Differences in the extent of loss of pectic substances from potato (Solanum tuberosum L.) after boiling, steaming and pressure cooking were investigated. Losses were found to be significantly greater (P< 0.001) after boiling than after pressure cooking or steaming. The pectic substance content (g 100 g?1 dry matter) of potatoes (cv. Pentland Crown) was 2.98 for raw peeled tubers, 0.97 after boiling for 35 min, 1.22 after steaming for 35 min and 1.24 after pressure cooking at 103.4 kPa (15 psi) for 15 min. The roles of cooking time, cooking temperature and heat transfer medium are discussed. The effects of calcium sulphate (at levels typical of ‘hard’ and ‘soft’ water supplies) in the cooking water on losses of pectic substances from potato (Solanum tuberosum L.), carrot (Daucus carota L.), and swede (Brassica napus L. var. napobrassica Peterm.) after boiling and pressure cooking were also investigated. Water hardness did not influence losses during pressure cooking but samples boiled in hard water had decreased losses of pectic substances compared to those boiled in soft water. The increase in retention of pectic substances due to hard water was about 8 % for potatoes (cv. Pentland Dell), about 33 % for sliced carrots (cv. Berlicum, approved maintenance Perfecta) and about 23% for diced swedes (cv. Acme). The interaction of water hardness with cooking method was significant for potato (P< 0.05) and swede (P<0.001) and approaching significance (P=0.055) for carrot.  相似文献

The objective of this work was to study the heat-induced gelling properties, at acid pH, of porcine plasma previously treated with microbial transglutaminase (MTGase) under high pressure (HP), when kept under refrigeration conditions for different times (setting time). The results indicated that, although the cross-linking activity of MTGase was enhanced under pressure, consequently, improving the thermal gel texture, the most significant effects, particularly on gel hardness, were obtained by keeping the treated plasma solutions under refrigeration for at least 2 h before gelation. On the whole, under such conditions, increases of approximately 60% of this textural parameter, calculated on the basis of the values corresponding to the heat-induced non-treated plasma gels at pH 5.5, were achieved. However, from the SDS–PAGE profiles, it can be suggested that mechanisms other than polymerisation by MTGase explain the beneficial effects of the treated plasma cold storage on gel texture. In contrast, the setting time had no effects on the water-holding capacity of heat-induced plasma gels at acid pH value, although this gel property was slightly enhanced by submitting porcine plasma solutions to the combined treatment (MTGase plus HP), with improvements being in accordance with the better-structured network of these heat-induced plasma gels.  相似文献

Silica-supported H3PW12O40 (PW), the strongest heteropoly acid in the Keggin series, is an efficient, environmentally friendly heterogeneous catalyst for the liquid-phase isomerization of α-pinene and longifolene into their more valuable isomers – camphene and isolongifolene, respectively, which are intermediates in the synthesis of expensive fragrances. The reactions occur under solvent-free conditions in the temperature range of 80–100 °C, with low catalyst loadings (0.15–5 wt%) and high turnover numbers (up to 6000 per proton). The catalyst can be easily recovered and reused. No PW leaching is observed in the reaction system.  相似文献

Experiments 1 and 2 examined whether winning versus losing led to reckless betting for real prize money. Experiment 2 also assessed whether positive or negative emotions were linked to such reckless betting. College students were randomly assigned to experience primarily either wins or losses during the rigged first round of a computerized card tournament that had 2 independent rounds. For the second round, participants’ chip totals were reset and cards were dealt randomly. In Experiment 1 (N = 107), participants in the Initial-Winning, as compared with the Initial-Losing, condition bet more recklessly (i.e., bet too many chips when a loss was likely). Experiment 2 (N = 72) again showed that Initial-Winning participants bet significantly more recklessly than did Initial-Losing participants. It also revealed that positive affect was significantly positively correlated with such reckless betting. These findings have implications for understanding how college students, those at an age when they are especially vulnerable to problem gambling, can come to lose more money than they can afford. In this paper we draw on evidence from an in-depth, longitudinal, interpretive study of an ambitious attempt to implement a large-scale information systems (IS) infrastructure (the ILCUTECH Standard Information System (ISIS) project) within the Irish credit union movement, to explore some of the difficulties and contradictions associated with information and communication technology (ICT)-enabled organisational integration. We argue that, in their enthusiasm for facilitating IS innovation, the leadership of the movement neglected more deep-seated organisational issues that were, to that point, largely unarticulated. In an attempt to get to the heart of these issues, we synthesise a distinctive theoretical perspective that draws mainly on institutional theory. This helps untangle the complex institutional heritage of the credit union movement, which resulted in the emergence of an interesting hybridity of institutional logics and latent contradictions. These contradictions provoked the emergence of a particular kind of institutional entrepreneurship, which was deeply implicated in reshaping institutionalised ways of thinking and doing. We emphasise the political nature of the change process and argue that the institutional arrangements for governing the ISIS project, which also underpinned the governance of the broader movement, were not well suited to manage the risk associated with such an enterprise. We conclude by suggesting that the case described might be an example of the workings of a broader kind of change dynamics around ICT. Specifically, the scale and scope of the change project acted as a trigger that brought tensions underlying existing competing institutional logics to a head, thus provoking institutional reform.  相似文献

Accumulated evidence shows that biology and the environment can mediate self-injurious behavior (SIB) in persons with mental retardation. Whether pharmacological treatment alters the environmental mediation of self-injury is unclear. Opioid antagonist effects on sequential dependencies for self-injury were studied in the context of experimental single-subject double-blind placebo-controlled designs. Direct observational data were collected for 4 adult subjects in real time on daily rate of SIB and staff interactions. Clinically significant reductions (i.e., ≥ 33%) in SIB rate were observed for 3 of the 4 subjects. For all subjects, the magnitude of the sequential dependency between staff behavior and self-injury was significantly greater during treatment with naltrexone than during treatment with a placebo. Treatment of milk with transglutaminase (TGase) affects its heat stability, but the manner in which it does so depends on whether or not the milk had been preheated before incubation and on the temperature of preheating. In raw milk, it appears that cross-link formation between the individual caseins is responsible for preventing the dissociation of kappa-casein from the micelles at pH values in the region of minimum stability. In milks preheated before incubation with TGase, denaturation of whey protein may have allowed the formation of cross-links by TGase between denatured whey proteins and the individual caseins which, in combination with cross-linking of the caseins, contributed to greatly improved heat stability at pH > 6.5. It appears from the results of this study that TGase has potential commercial applications as a food-grade additive capable of improving the heat stability of milk.  相似文献
