The current work presents a pilot scale study in which the effect of in pack thermal preservation processes in a retort system on particular carrot quality aspects, more specifically nutritional and textural characteristics, was investigated. Pasteurization as well as sterilization processes with different intensities were included. The carrot hardness, analyzed by a compression test, and the β-carotene bio-accessibility, analyzed by an in vitro digestion method, were the main quality markers. As a main conclusion, it can be stated that the results of this pilot scale study are a good validation of results obtained during previous laboratory scale experiments on carrot nutritional and textural characteristics. The processes applied in this study only resulted in limited conversion of all-trans-β-carotene to its cis-isomers. Furthermore, it was shown that intense thermal processing is required to observe a significant increase in the β-carotene bio-accessibility. However, this was accompanied with a clear degradation of the hardness. When thermal processing was preceded by low temperature blanching, a technique to improve texture retention of thermally processed plant-based foods, a lower β-carotene bio-accessibility was observed. Both observations clearly illustrated the inverse correlation between textural and nutritional characteristics of (processed) carrots. Statistical analyses confirmed the trends observed. For process design, the choice of the process intensity was identified to be crucial: the required product safety needs to be achieved, while still reaching an acceptable structural and nutritional quality. Exploring strategies to enhance the β-carotene bio-accessibility while ensuring an acceptable carrot texture can therefore be useful.  相似文献

Patients with chronic kidney disease (CKD) are more prone to oxidative stress and chronic inflammation, which may lead to an increase in the synthesis of advanced glycation end products (AGEs). Because AGEs are mostly removed by healthy kidneys, AGE accumulation is a result of both increased production and decreased kidney clearance. On the other hand, AGEs may potentially hasten decreasing kidney function in CKD patients, and are independently related to all-cause mortality. They are one of the non-traditional risk factors that play a significant role in the underlying processes that lead to excessive cardiovascular disease in CKD patients. When AGEs interact with their cell-bound receptor (RAGE), cell dysfunction is initiated by activating nuclear factor kappa-B (NF-κB), increasing the production and release of inflammatory cytokines. Alterations in the AGE-RAGE system have been related to the development of several chronic kidney diseases. Soluble RAGE (sRAGE) is a decoy receptor that suppresses membrane-bound RAGE activation and AGE-RAGE-related toxicity. sRAGE, and more specifically, the AGE/sRAGE ratio, may be promising tools for predicting the prognosis of kidney diseases. In the present review, we discuss the potential role of AGEs and sRAGE as biomarkers in different kidney pathologies.  相似文献

Transient Lamb waves in a thin copper plate were generated and measured using a laser ultrasonic setup. A two-dimensional Fourier transform method has been employed to analyse the dispersion curves. This allowed a clear identification of multi-mode Lamb waves. Fitting of the dispersion curve allowed a direct determination of the thickness and bulk velocities, as well as the elastic constants. The obtained experimental results of Lamb waves on a copper plate show excellent agreement with the theoretical model.  相似文献

The occurrence of acoustic cavitation in the cleaning liquid is a crucial precondition for the performance of megasonic cleaning systems. Hence, a fundamental understanding of the impact of different parameters of the megasonic process on cavitation activity is necessary. A setup capable of synchronously measuring sonoluminescence and acoustic emission originating from acoustically active bubbles is presented. The system also includes a high-speed-stroboscopic Schlieren imaging system to directly visualize the influence of cavitation activity on the Schlieren contrast and resolvable bubbles. This allows a thorough characterization of the mutual interaction of cavitation bubbles with the sound field and with each other. Results obtained during continuous sonication of argon-saturated water at various nominal power densities indicate that acoustic cavitation occurs in a cyclic manner, during which periods of stable and inertial cavitation activity alternate. The occurrence of higher and ultraharmonics in the acoustic emission spectra is characteristic for the stable cavitation state. The inertial cavitation state is characterized by a strong attenuation of the sound field, the explosive growth of bubbles and the occurrence of broadband components in the acoustic spectra. Both states can only be sustained at sufficiently high intensities of the sound field. At lower intensities, their occurrences are limited to short, random bursts. Cleaning activity can be linked to the cavitation activity through the measurement of particle removal on standard 200 mm silicon wafers. It is found that the particle removal efficiency is reduced, when a continuous state of cavitation activity ceases to exist.  相似文献

