Due to the recognized toxicity of acrylamide, intensive efforts have been made to reduce the concentration of this undesired Maillard by-product in food. This work reports the results obtained from a series of experiments aimed at determining the concentration of acrylamide and the in vitro radical scavenging capacity in the same roasted and ground coffee samples, as it is well established that a significant part of the antioxidant activity in coffee is linked to the melanoidins, which are also considered as Maillard reaction products (MRPs). The radical scavenging capacity was measured using electroparamagnetic resonance (EPR). Coffee samples from the Robusta and Arabica varieties were roasted at 236 °C over different time periods to obtain very light, light, medium and dark roast. Color analyses were performed on all samples. Increasing the roasting degree led to a decrease in acrylamide concentration as well as radical scavenging capacity. The results of this work indicate that any mitigation efforts must also take into account the potential loss of desired food constituents and consequently changes to the risk/benefit characteristics of foods.  相似文献

Cavity ring-down spectroscopy (CRDS) is a highly sensitive laser absorption method. It can be used for quantitative analysis of molecular species at the sub-ppb level. The absorption cell (cavity) is sealed by two high-reflective mirrors on each side, which results in an effective absorption path-length of some kilometers. Our experiments for atmospheric gas analysis have been carried out so far with an Excimer pumped dye laser in the UV-VIS and a CO overtone sideband laser in the wavelength region around 3 μm. Experiments with an all solid-state difference frequency laser system will follow. In the UV-VIS region, we measured trace gas molecules like SO2, NO2, and CH2O. In the mid-infrared, around 3 μm, we measured hydrocarbons like CH4, C2H6, and C2H4 with a detection limit of less than 1 ppb. The noise equivalent absorption coefficients in the MIR are in the order of 1.7·10−9 cm−1. Due to the high data acquisition rate and the high sensitivity, CRDS enables real-time detection of trace gases in ambient air.  相似文献

Chemical markers and model studies are useful in predicting the stability and shelf life of foods and beverages in food technology and chemistry. Chemical modification induced by food processing has an impact on the reactivity and chemical properties of the food constituents, frequently giving rise to new molecules with enhanced antioxidative activity and potential health benefit. In the case of coffee, tea, and cocoa, these positive characteristics are often associated with dietary polyphenols. In particular, the often referred to “paradox” behavior of endogenous polyphenols to act as anti- and/or prooxidants is demonstrated with the aid of in vitro model studies. Furthermore, in-situ chemical markers such as 8-oxocaffeine are described in methylxanthine-rich beverages that reflect oxidative reactions. Such chemicals can be employed to help assess the impact of processing conditions on food quality as well as to predict the stability of the final product.  相似文献

Metal-organic coordination networks (MOCNs) have attracted wide interest because they provide a novel route towards porous materials that may find applications in molecular recognition, catalysis, gas storage and separation. The so-called rational design principle-synthesis of materials with predictable structures and properties-has been explored using appropriate organic molecular linkers connecting to metal nodes to control pore size and functionality of open coordination networks. Here we demonstrate the fabrication of surface-supported MOCNs comprising tailored pore sizes and chemical functionality by the modular assembly of polytopic organic carboxylate linker molecules and iron atoms on a Cu(100) surface under ultra-high-vacuum conditions. These arrays provide versatile templates for the handling and organization of functional species at the nanoscale, as is demonstrated by their use to accommodate C(60) guest molecules. Temperature-controlled studies reveal, at the single-molecule level, how pore size and chemical functionality determine the host-guest interactions.  相似文献

