Calcium (Ca) is a key micronutrient of high relevance for human nutrition that also influences the texture and taste of dairy products and their processability. In bovine milk, Ca is presented in several speciation forms, such as complexed with other milk components or free as ionic calcium while being distributed between colloidal and serum phases of milk. Partitioning of Ca between these phases is highly dynamic and influenced by factors, such as temperature, ionic strength, pH, and milk composition. Processing steps used during the manufacture of dairy products, such as preconditioning, concentration, acidification, salting, cooling, and heating, all contribute to modify Ca speciation and partition, thereby influencing product functionality, product yield, and fouling of equipment. This review aims to provide a comprehensive understanding of the influence of Ca partition on dairy products properties to support the development of kinetics models to reduce product losses and develop added-value products with improved functionality. To achieve this objective, approaches to separate milk phases, analytical approaches to determine Ca partition and speciation, the role of Ca on protein–protein interactions, and their influence on processing of dairy products are discussed. 相似文献

The aim of this study was to assess the influence of heat treatment of sugar cane juice, supplementation with urea and double distillation on the concentration of volatile congeners (acetic aldehyde, ethyl acetate, n‐propyl, isobutyl and isoamyl alcohols and acetic acid) and contaminants (methanol, 1‐propyl and 2‐butyl alcohols, copper, and ethyl carbamate) in cachaça. Samples of fresh sugar cane juice, sugar cane juice submitted to heat treatment and contaminated sugar cane juice were supplemented (or not) with urea and fermented. The washes so obtained underwent single and double distillation. Supplementation with urea stimulated ethyl carbamate formation. The distilled products that originated from contaminated worts presented higher concentration of acetic acid and ethyl carbamate. Double distillation reduced the concentration of contaminants. The best quality pot still cachaça was obtained employing heat treatment of sugar cane juice, nonsupplementation with urea and double distillation. Mercury, cadmium, and lead concentrations were determined in various fishery products (fishes, cephalopod molluscs, and crustaceans) imported into Italy from many European and non-European coastal countries. Considerable differences were found in the concentrations of these metals among the products tested. The highest mean Hg concentration was found in fishes (0.21 μg g(-1) wet weight), whereas cephalopods had the highest mean Cd concentration (0.35 μg g(-1) wet weight). Swordfish (0.80 μg g(-1) wet weight), longtail tuna (0.53 μg g(-1) wet weight), and thornback ray (0.52 μg g(-1) wet weight) had the highest concentrations of Hg, whereas maximum Cd concentrations were found in samples of common cuttlefish (0.85 μg g(-1) wet weight) and common octopus (0.64 μg g(-1) wet weight). The majority of the samples analyzed were in compliance with European Union legislation, except for a few cases. The calculated mean weekly intakes of Hg, Cd, and Pb through consumption of the fishery products tested were all below the legislated respective provisional tolerable weekly intakes. In general, the samples analyzed were considered safe to eat with regard to the metal concentrations found and the allowable intakes based on legislation. BACKGROUND: The detection of pigments and colourless flavonoids in apples can provide a useful indication of fruit quality. Optical methods are preferable because they are fast and non‐destructive. In this study, a fluorescence‐based portable sensor was used in order to non‐invasively determine the content of chlorophylls, anthocyanins and flavonols in Fuji, Granny Smith and Golden Delicious apple cultivars. The aim was to define new non‐destructive optical indices of apple quality. RESULTS: The anthocyanin index (ANTH) in Fuji was higher in the sunny (i.e. sun‐exposed) side of the fruit compared to the shady side. For all cultivars, the flavonol index (FLAV) was higher in the sunny side compared with the shady side. The chlorophyll index (CHL) for the shady sides of Granny Smith and Golden Delicious was significantly higher than for the sunny sides. Fine linear regressions were found between the ANTH, FLAV and CHL indices and the actual anthocyanin, flavonol and chlorophyll concentrations, respectively, which were determined destructively on the apple peel extracts. A negative correlation was found between the apple sugar content and the chlorophyll fluorescence in the far‐red spectral band. CONCLUSION: Our results indicate that a single multiparametric fluorescence‐based sensor can provide valuable non‐destructive markers of ripening and quality in apples. Exploiting timed automata based fuzzy controllers for designing adaptive intrusion detection systems

