ABSTRACT

Sugar reduction is a major technical challenge for the food industry to address in response to public health concerns regarding the amount of added sugars in foods. This paper reviews sweet taste perception, sensory methods to evaluate sugar reduction and the merits of different techniques available to reduce sugar content. The use of sugar substitutes (non-nutritive sweeteners, sugar alcohols, and fibres) can achieve the greatest magnitude of sugar and energy reduction, however bitter side tastes and varying temporal sweet profiles are common issues. The use of multisensory integration principles (particularly aroma) can be an effective approach to reduce sugar content, however the magnitude of sugar reduction is small. Innovation in food structure (modifying the sucrose distribution, serum release and fracture mechanics) offers a new way to reduce sugar without significant changes in food composition, however may be difficult to implement in food produced on a large scale. Gradual sugar reduction presents difficulties for food companies from a sales perspective if acceptability is compromised. Ultimately, a holistic approach where food manufacturers integrate a range of these techniques is likely to provide the best progress. However, substantial reduction of sugar in processed foods without compromising sensory properties may be an impossible dream.  相似文献

The efficacy of using polymers in cylindrical applications depends closely on its surface friction and wear characteristics. In this regard, a surface modification technique through plastic deformation has been implemented. Roller burnishing is commonly used to improve the surface quality of non-ferrous surfaces, but no work showed concern about roller burnishing as a polymer surface treatment process. The objective of the present work is to investigate the influence of burnishing force and burnishing speed on the friction and wear performance of acetal homopolymer and polyurethane under dry and lubricated sliding conditions. The results reveal that the coefficient of friction and wear rate decreased to a minimum value and then increased as higher burnishing force and speed were applied. It was shown that roller burnishing had favourable prospective to be utilized as a valuable polymer surface treatment technique.  相似文献

A frequency analysis of an Euler–Bernoulli beam carrying a concentrated mass at an arbitrary location is presented. The dimensionless frequency equation for classical boundary conditions is obtained by satisfying the differential equations of motion and by imposing the corresponding boundary and compatibility conditions associated to the masses. The resulting transcendental equations are numerically solved for the eigenvalue. On the other hand, the eigenvalue can be predicted merely from the individual beam system carrying a single mass, by virtue of the Dunkerley's formula. A parametric study on the effects of the two masses and their locations is presented for the beam with different boundary conditions. It is found that the Dunkerley's expression can generally yield good approximation if compared with the result associated with the original characteristic equation. The computation time saved owing to the modified Dunkerley method is also illustrated in a comparison. The Dunkerley's method is recommended for the beam carrying more than two masses at different positions, owing to its good approximation and the saving in computational time.  相似文献

Multicasting refers to the transmission of data from a source node to multiple destination nodes in a network. Group multicasting is a generalisation of multicasting whereby every member of a group is allowed to multicast messages to other members that belong to the same group. The routing problem in this case involves the construction of a set of low cost multicast trees with bandwidth requirements, one for each member of the group, for multicasting messages to other members of the group. In this paper, we propose a new heuristic algorithm to generate a set of low cost multicast trees with bandwidth requirements. Simulation results show that our proposed algorithm performed better in terms of cost and in terms of utilisation of bandwidth as compared to an existing algorithm that was proposed by Jia and Wang [3].  相似文献

The effects of perivascular nerve stimulation and phenylephrine on osmolyte release were studied in the intact perfused rat liver and isolated liver parenchymal cells (PC) and nonparenchymal cells. In the perfused liver, electrical stimulation of perivascular nerves (20 Hz/2 ms/20 V) led to a phentolamine-sensitive increase of cell hydration by 6.5% +/- 1.2% (n = 3) and a transient phentolamine-sensitive stimulation of taurine and inositol, but not betaine, release. These nerve effects were mimicked by phenylephrine, but not prostaglandin F2alpha, and were not affected by sodium nitroprusside (SNP) or ibuprofen. Nerve stimulation-induced taurine, but not inositol, release was inhibited by 4, 4'-di-isothiocyanatostilbene-2,2'-disulphonic acid (DIDS) (50 micromol/L). Single-cell fluorescence studies with isolated liver PC, Kupffer cells (KC), sinusoidal endothelial cells (SEC), and hepatic stellate cells (HSC) revealed that phenylephrine induced an increase in cytosolic free Ca2+ only in PC and HSC, but not in KC and SEC, whereas extracellular uridine triphosphate (UTP) produced Ca2+ transients/oscillations in all liver cell types studied. Phenylephrine had no effect on osmolyte release from isolated KC and SEC, but increased taurine (but not inositol) release from PC and inositol (but not taurine) efflux from HSC. The data suggest that: 1) liver cell hydration and-consecutively-osmolyte content are modulated by hepatic nerves via an alpha-adrenergic mechanism, which does not involve eicosanoids or hemodynamic changes; 2) that PC and HSC are the primary targets for nerve-dependent alpha-adrenergic activation, whereas 3) KC and SEC probably do not express alpha-adrenoceptors coupled to Ca2+ mobilization or osmolyte efflux.  相似文献