The functional (emulsifying, gelling and foaming) properties of liver protein fractions as well as their molecular weight distribution and surface hydrophobicity were investigated and compared to commercial proteins. Two protein fractions were characterized: water soluble (WSLP) and WSLP combined with salt soluble liver proteins (W?+?SSLP). The effect of salt concentrations was also investigated (0, 1.8 and 3.4 % NaCl). Both WSLP and W?+?SSLP displayed good emulsifying properties and foam stability. However, their gelling properties were rather poor. An increase in salt concentration decreased the emulsifying properties of WSLP while the effect on W?+?SSLP was less pronounced. Addition of 1.8 % NaCl increased foaming ability of WSLP and W?+?SSLP while foam stability was not affected. Further increase of NaCl (3.4 %) decreased both foaming ability and foam stability and is probably attributed to refolding of the protein molecules because of the higher level of hydrophobic groups with 3.4 % NaCl. Gel forming ability of WSLP and W?+?SSLP containing 0 % was higher compared to high salt concentrations. However, higher salt concentrations shifted onset gelation temperature of WSLP and W?+?SSLP to lower temperatures probably due to partial unfolding of the proteins as indicated by an increase of the surface hydrophobicity.  相似文献

Onsite individual wastewater treatment systems can provide a financially attractive alternative to a sewer connection in locations far from the existing sewer network. These systems are, however, relatively new, and practical experiences, especially long-term field studies, are lacking. Therefore, a thorough study of two compact biofilm-based, aerobic onsite systems, both of five population equivalents, was started in 2001. The assessment of the treatment performance of these systems, as well as the maintenance requirements and the characterisation of the feed are of great importance for the better understanding of the systems in order to optimise their design and performance. This paper presents an evaluation and discussion of the start-up and a starvation period of the two studied systems, followed by a characterisation of the incoming wastewater using activated sludge respirometry experiments in the context of the assessment and improvement of the denitrification process. Individual wastewater treatment systems are characterised by a rather long start-up period of 70-120 days. An important characteristic during the start-up is the nitrite peak, which indicates the initiation of the nitrification process. The respirometric experiments reveal that the failing denitrification is probably caused by an insufficient amount of readily biodegradable COD in the influent.  相似文献

Time-dependent mild-slope equations have been extensively used to compute wave transformations near coastal and offshore structures for more than 20 years. Recently the wave absorption characteristics of a Wave Energy Converter (abbreviated as WEC) of the overtopping type have been implemented in a time-dependent mild-slope equation model by using numerical sponge layers. In this paper the developed WEC implementation is applied to a single Wave Dragon WEC and multiple Wave Dragon WECs. The Wave Dragon WEC is a floating offshore converter of the overtopping type. Two wave reflectors focus the incident wave power towards a ramp. The focussed waves run up the ramp and overtop in a water reservoir above mean sea level. The obtained potential energy is converted into electricity when the stored water drains back to the sea through hydro turbines. The wave reflectors and the main body (ramp and reservoir) are simulated as porous structures, exhibiting the same reflection, respectively absorption characteristics as obtained for the prototype Wave Dragon WEC. The wake effects behind a single Wave Dragon WEC are studied in detail for uni- and multidirectional waves. The shadow zone indicating the wake effect is decreasing with increasing directional spreading. The wake in the lee of a farm of five Wave Dragon WECs, installed in a staggered grid (3 WECs in the first row and 2 WECs in the second row), is calculated for three in-between distances of respectively D, 2D and 3D, with D the distance between the tips of the wave reflectors of a single WEC. As a result, a farm of five Wave Dragon WECs installed in a staggered grid with an in-between distance of 2D is preferred, when taking cost and spatial considerations into account.  相似文献