Network intrusion detection systems (NIDSs) are pattern recognition problems that classify network traffic patterns as either ‘normal’ or ‘abnormal’. Precisely, the main aim of intrusion detection is to identify unauthorized use, misuse, and abuse of computers by detecting malicious network activities such as port scans, denial of service or other attempts to crack computer network environments. Even though the incorporation of conventional Soft Computing techniques in NIDSs has yielded to good solutions, the strong dynamism characterizing network intrusion patterns tend to invalidate the usability of existing framework. To tackle this issue, our proposal performs an adaptive supervised learning on a collection of time series that characterizes the network behavior to create a so-called timed automata-based fuzzy controller (TAFC), i.e. an evolvable fuzzy controller whose dynamic features allow to design an advanced network intrusion detection system able to directly deal with computer network dynamism and support networks’ administrators to prevent eventual damages coming from unauthorized network intrusion. As will be shown in experiments, where our approach has been compared with a conventional Mamdani fuzzy controller, the proposed system reduces the detection error and, as consequence, improves the computer network robustness. 相似文献

In this study, we report on multi-walled carbon nanotubes fabricated on silicon substrate with four different orientations via chemical vapor deposition. It is well-known that chemical treatments improve the nanotube electrochemical reactivity by creating edge-like defects on their exposed sidewalls. Before use, we performed an acid treatment on carbon nanotubes. To prove the effect of the treatment on these nanostructured electrodes, contact angles were measured. Then, sensitivities and detection limits were evaluated performing cyclic voltammetry. Two target molecules were used: potassium ferricyanide, an inorganic electroactive molecule, and hydrogen peroxide that is a product of reactions catalyzed by many enzymes, such as oxidases and peroxidases. Carbon nanotubes with tilted tips become hydrophilic after the treatment showing a contact angle of 22° ± 2°. This kind of electrode has shown also the best electrochemical performance. Sensitivity and detection limit values are 110.0 ± 0.5 μA/(mM cm2) and 8 μM for potassium ferricyanide solutions and 16.4 ± 0.1 μA/(mM cm2) and 24 μM using hydrogen peroxide as target compound. Considering the results of wettability and voltammetric measurements, nanotubes with tilted tips-based electrodes are found to be the most promising for future biosensing applications. 相似文献

Structural code coverage criteria have been studied since the early seventies, and now they are well supported by commercial
and open-source tools and are commonly embedded in several advanced industrial processes. Most industrial applications still
refer to simple criteria, like statement and branch coverage, and consider complex criteria, like modified condition decision
coverage, only rarely and often driven by the requirements of certification agencies. The industrial value of structural criteria
is limited by the difficulty of achieving high coverage, due to both the complexity of deriving test cases that execute specific
uncovered elements and the presence of many infeasible elements in the code. In this paper, we propose a technique that both
generates test cases that execute yet uncovered branches and identifies infeasible branches that can be eliminated from the
computation of the branch coverage. In this way, we can increase branch coverage to closely approximate full coverage, thus
improving its industrial value. The algorithm combines symbolic analysis, abstraction refinement, and a novel technique named
coarsening, to execute unexplored branches, identify infeasible ones, and mitigate the state space explosion problem. In the paper,
we present the technique and illustrate its effectiveness through a set of experimental results obtained with a prototype

