This study examines the extent to which variations in consumers' sensory assessments of food arise from the inability to report accurately sensory perceptions, from confusion regarding the criteria by which to assess samples, or from differences in their oral breakdown of the products.
Twenty consumers assessed the tenderness of a range of 8 hot, freshly roasted meat samples using Time Intensity (TI). Overall a significant correlation was found between the maximum recorded intensity (Imax) of their TI curves and single sensory scores given by a trained panel. Correlation was significant for only 42% of the consumers individually. Significant correlations were found between the amount of masticatory muscle activity undertaken during chewing (measured using electromyography) and Imax for all but 2 of the consumers. Thus subjects' perceptions were accurately described by their chewing work, suggesting between subject differences in perception arose from differences in the way chewing work was applied to break down the samples. The sensory input from the masticatory muscles may represent the major determinant of perceived tenderness of meat. 相似文献
Intermediate products of the metabolism of glucose, fat and amino-acid are important in the evaluation of such metabolic disorders as diabetes mellitus, liver disease and metabolic acidosis. In the present study, methods for the measurement of intermediate metabolites (lactate, pyruvate, alanine, β-hydroxybutyrate and glycerol) have been adapted to a fast centrifugal analyzer: the COBAS FARA. Correlation coeffcients rangedfrom 0.90 to 0.99, compared to established manual spectrophotometric methods. Within-run coeffcients of variation (CVs) ranged between 2.9 and 8.8% at low levels, between 1.5 and 5.7% at medium levels and between 1.2 and 5.6% at high levels. Between-run CVs were between 4.0 and 15.0% at low levels, between 1.7 and 7.0% at medium levels and between 1.3 and 2.7% at high levels. These fluorimetric assays for the determination of intermediate metabolites on COBAS FARA (Roche) have a good sensitivity and precision, are less costly than manual methods and can be used on a routine basis. 相似文献

to provide computing and communication services at anytime and anywhere. In fact, the application of NGN includes digital
image processing, multimedia systems/services, and so on. Here we focus on the digital image processing technology in NGN
environments. Low-contrast structure and heavy noise in NGN environments can be found in many kinds of digital images, which
makes the images vague and uncertainly, especially in x-ray images. As result, some useful tiny characteristic are weakened—which
are difficult to distinguish even by naked eyes. Based on the combination of no-linear grad-contrast operator and multi-resolution
wavelet analysis, a kind of image enhancement processing algorithm for useful tiny characters is presented. The algorithm
can enhance the tiny characters while confine amplifying noise. The analysis of the results shows that local regions of the
image are enhanced by using the concept of the grad contrast to make image clearer adaptively. Experiments were conducted
on real pictures, and the results show that the algorithm is flexible and convenient. 相似文献
The miscibility of poly(methylmethacrylate) (PMMA) and (trifluoroethyl methacrylic ester-MMA) copolymers (MMA-MATRIFE) with poly(vinylidene fluoride) (PVDF) and VDF copolymers was studied by differential scanning calorimetry (DSC) as a function of the fluorinated copolymer crystallinity and fluoroalkyl methacrylic ester content in the methacrylic copolymer. Miscibility limits were found identical whatever be the blend preparation technique, although solution mixing induced some polymer fractionation, thus giving slightly higher blend glass transition temperature. The miscibility domain widths are reduced when using MMA-MATRIFE copolymers as compared to PMMA-containing blends and miscibility limits are dependent on the MATRIFE content in the methacrylic copolymer. Moreover, PVDF or VDF copolymer melting enthalpy decrease is associated to a partial dissolution of the semi-crystalline polymer in PMMA or MMA-MATRIFE copolymer above the total miscibility limit. The evolution of dynamic moduli as a function of blends composition confirms the miscibility limits determined by DSC. The Flory-Huggins interaction parameters were determined through the melting point depression analysis and compared to correlate the intensity of inter- or intra-molecular interactions between the polymers to the postulated ‘acidity’ of hydrogen atoms in various VDF-containing polymers. The interaction parameter χ12 increases with the fluoroalkyl methacrylic ester content, corresponding to a prevalence of intra-molecular on inter-molecular interactions in these blends. Similarly, PVDF offers higher χ12 values as compared to VDF-TFE or particularly to VDF-TrFE copolymers. These results highlight the importance of the nature of fluorinated polymers and of the inter- or intra-molecular character of dipolar interactions on both, copolymer miscibility and interaction parameter values. 相似文献