One hypothesis to explain the age-dependent clearance of red blood cells (RBCs) from circulation proposes that denatured/oxidized hemoglobin (hemichromes) arising late during an RBC's life span induces clustering of the integral membrane protein, band 3. In turn, band 3 clustering generates an epitope on the senescent cell surface leading to autologous IgG binding and consequent phagocytosis. Because dog RBCs have survival characteristics that closely resemble those of human RBCs (ie, low random RBC loss, approximately 115-day life span), we decided to test several aspects of the above hypothesis in the canine model, where in vivo aged cells of defined age could be evaluated for biochemical changes. For this purpose, dog RBCs were biotinylated in vivo and retrieved for biochemical analysis at various later dates using avidin-coated magnetic beads. Consistent with the above hypothesis, senescent dog RBCs were found to contain measurably elevated membrane-bound (denatured) globin and a sevenfold enhancement of surface-associated autologous IgG. Interestingly, dog RBCs that were allowed to senesce for 115 days in vivo also suffered from compromised intracellular reducing power, containing only 30% of the reduced glutathione found in unfractionated cells. Although the small quantity of cells of age >/=110 days did not allow direct quantitation of band 3 clustering, it was nevertheless possible to exploit single-cell microdeformation methods to evaluate the fraction of band 3 molecules that had lost their normal skeletal linkages and were free to cluster in response to hemichrome binding. Importantly, band 3 in RBCs >/=112 days old was found to be 25% less restrained by skeletal interactions than band 3 in control cells, indicating that the normal linkages between band 3 and the membrane skeleton had been substantially disrupted. Interestingly, the protein 4.1a/protein 4.1b ratio, commonly assumed to reflect RBC age, was found to be maximal in RBCs isolated only 58 days after labeling, implying that while this marker is useful for identifying very young populations of RBCs, it is not a very sensitive marker for canine senescent RBCs. Taken together, these data argue that several of the readily testable elements of the above hypothesis implicating band 3 in human RBC senescence can be validated in an appropriate canine model.  相似文献

Two commonly used methods to generate the eigenfrequency equation of a beam carrying multiple concentrated masses at an arbitrary location are of main concern in this paper. Both the methods of frequency determinant and the method of Laplace transform are considered and compared here for the effectiveness of each derivation for the frequency equation of the same system. The dimensionless frequency equation for a clamped–clamped beam carrying two different masses is obtained for comparison. The computational times to generate the same expression by using the two methods are noted. It is found that the processing and computational time by using the Laplace transform is longer although the resultant system equations are often claimed to be more compact than those by the method of frequency determinant.  相似文献

A comparative study of the eigenfrequency analysis for an Euler–Bernoulli beam carrying a concentrated mass at an arbitrary location is presented in this short note. The dimensionless frequency equation for different combinations of classical boundary conditions is obtained by satisfying the differential equations of motion and by imposing the corresponding boundary and compatibility conditions. Two formulation methods have been commonly used for the boundary-value problem. One is to adopt a single frame originated from the beam's left-end, while another is by dual frames associated with the concentrated mass. It is found that the forms derived by dual frames are more compact than the corresponding expressions by using the single frame. Nevertheless, the comparison for all the cases shows that the dual-frame expressions need more time to obtain the same set of eigenvalues if compared with the time by using the single-frame expressions.  相似文献

Cold stabilisation is a widely used industrial process to prevent tartrate instability in bottled wines. In this article, current knowledge regarding performance and cost of cold stabilisation and alternative technologies for tartrate stabilisation is reviewed. Whilst there have been occasional cost comparisons between cold stabilisation and alternative technologies published in the literature, existing data is not satisfactory to permit an accurate economic evaluation of the different process options. Therefore, alternative technologies to cold stabilisation, including the Westfalia process, nanofiltration and electrodialysis were compared for both technical and economic performance. The engineering calculations and conceptual cost estimates were based on real world data from an Australian winery. Product loss was a key cost driver in differentiating tartrate stabilisation processes. Cold stabilisation was found to be the most economic treatment process irrespective of scale or winery size. Westfalia process and nanofiltration were the next most cost effective options.  相似文献
