaxation induction technique. Ss were 50 university students. In the active-alert induction the S rode a bicycle ergometer under load, keeping eyes open while exercising and receiving suggestions of alertness. The alternate form, used in random alternation with the same Ss, consisted of the standard eye-fixation and relaxation induction of the Stanford Hypnotic Susceptibility Scale, Form B (SHSS-B). Within each session on 2 days during which each S served, the induction procedure was followed by 8 tests of responses to suggestion, from the SHSS-A and SHSS-B. The mean measured hypnotic responsiveness was independent of the type of induction. The active-alert condition was characterized by an acceleration of the rate of pedaling for the more responsive Ss. Although the subjective alterations differed between the 2 kinds of induction, the highly susceptible reported that in both cases altered states were achieved. Yacon roots are a promising source of inulintype fructans (35 g/100 g dry matter) with a total amount of dietary fiber of about 45 g/100 g dry matter. The polydispersity of the particle size distribution of yacon aqueous suspension was reduced with increasing the degree of homogenization due to two phenomena: aggregation of particles, and disruption of large particles. Nonhomogenized yacon suspensions exhibited large cell clusters that were disrupted into small cell clusters, single cells, and aggregates. The most concentrated suspension exhibited mainly aggregates.The volume fraction of the suspensions decreased significantly with increasing the degree of homogenization. This was attributed to a denser packing of small particles and aggregates in between large particles thus allowing the water within the structure to be released.Yacon suspensions exhibited high elastic modulus (750 Pa) at low water insoluble solids content (0.9% WIS). Additional results suggested that inulintype fructans contributed to the elastic properties of yacon suspensions.The yacon suspensions studied in this work can be considered as semiconcentrated suspensions, i.e. the plot elastic modulus of the suspensions versus concentration exhibited a region immediately after the transition region. Particle interactions seem to be of great importance in this region in the particular case of yacon suspension since the elastic modulus (G′) reached 750 Pa at low water insoluble solids content (< 1%). 相似文献

Influence of glycerol and water activity on the properties of compressed egg white-based bioplastics
In this paper, the effects of glycerol (35%, 40% and 45%) and water activity (0.34 and 0.48) on the physical, mechanical and morphological properties of compressed egg white-based bioplastics are investigated. Lighter, more reddish and less yellowish sheets with a decreased thickness and second-order transition temperature, improved mechanical properties (increased flexibility and decreased rigidity and stiffness) and constant moisture content can be obtained by increasing water activity. Increasing the GLY content results in the same type of changes but to a lesser extent and increased moisture content. Increasing both, water activity and GLY, leads to a more pronounced effect for some properties. This study demonstrates that compressed egg white-based bioplastics with desired properties can be obtained by adjusting water activity and GLY content during their synthesis. 相似文献

Possible adulteration of canned products containing spirit vinegar pickle by adding synthetic acetic acid is a significant problem of the food industry. Isotope analyses, which determine botanical origin of acetic acid and also can detect synthetic acid, were applied to detect undeclared addition of synthetic acetic acid to canned products. The aim of the study was to improve the extraction technique for the SNIF-NMR (2H/1H; site-specific natural isotopic fractionation-nuclear magnetic resonance) and IRMS (13C/12C; isotope ratio mass spectrometry) isotope methods and for an atypical matrix and to determine isotope ratios in canned vegetables pickle to prove their adulteration or authenticity. The following set of canned products was analysed: pickled cucumbers (n = 16) and one vinegar pickle purchased in the Czech market and six model (cucumber) pickles. The determined ratios of 2H/1H and 13C/12C for the pickled cucumbers proved to be authentic ranged from 89.4 to 107.0 ppm and from ?28.7 to ?15.6 ‰, respectively; for the synthetic acetic acids diluted with water they ranged from 114.2 to 129.0 ppm and from ?44.9 to ?33.4 ‰, respectively. Isotope analyses were confirmed as a reliable tool for assessing authenticity of canned products. The proteome is expressed from the genome, influenced by environmental and processing conditions, and can be seen as the molecular link between the genome and the functional quality characteristics of the meat. In contrast to traditional biochemical methods where one protein is studied at a time, several hundred proteins can be studied simultaneously. Proteomics is a promising and powerful tool in meat science and this is reflected by the increasing number of studies emerging in the literature using proteomics as the key tool to unleash the molecular mechanisms behind different genetic backgrounds or processing techniques of meat. Thus understanding the variations and different components of the proteome with regard to a certain meat quality or process parameter will lead to knowledge that can be used in optimising the conversion of muscles to meat. At present, there has been focus on development of techniques and mapping of proteomes according to genotypes and muscle types. In the future, focus should be more towards understanding and finding markers for meat quality traits. This review will focus on the methods used in the published proteome analyses of meat, with emphasis on the challenges related to statistical analysis of proteome data, and on the different topics of meat science that are investigated. 相似文献