The presented work applies mid-infrared attenuated total reflection (ATR) spectroscopy to the measurment of hydrogen peroxide in aqueous matrices. The performance of different ATR crystals mounted in flow cells was investigated in the presence of aqueous hydrogen peroxide solutions. Quantitative determination has been achieved by evaluation of specific OH stretching and deformation vibrations with linear correlation between peak areas or peak heights and hydrogen peroxide concentration in the range of 1-10% (weight in water). Important aspects such as chemical stability of the waveguide material and influences of pH and ionic strength on the performance are discussed. Feasibility for the investigation of real world samples is demonstrated by measuring industrial bleaching solutions with known concentrations of hydrogen peroxide fitting well with calibration graphs established with neat hydrogen peroxide solutions. The presented sensor system is capable of determining hydrogen peroxide within complex matrices and clearly corroborates the potential of providing an in situ measurement concept for on-line hydrogen peroxide detection.  相似文献

A major tsunami in December 2004 devastated the coastal ecosystems along the Andaman Sea coast of Thailand. Since intact coastal ecosystems provide many important services for local communities at the Andaman Sea, it is crucial to investigate to what extent (in terms of percentage area and speed) the affected ecosystems were capable of recovering after the tsunami. Field measurements and multi-date IKONOS imagery were used to estimate the recovery and succession patterns of coastal vegetation types in the Phang-Nga province of Thailand, three years after the tsunami. Thus, this study contributes to a holistic understanding of the ecological vulnerability of the coastal area to tsunamis. A zone-based change detection approach is applied by comparing two change detection techniques: the first method involves the calculation of a recovery rate based on multi-temporal TNDVI (transformed normalized difference vegetation index) images (TNDVI approach), whereas the second approach is a combined approach of the change vector analysis (CVA). Although these two methods provide different types of information (quantitative for the TNDVI approach, qualitative for the CVA), they are comparable in terms of results and accuracies. The results reveal that recovery processes vary based on the type of the ecosystem and, furthermore, are strongly influenced by human activities. Grasslands, coconut plantations and the mixed vegetation cover could recover faster than the mangroves and casuarina forests. Among the forest ecosystems, recovery rates of casuarina forests were higher than for mangroves, but the recovery area was smaller. This study also discusses the potential and some limitations and inaccuracies of applying high-resolution optical imagery for assessing vegetation recovery at a local scale.  相似文献

While OLEDs have struggled to find a niche lighting application that can fully take advantage of their unique form factors as thin, flexible, lightweight and uniformly large‐area luminaire, photomedical researchers have been in search of low‐cost, effective illumination devices with such form factors that could facilitate widespread clinical applications of photodynamic therapy (PDT) or photobiomodulation (PBM). Although existing OLEDs with either fluorescent or phosphorescent emitters cannot achieve the required high power density at the right wavelength windows for photomedicine, the recently developed ultrabright and efficient deep red quantum dot light emitting devices (QLEDs) can nicely fit into this niche. Here, we report for the first time the in‐vitro study to demonstrate that this QLED‐based photomedical approach could increase cell metabolism over control systems for PBM and kill cancerous cells efficiently for PDT. The perspective of developing wavelength‐specific, flexible QLEDs for two critical photomedical fields (wound repair and cancer treatment) will be presented with their potential impacts summarized. The work promises to generate flexible QLED‐based light sources that could enable the widespread use and clinical acceptance of photomedical strategies including PDT and PBM.  相似文献

Transmission electron microscopy is wave optics. The object exit wave contains the full object information. However, in the usual intensity images, recorded either in real space or in Fourier space, the phases are missing. In many applications at medium and at high resolution, electron holography has shown its unique ability of solving the “missing phase problem” and utilizing the recovered phase for complete interpretation of the object structure. The question is “What are the performance limits?” with respect to field of view, lateral resolution and signal resolution. In this article, the performance limits are derived and discussed.  相似文献

As opposed to quantitative association rule mining, fuzzy association rule mining is said to prevent the overestimation of boundary cases, as can be shown by small examples. Rule mining, however, becomes interesting in large databases, where the problem of boundary cases is less apparent and can be further suppressed by using sensible partitioning methods. A data-driven approach is used to investigate if there is a significant difference between quantitative and fuzzy association rules in large databases. The influence of the choice of a particular triangular norm in this respect is also examined.  相似文献