In this paper, we present an evolutionary model of industry dynamics yielding endogenous business cycles with ‘Keynesian’
features. The model describes an economy composed of firms and consumers/workers. Firms belong to two industries. The first
one performs R&D and produces heterogeneous machine tools. Firms in the second industry invest in new machines and produce
a homogenous consumption good. Consumers sell their labor and fully consume their income. In line with the empirical literature
on investment patterns, we assume that the investment decisions by firms are lumpy and constrained by their financial structures.
Moreover, drawing from behavioral theories of the firm, we assume boundedly rational expectation formation. Simulation results
show that the model is able to deliver self-sustaining patterns of growth characterized by the presence of endogenous business
cycles. The model can also replicate the most important stylized facts concerning micro- and macro-economic dynamics. Indeed,
we find that investment is more volatile than GDP; consumption is less volatile than GDP; investment, consumption and change
in stocks are procyclical and coincident variables; employment is procyclical; unemployment rate is anticyclical; firm size
distributions are skewed but depart from log-normality; firm growth distributions are tent-shaped.

Fibrosis is the strongest predictor for disease-specific mortality in non-alcoholic fatty liver diseases (NAFLD), but the need for liver biopsy limits its diagnosis. We assessed the performance of plasma ficolin-2 (FCN-2) as a biomarker of fibrosis identified by an in silico discovery strategy. Two hundred and thirty-five morbidly obese (MO) subjects with biopsy-proven NAFLD stratified by fibrosis stage (F0, n = 44; F1, n = 134; F2, n = 46; F3/F4, n = 11) and 40 cirrhotic patients were enrolled. The cohort was subdivided into discovery (n = 76) and validation groups (n = 159). The plasma level of FCN-2 and other candidate markers was determined. FCN-2 was inversely correlated with the stage of liver fibrosis (ρ = −0.49, p < 0.001) independently of steatosis (p = 0.90), inflammation (p = 0.57), and ballooning (p = 0.59). In the global cohort, FCN-2 level decreased significantly in a stepwise fashion from F0/F1 (median 4753 ng/mL) to F2–F3–F4 (2760 ng/mL) and in cirrhotic subjects (1418 ng/mL). The diagnostic performance of FCN-2 in detecting F ≥ 2 was higher than other indexes (APRI, FIB-4) (AUROC 0.82, 0.68, and 0.6, respectively). The accuracy improved when combined with APRI score and HDL values (FCNscore, AUROC 0.85). Overall, the FCN-2 plasma level can accurately discriminate liver fibrosis status (minimal vs. moderate/advanced) significantly improving the fibrosis diagnostic algorithms. 相似文献

A two part experiment was conducted to assess the response of barramundi (Lates calcarifer; initial weight = 10.3 ± 0.03 g; mean ± S.D.) fed one of five diets with varying eicosapentaenoic acid (diets 1, 5, 10, 15 and 20 g/kg) or one of four diets with varying arachidonic acid (1, 6, 12, 18 g/kg) against a fish oil control diet. After 6 weeks of feeding, the addition of EPA or ARA did not impact on growth performance or feed utilisation. Analysis of the whole body fatty acids showed that these reflected those of the diets. The ARA retention demonstrated an inversely related curvilinear response to either EPA or ARA. The calculated marginal utilisation efficiencies of EPA and ARA were high (62.1 and 91.9 % respectively) and a dietary ARA requirement was defined (0.012 g/kg0.796/day). The partial cDNA sequences of genes regulating eicosanoid biosynthesis were identified in barramundi tissues, namely cyclooxygenase 1 (Lc COX1a, Lc COX1b), cyclooxygenase 2 (Lc COX2) and lipoxygenase (Lc ALOX‐5). Both Lc COX2 and Lc ALOX‐5 expression in the liver tissue were elevated in response to increasing dietary ARA, meanwhile expression levels of Lc COX2 and the mitochondrial fatty acid oxidation gene carnitine palmitoyltransferase 1 (Lc CPT1a) were elevated in the kidney. A low level of EPA increased the expression of Lc COX1b in the liver. Consideration should be given to the EPA to ARA balance for juvenile barramundi in light of nutritionally inducible nature of the cyclooxygenase and lipoxygenase enzymes. 相似文献
