Combined effects of modified atmosphere packaging (MAP) and refrigeration (7±1 °C) were studied on shelf-life extension of ready-to-bake pizza. The gas atmospheres in the present study included four variables, namely viz. MAP1, air (control); MAP 2, 100% CO2; MAP 3, 100% N2; and MAP 4, 50%CO2/50%N2. The effect of MAP variables was observed for moisture content, water activity, pH, titratable acidity, free fatty acids, peroxide value, thiobarbituric acid, tyrosine content, lycopene content and L* a* b* values. The results indicated that MAP with 100% CO2 significantly inhibited the lipid oxidation, reduced proteolysis and prevented total acidity (less decrease in pH). Also, the MAP (MAP 2) showed preservative effect on colour indices and shelf life higher than other treatments. Sensory analysis showed that the control samples had a limited shelf life of 5 days while a significant increase in shelf life of 15 days (300% increase) was achieved under modified atmospheres for unbaked pizza samples.  相似文献

Due to increased demands for greater stringency in relation to hygiene and safety issues associated with fresh food products, coupled with ever-increasing demands by retailers for cost-effective extensions to product shelf-lives and the requirement to meet consumer expectations in relation to convenience and quality, the food packaging industry has rapidly developed to meet and satisfy expectations. One of the areas of research that has shown promise, and had success, is modified atmosphere packaging (MAP). The success of MAP-fresh meat depends on many factors including good initial product quality, good hygiene from the source plants, correct packaging material selection, the appropriate gas mix for the product, reliable packaging equipment, and maintenance of controlled temperatures and humidity levels. Advances in plastic materials and equipment have propelled advances in MAP, but other technological and logistical considerations are needed for successful MAP systems for raw chilled meat. Although several parameters critical for the quality of MA packed meat have been studied and each found to be crucial, understanding of the interactions between the parameters is needed. This review was undertaken to present the most comprehensive and current overview of the widely available, scattered information about the various integrated critical factors responsible for the quality and shelf life of MA packed meat with an interest to stimulate further research to optimize different quality parameters.  相似文献

Modified atmosphere packaging (MAP) studies on microbiological and sensory analysis were conducted to extend the shelf life of ready-to-bake pizza stored at 7±1°C. The gas combinations used were: atm1: air (control), atm2: CO2 (100%), atm3: N2 (100%), atm4: 50% CO2/50% N2. Total plate count (TPC), yeasts/molds (Y/M), coliforms, lactic acid bacteria (LAB), psychrotrophs, and anaerobic spore formers were estimated at time intervals of 0, 5, 10, 15, and 20 days. TPC and LAB of pizza samples (atm1) reached 7.10 and 8.14 log CFU/g after 10 days of storage, respectively. Coliforms, psychrotrophs, and Y/M were significantly higher (p<0.05) for pizza samples stored in atm1 than other storage conditions of MAP. Finally, counts of anaerobic spore formers were low (<3 log CFU/g) irrespective of the packaging conditions throughout the entire storage period. It was concluded that among the 4 atmospheres examined, atm2 (100% CO2) was the best, followed by atm4>atm3>atm1 respectively, in descending order. MAP conditions under this study may extend shelf life of pizza to considerable amount of time.  相似文献

The study provides information on the nutritional status of 8- to 10-year-old primary schoolchildren in urban areas of Jakarta and Bogor, Indonesia, based on anthropometric indicators. It compares the use of the anthropometric indicators weight-for-age Z score, height-for-age Z score, weight-for-height Z score, and body mass index (BMI) to assess thinness (underweight and wasted) and overweight in children. A total of 1,367 children were examined. The nutritional status of the 8- to 10-year urban schoolchildren was better than that of urban children under 5 years old. The prevalence of underweight among urban schoolchildren ranged from 7.4% (girls) to 12.95% (boys), while underweight among urban children under 5 years old in 1998 was 29.7%. Meanwhile, the prevalence of overweight (BMI > 85th percentile) ranged from 15.3% (girls) to 17.8% (boys). There were more overweight children in the private schools than in the public schools. On average, private schoolchildren, of all ages and both sexes, were heavier and taller than public schoolchildren. The BMI indicator for "thinness" and "wasting", using the NHANES reference, indicates a false positive result. For detecting overweight in children aged 8 to 10 years, BMI is comparable to the other indices, weight-for-age, height-for-age, and weight-for-height.  相似文献