The mass flows of fluoroquinolone antibacterial agents (FQs) were investigated in the aqueous compartments of the Glatt Valley Watershed, a densely populated region in Switzerland. The major human-use FQs consumed in Switzerland, ciprofloxacin (CIP) and norfloxacin (NOR), were determined in municipal wastewater effluents and in the receiving surface water, the Glatt River. Individual concentrations in raw sewage and in final wastewater effluents ranged from 255 to 568 ng/L and from 36 to 106 ng/L, respectively. In the Glatt River, the FQs were present at concentrations below 19 ng/L. The removal of FQs from the water stream during wastewater treatment was between 79 and 87%. During the studied summer period, FQs in the dissolved fraction were significantly reduced downstream in the Glatt River (15-20 h residence time) (66% for CIP and 48% for NOR). Thus, after wastewater treatment, transport in rivers causes an additional decrease of residual levels of FQs in the aquatic environment. Refined predicted environmental concentrations for the study area compare favorably with the measured environmental concentrations (MEC) obtained in the monitoring study. Total measured FQ concentrations occurring in the examined aquatic compartments of the Glatt Valley Watershed were related to acute ecotoxicity data from the literature. The risk quotients obtained (MEC/PNEC < 1) following the recommendations of the European guidelines or draft documents suggest a low probability for adverse effects of the occurring FQs, either on microbial activity in WWTPs or on algae, daphnia, and fish in surface waters. 相似文献

To determine whether faecal microorganisms can represent the entire large intestinal population, samples from caecum, mid‐colon and rectum of three adult pigs were used for the in vitro fermentation of fructo‐oligosaccharide (FOS), potato starch, wheat bran and oat hulls. The cumulative gas production technique measured fermentation kinetics and end‐products such as total gas, NH3 and volatile fatty acids (VFA). There were significant differences in the fermentability of substrates, in terms of both kinetics and end‐products. More relevant to this study, there were also differences between pigs in respect of total gas production, the rate of gas production (RM) and VFA production. For large intestine sections, there were more VFA from mid‐colon and rectal inocula compared with that from the caecum (p < 0.0001). Total gas, RM and NH3 were highest for rectal, intermediate for mid‐colon and lowest for caecal inocula (p < 0.0001). It was concluded that, while faecal sampling might overestimate caecal fermentation, its use is valid for in vitro assessment of large intestinal fermentation. Campylobacter is today the most common cause of human bacterial enteritis in Sweden, as well as in most other industrialized countries. Common sources of infection are undercooked chicken meat, unpasteurized milk and contaminated drinking water. One aim with our present study was to identify the species Campylobacter jejuni and Campylobacter coli strains from humans and chickens using a polymerase chain reaction/restriction enzyme analysis (PCR/REA) method, as well as traditional hippurate hydrolysis test. Another aim was to investigate the antibiotic resistance pattern of the human domestic C. jejuni/C. coli isolates from infected patients and isolates from healthy Swedish chicken, as well as isolates from humans infected abroad. If discrimination between C. jejuni and C. coli was based on testing for hippurate hydrolysis, 95% of the human domestic strains and 88% of the chicken strains were identified as C. jejuni. Based on genotyping by PCR/REA, 100% of the human domestic strains and 98% of the chicken strains were attributed to C. jejuni. The E-test and disc diffusion methods were used for phenotypic antibiotic resistance studies. The two methods gave similar results. Most Swedish C. jejuni/C. coli isolates both from humans and chickens were sensitive to doxycycline and erythromycin, which are antibiotics used to treat human infection. Only 7% of the human domestic strains and 2% of the chicken strains were resistant to the quinolones tested. As a comparison, more than 94% of strains isolated from travelers to Asia and southern Europe showed antibiotic resistance to one or more drugs. 相似文献

Carbon materials with different textural and surface chemistry properties have been studied to analyze their behavior in removing aromatic compounds (phenol, o-chlorophenol, p-nitrophenol, aniline, and phenol compound mixtures) from water. A mesoporous high surface area graphite and a microporous activated carbon with (HSAGox and ACox) and without (HSAGT and ACT) oxygen surface groups, were used as adsorbents. Apparent surface areas, surface oxygen groups, and zero points of charge have been determined. The adsorption behavior of single compounds on ACT depends on the relation between the molecular and the pore sizes. The aniline, the nitrophenol, and the chlorophenol interact with the oxygen surface groups of oxidized graphite, while there is no evidence of any type of interaction of the phenol with these groups. The adsorption of the organic compound mixtures on the thermally treated samples is determined by the acid-base character of the adsorbate-adsorbent, whereas on the oxidized carbons, the controlling forces are the specific interactions between organic molecules and the oxygenated groups.
