Factors Affecting Heat-Induced Gel Formation of Bovine Serum Albumin   总被引:1,自引:0,他引:1  
Factors affecting heat-induced gel formation of bovine serum albumin (BSA) were studied. In the presence of NaCl (I>0.05), well-developed transparent gels formed on both sides of the isoelectric point (Ip). Addition of CaCl2 or MgCl2 greatly suppressed gel formation on the alkaline side of Ip, but increased it a little on the acid side. Intermolecular s-s bonds contributed to the gel formation on the alkaline side of Ip but not on the acid side. From the results of the infrared spectra measurements intermolecular β-structure appears to contribute to gel formation on both sides of the Ip.  相似文献

The objective of the present study is to compare the protein cross‐linking reaction in Alaska pollock surimi that is catalyzed by a commercially available microbial transglutaminase and by endogenous Alaska pollock transglutaminase. The endogenous transglutaminase was inhibited by EGTA and activated by CaCl2 The microbial transglutaminase was added to the salted surimi with and without EGTA and CaCl2. These surimi pastes were incubated at 25C up to 24 h followed by cooking at 90C. The resultant gels were fractionated into soluble and insoluble (aggregate) fractions by SDS‐urea extraction. Compositional analysis revealed that the aggregate consisted predominantly of cross‐linked myosin heavy chain. The distribution of ?‐(γ‐glutamyl)lysine isopeptide in the soluble and aggregate fractions andpeptide mapping analyses of the aggregate fraction demonstrate that the formation of isopeptide cross‐links in Alaska pollock surimi proteins during suwari process differs when catalyzed by the microbial transglutaminase and endogenous transglutaminase.  相似文献

It has been confirmed that the apatite nucleation is induced by silanol (Si–OH) groups formed on the surfaces of materials and/or silicate ions adsorbed on them.It was previously shown that apatite nuclei are formed on organic polymers when the polymers are placed on CaO, SiO2-based glass particles soaked in a simulated body fluid (SBF) with ion concentrations nearly equal to those of human blood plasma, and that they grow spontaneously to form a dense and uniform apatite layer together with high adhesive strength to the substrates when the polymers are soaked in another solution with ion concentrations 1.5 times the SBF. In the present study, silanol groups bonded covalently to the surface of the silicone substrate were formed and its apatite-forming ability was examined. When silicone substrates were treated with 5 or 10 M NaOH with pH 7.25 at 36.5°C for more than 3 h, silanol groups were formed on the surfaces of the substrates. When thus NaOH-treated substrates were soaked in 1.5SBF at 36.5°C, a bone-like apatite was formed on the substrates in a short period. © 1998 Chapman & Hall.  相似文献

3-[(Dioctylamino)methyl]alizarin (C8AL), which is endowed with high solubility in nonpolar organic solvents through introduction of dioctylaminomethyl group into the alizarin nucleus was studied for extracting heavy metal ions such as Cu(II), Zn(II), Cd(II), Co(II), Mn(II), and Ni(II), from aqueous solution.Cu(II) was most readily extracted into chlorobenzene at low pH and thus was separated from other metal ions. The metal ions stabilized in alkaline solution in the presence of water-soluble chelating agents were found to be extracted by this, alizarin-type extraction agent into chlorobenzene with the assistance by lipophilic quaternary ammonium salt, Capriquat? (methyltrioctylammonium chloride, Q?C1?).The proton dissociation process of CRAL was studied, and the mechanism of these metal extractions was discussed.The separation of Cu(II) and Ni(II) from the mixture with other divalent metal ions was also studied.  相似文献

This paper discusses a series of aeronautical experiments that utilize the advanced communication technology satellite (ACTS). As part of the ongoing effort to investigate commercial applications of ACTS technologies, NASA's Jet Propulsion Laboratory and various industry/government partners have developed a series of experiments that utilize the ACTS mobile terminal (AMT)1 and the broadband aeronautical terminal1 to investigate aeronautical uses of the ACTS. The interfacial tension of vegetable oil (soybean oil or coconut oil)/ water interface decreased with the increase of cyclodextrin (CD) concentration. The interfacial excess and interfacial area were calculated from the Gibbs’ adsorption equation. The average number of CD molecules including a fatty acid residue of soybean oil at the interface was estimated at 2.4 for each of α-CD and β-CD. The average number of CD molecules complexed with a fatty acid residue of coconut oil was 1.8 for α-CD and 1.7 for β-CD. These results suggested that the CD molecules formed the inclusion complex with the triglyceride according to the chain length of fatty acid residue at the interface.  相似文献