A comprehensive study on the small-signal frequency modulation (FM) characteristics of a fiber-grating Fabry–Perot (FGFP) laser is numerically conducted. Fiber Bragg grating (FBG) is used as a wavelength selective element to control the properties of the laser output by controlling the external optical feedback (OFB) level. In addition to the external OFB level, the effect of other parameters such as temperature, injection current, cavity volume, nonlinear gain compression factor, linewidth enhancement factor, and fiber-grating (FG) parameters on FM characteristics of the laser are investigated. The study is performed by modifying a set of rate equations that are solved by considering the effects of external OFB and ambient temperature (T) variations. The temperature dependence (TD) of FM characteristics is calculated according to TD of laser parameters instead of using well-known Pankove relationship. Results show that the optimum external fiber length (Lext) is 3.1?cm and the optimum range of working temperature for FGFP laser is within?±?2?°C from the FBG reference temperature (To). Also, it is shown that antireflection (AR) coating reflectivity and the linewidth enhancement factor have no significant effect on the FM response. The FM spectra peak amplitude is less than 5?dB with 5?mW output power. Good temperature stability is also obtained.  相似文献

Localized surface plasmons (SPs) of single ambichiral nanostructures (ACNs) were investigated using the discrete-dipole approximation. The extinction, absorption cross sections, and local electric filed magnitudes of a single ACN were calculated and compared with those obtained from the single chiral nanostructure (CN) as reference structure. The results showed that two localized SP peaks appear in ACN, while exist only one peak in CN. We found that the optical properties of ACNs are same as CN at low angular displacements, where the morphology of ACNs is closed to CN.  相似文献

Metal pollution and its health effects present a challenge currently facing the developing countries. Metal poisoning is usually difficult and expensive to assess or screen in these countries due to limited resources, which means that policies, guidelines, regulations and institutional managements are limited. Hair and nail as biopsy materials were suggested as more attractive biomarkers in assessing heavy metals environmental exposure. This paper deals with quantitative determination of lead (Pb), cadmium (Cd), calcium (Ca), zinc (Zn), and iron (Fe) in fingernails of children (n=200) in urban and rural areas using atomic absorption spectrometry. Factors that were suspected to influence the accumulation of Pb and Cd in children were obtained through a questionnaire. The mean levels of heavy metals in children in urban areas were found to be higher (27.5+/-1.8 microg/g Pb and 0.73+/-0.08 microg/g Cd) than in rural areas (19.7+/-0.9 microg/g Pb and 0.44+/-0.06 microg/g Cd). The difference was significant (P<0.05; DF=168, t-test). Other factors that were found to have significant influence were socio-economic background, health conditions, dietary habits and environmental risk exposure. The results also showed that the school location has more influence on the heavy metals level than the area of residence. The children in a school near the highway were found to have a mean of 34.4+/-3.5 microg/g Pb as compared to those who lived near the highway (31.6+/-2.8 microg/g Pb), however the difference was not significant (P>0.05), suggesting a common source of contaminants in the areas. The correlation results also indicated that a high level of Pb in the nail influenced negatively Zn and Fe but not Ca levels (R=-0.256 Zn; -0.188 Fe) while high levels of Cd had a negative relationship with Fe only (R=-0.241). The association of toxic metals in the nails of children with environmental exposure, and nutritional status implies that policies and actions to reduce heavy metal levels must be implemented and reinforced to address the health issues affecting children and by extension the general public in this country.  相似文献

This paper presents an alternative method to optimize process parameters of resistance spot welding (RSW) towards weld zone development. The optimization approach attempts to consider simultaneously the multiple quality characteristics, namely weld nugget and heat affected zone (HAZ), using multi-objective Taguchi method (MTM). The experimental study was conducted for plate thickness of 1.5 mm under different welding current, weld time and hold time. The optimum welding parameters were investigated using the Taguchi method with L9 orthogonal array. The optimum value was analyzed by means of MTM, which involved the calculation of total normalized quality loss (TNQL) and multi signal to noise ratio (MSNR). A significant level of the welding parameters was further obtained by using analysis of variance (ANOVA). Furthermore, the first order model for predicting the weld zone development is derived by using response surface methodology (RSM). Based on the experimental confirmation test, the proposed method can be effectively applied to estimate the size of weld zone, which can be used to enhance and optimized the welding performance in RSW or other application.  相似文献
