Plant cell wall particles derived from fruits and vegetables are natural fibre materials with a low calorie content that can be used as a healthy alternative to gum stabilisers and starches for structuring low-fat yoghurt. In this study we investigated the effect of cell wall particle (CWP) addition on the gelation kinetics, viscoelastic properties, microstructure, texture and whey loss of the set yoghurt gels as a function of CWP concentration, particle size and storage time. Three particle sizes of dried carrot CWP (d0.5 = 34, 71 and 80 ??m) were produced from an industrial carrot pomace. Rehydrated CWP was added to skim milk prior to acidification. The results showed that the addition of carrot CWP accelerated the rate of pH reduction and induced earlier gelation. The gel viscoelastic properties were enhanced with increased CWP concentration. This was accompanied with progressive reduction in the whey loss. The smallest cell wall particles (d0.5 = 34 ??m) gave better gel strength and lower whey loss compared to the larger CWP particles, possibly due to higher contact between the CWP and casein particles thus contributing to the stronger gel network. The CLSM images of yoghurt gels containing CWP showed that carrot CWP occupied the void space within casein particle network. The enhanced gel strength and reduced whey loss achieved by the addition of CWP were maintained throughout the 28 day storage period. The reduction of fermentation processing by almost 1 h, yet still achieving good gel properties for the yoghurt type product could be a significant benefit from a manufacturing point of review.  相似文献

Probiotics are practical tools to provide the modulation of microbiota. The ingestion of food or ingredients containing anti-inflammatory activity components as probiotics should be useful in obesity control and associated co-morbidities treatment. Metabolic syndrome is a metabolic dysfunction associated with visceral obesity and insulin resistance, in which the alterations in host-microbiota interactions play an important role. Besides diet and physical activity, new strategies are necessary to control metabolic syndrome, and as consequence improving quality of life. This article revises the actual knowledge concerning probiotic intake and obesity as a proposal to control metabolic syndrome.  相似文献

Although sporulation environmental factors are known to impact on Bacillus spore heat resistance, they are not integrated into predictive models used to calculate the efficiency of heating processes. This work reports the influence of temperature and pH encountered during sporulation on heat resistance of Bacillus weihenstephanensis KBAB4 and Bacillus licheniformis AD978 spores. A decrease in heat resistance (δ) was observed for spores produced either at low temperature, at high temperature or at acidic pH. Sporulation temperature and pH maximizing the spore heat resistance were identified. Heat sensitivity (z) was not modified whatever the sporulation environmental factors were. A resistance secondary model inspired by the Rosso model was proposed. Sporulation temperatures and pHs minimizing or maximizing the spore heat resistance (T(min(R)), T(opt(R)), T(max(R)), pH(min(R)) and pH(opt(R))) were estimated. The goodness of the model fit was assessed for both studied strains and literature data. The estimation of the sporulation temperature and pH maximizing the spore heat resistance is of great interest to produce spores assessing the spore inactivation in the heating processes applied by the food industry.  相似文献

Proteases are enzymes that catalyse the breaking of specific peptide bonds in proteins and polypeptides. They are heavily involved in many normal biological processes as well as in diseases, including cancer, stroke and infection. In fact, proteolytic activity is sometimes used as a marker for some cancer types. Here we present luminescent quantum dot (QD) bioconjugates designed to detect proteolytic activity by fluorescence resonance energy transfer. To achieve this, we developed a modular peptide structure which allowed us to attach dye-labelled substrates for the proteases caspase-1, thrombin, collagenase and chymotrypsin to the QD surface. The fluorescence resonance energy transfer efficiency within these nanoassemblies is easily controlled, and proteolytic assays were carried out under both excess enzyme and excess substrate conditions. These assays provide quantitative data including enzymatic velocity, Michaelis-Menten kinetic parameters, and mechanisms of enzymatic inhibition. We also screened a number of inhibitory compounds against the QD-thrombin conjugate. This technology is not limited to sensing proteases, but may be amenable to monitoring other enzymatic modifications.  相似文献