This study uses a hostage negotiation setting to demonstrate how a team of strategic police officers can utilize specific coping strategies to minimize uncertainty at different stages of their decision-making in order to foster resilient decision-making to effectively manage a high-risk critical incident. The presented model extends the existing research on coping with uncertainty by (1) applying the RAWFS heuristic (Lipshitz and Strauss in Organ Behav Human Decis Process 69:149–163, 1997) of individual decision-making under uncertainty to a team critical incident decision-making domain; (2) testing the use of various coping strategies during “in situ” team decision-making by using a live simulated hostage negotiation exercise; and (3) including an additional coping strategy (“reflection-in-action”; Schön in The reflective practitioner: how professionals think in action. Temple Smith, London, 1983) that aids naturalistic team decision-making. The data for this study were derived from a videoed strategic command meeting held within a simulated live hostage training event; these video data were coded along three themes: (1) decision phase; (2) uncertainty management strategy; and (3) decision implemented or omitted. Results illustrate that, when assessing dynamic and high-risk situations, teams of police officers cope with uncertainty by relying on “reduction” strategies to seek additional information and iteratively update these assessments using “reflection-in-action” (Schön 1983) based on previous experience. They subsequently progress to a plan formulation phase and use “assumption-based reasoning” techniques in order to mentally simulate their intended courses of action (Klein et al. 2007), and identify a preferred formulated strategy through “weighing the pros and cons” of each option. In the unlikely event that uncertainty persists to the plan execution phase, it is managed by “reduction” in the form of relying on plans and standard operating procedures or by “forestalling” and intentionally deferring the decision while contingency planning for worst-case scenarios. 相似文献
A new test was developed to assess the efficiency of no-wiping hard-surface cleaning. The test allows cleaner comparisons
according to their ability to remove greasy soils. The chosen approach minimizes the mechanical forces applied while cleaning
so that the interactions between a detergent solution and the soil to be removed can be characterized. For this, immersion
cleaning was chosen, with coated stainless steel as substrate and pigmented oils as the model soil. Several parameters were
studied in defined ranges using the Experimental Design method and systematic comparisons. The test shows high reliability
on degreasing assessments and is there-fore especially suited to optimization of nonionic surfactant mixes. The originality
of the test lies in the possibility of keeping a visual trace of the cleaned substrate appearance by imprinting it on a piece
of paper. The validation of the test leads to corroboration of several practical observations. Temperature and agitation play
a major role in cleaning efficiency. Detergent solution concentration is a more relevant parameter than pH. Sodium carbonate
is shown to have a higher buffering effect than pentahydrated sodium metasilicate. The test is easy to set up, highly sensitive,
and can be adapted to solve the problems encountered by formulators of detergent cleaners, such as screening the best ethoxylated
fatty alcohol mix for better degreasing properties. 相似文献
A novel route in the synthesis of Al-MCM-41 and Al-MCM-48, using tetraethoxysilane (TEOS) and sodium aluminate (NaAlO2) as Si and Al source has been obtained. The effect of surfactant nature and the synthesis conditions such as surfactant/Si ratio and hydrothermal treatment time on the formed mesostructure regularity has been studied. An initial Raman study on the effects of intercalation for aprotic electrolyte-based electrochemical double-layer capacitors (EDLCs) is reported. In situ Raman microscopy is employed in the study of the electrochemical intercalation of tetraethylammonium (Et4N+) and tetrafluoroborate (BF4−) into and out of microcrystalline graphite. During cyclic voltammetry experiments, the insertion of Et4N+ into graphite for the negative electrode occurs at an onset potential of +1.0 V versus Li/Li+. For the positive electrode, BF4− was shown to intercalate above +4.3 V versus Li/Li+. The characteristic G-band doublet peak (E2g2(i) (1578 cm−1) and E2g2(b) (1600 cm−1)) showed that various staged compounds were formed in both cases and the return of the single G-band (1578 cm−1) demonstrates that intercalation was fully reversible. The disappearance of the D-band (1329 cm−1) in intercalated graphite is also noted and when the intercalant is removed a more intense D-band reappears, indicating possible lattice damage. For cation intercalation, such irreversible changes of the graphite structure are confirmed by scanning electron microscopy (SEM). 相似文献
With the increasing growth of multimedia applications over the networking in recent years, users have put forward much higher requirements for multimedia quality of experience (QoE) than before. One of the representative requirements is the image quality. Therefore, the image quality assessment ranging from two-dimension (2D) image to three-dimension (3D) image has been getting much attention. In this paper, an efficient objective image quality assessment metric in block-based discrete cosine transform (DCT) coding is proposed. The metric incorporates properties of human visual system (HVS) to improve its validity and reliability in evaluating the quality of stereoscopic image. This is fulfilled by calculating the local pixel-based distortions in frequency domain, combining the simplified models of local visibility properties embodied in frequency domain, which consist of region of interest (ROI) mechanism (visual sensitivity), contrast sensitivity function (CSF) and contrast masking effect. The performance of the proposed metric is compared with other currently state-of-the-art objective image quality assessment metrics. The experimental results have demonstrated that the proposed metric is highly consistent with the subjective test scores. Moreover, the performance of the metric is also confirmed with the popular IRCCyN/IVC database. Therefore, the proposed metric is promising in term of the practical efficiency and reliability for real-life multimedia applications. 相似文献