This study aims to compare, on the one hand, the geographical distribution of the desert dust source areas, their contribution to quantities emitted into the atmosphere, the trajectories and the quantities deposited, with on the other hand the areas of research interest focused on the desert dust impacts on air quality and/or human health. Based on a systematic review of the literature using the ISI Web of Knowledge database, we found 231 articles published over the last decade on the desert dust impacts on air quality. Of these, 48% concerned Asian dust and 39% Saharan dust, with the remaining 13% divided between the other dust source areas. However, only one of these studies addressed the worsening air pollution in West Africa, even though it is very close to the Sahara, the greatest contributor to the global dust budget. Moreover, there have been very few studies (41) looking at the direct links between desert dust and human health; in this context too, no interest has been shown in West Africa. Yet this region is also among the areas in which morbidity rates have been noted to be far higher than those found in other regions of the world, and where respiratory infections alone account for more than 20% of the causes of infant mortality. This survey highlights a clear imbalance between those areas most exposed to dust and the most studied areas in terms of dust impacts. Given these findings and the often alarming results published about other regions of the world, we advocate a revival of interest in research on West Africa in order to achieve a better understanding of the desert dust impacts on air quality and health among the populations of this region.  相似文献

Microcystis colonies are known to overwinter on the surface of the sediment of freshwater ecosystems. However, little is known about the genotypic and toxicological dynamics of Microcystis populations during this benthic life stage. In this study, we report a two-year-long survey of benthic populations of Microcystis, which had spent from a few days to more than six years in the sediment. In order to avoid any interaction with the planktonic proliferations, we chose two deeply buried benthic populations, which could be easily dated. Quantitative PCR on mcyB gene and protein phosphatase inhibition assays were performed to measure their toxic potential, and their genotypic structure was assessed by Capillary Electrophoresis-Single Strand Conformation Polymorphism (CE-SSCP), based on 16S-23S Intergenic Transcribed Spacer (ITS). The microcystin content of the cells seemed to change sharply during the first few months of benthic survival, whereas this content was low and decreased steadily after several years of benthic life. No genetic selection was observed in either the proportion of potentially toxic clones or the ITS sequences for any of the populations considered. From these results, the benthic life stage of Microcystis appears to preserve the structure and the composition of the population over a far larger time scale than classical overwintering period. Finally, some genotypes were common in both of the benthic populations, even though they originated from planktonic blooms that had developed five years apart, suggesting a major overlap of planktonic proliferations in successive years.  相似文献

Due to its unique culture, besides adopting established project management practices, the question is whether social network strategy is relevant for managing projects in China. The research aims to ascertain the relevance of social network strategy and identify the important network practices that foreign and local architectural, engineering or construction (A/E/C) firms adopt when managing construction projects in China. 82 sets of data were collected using a structured questionnaire. The results show that both local and foreign firms adopt practices relating to social network strategy to a significant extent. However, they do not collaborate with competitors even though this could add value to their products/service. Foreign firms also do not make enough use of political resources, relying neither on their home country governments nor the Chinese government. Foreign firms lag behind Chinese firms in not joining consortiums or enlarging the number of partners in their networks, suggesting a ‘do it alone’ stand.  相似文献

Citrus aurantium leaves' essential oils (EOs) were evaluated for chemical composition and antioxidant and antibacterial activities. The vegetable material, taken 5 times during the year, has undergone the hydrodistillation to prepare EO. Chemical characterization by gas chromatography/mass spectrometry and GC/flame ionization detection allowed the identification of 46 compounds, and a notable quantitative and qualitative differences between the different Petitgrain samples according to the harvest time. Linalool (43.2% to 65.97%), linalyl acetate (0.77% to 24.77%), and α-terpineol (9.29% to 12.12%) were the main components. The most important number of components was registered for summer EOs (July and September). The 5 EOs submitted biological activities screening, namely, antioxidant and antimicrobial activities. Weak antioxidant activities (IC(50) values >10000 mg/L) were registered by both 1,1-diphenyl-2-picrylhydrazyl and 2,2'-azinobis-3-ethylbenzothiazoline-6-sulphonate assays, mostly because the weak amount of phenols in EOs. Antibacterial activities (12 microorganisms) were registered against Gram-positive bacteria [Bacillus subtilis (MIC = 2.7 mg/mL), Staphylococcus aureus (4.8 mg/mL)], and moderated ones against yeasts [Saccharomyces cerevisiae (9.2 mg/mL)] and fungi [Mucor ramannianus (5 mg/mL)]. Positive correlations between the identified compounds and the antimicrobial activities were noted. Many compounds were correlated to antimicrobial activity mainly caryophyllene oxide against Escherichia coli (R(2) = 0.99), S. cerevisiae (R(2) = 0.99), and Fusarium culmorum (R(2) = 0.99).  相似文献
