The use of a starter culture in the fermentation of cassava for the production of "kivunde", a traditional Tanzanian food product 总被引:2,自引:0,他引:2

Three cassava fermentation methods (spontaneous fermentation, back-slopping and the use of starter culture) for the production of kivunde, executed in three trials at 30 degrees C, were compared in terms of cyanide level reduction, microbiology and product quality improvement. Among the isolates from spontaneously fermented cassava batches, four strains were selected on the basis of their enzymatic activities and acid production. All were identified as Lactobacillus plantarum and were used as starters in this study. Lowest residual cyanide levels were detected after 120 h fermentation time in samples fermented with the starter culture and were below the maximum value of 10 mg/kg recommended by the Codex/FAO for cassava flour. This finding seems to be related to the alpha-glucosidase activity of the inoculated strains of which API-zyme (Bio-Merieux) tests showed activities of between 20 and > or = 40 nmol/4 h. The total residual cyanide levels of the spontaneous and back-slopping fermentations at 96 h were respectively 43.5 and 47.7 mg/kg dry weight of cassava. Extension of the fermentation period to 5 days, lead to further substantial reduction in the residual cyanide level in both these processes, but not below the recommended maximum value as in the case of starter culture fermented products. The spontaneous and back-slopping fermented cassava showed signs of deterioration after 3 days of fermentation. There was a sharp drop of pH and an increase of titratable acidity for all three batches during the first 48 h followed by a slow rise of pH and drop in titratable acidity towards the end of fermentation. The samples fermented with the starter culture had a smooth texture and pleasant fruity aroma, as opposed to the course and dull appearance and more complex flavour of the samples of spontaneous and back-slopping batches. During fermentation with starter culture, Enterobacteriaceae and yeasts and moulds could not be isolated throughout the period of fermentation (detection limit: 10 colony forming units/g). The present findings indicate the suitability of these Lb. plantarum strains as starter cultures for cassava fermentation in the kivunde process. We describe a model of short-term synaptic depression that is derived from a circuit implementation. The dynamics of this circuit model is similar to the dynamics of some theoretical models of short-term depression except that the recovery dynamics of the variable describing the depression is nonlinear and it also depends on the presynaptic frequency. The equations describing the steady-state and transient responses of this synaptic model are compared to the experimental results obtained from a fabricated silicon network consisting of leaky integrate-and-fire neurons and different types of short-term dynamic synapses. We also show experimental data demonstrating the possible computational roles of depression. One possible role of a depressing synapse is that the input can quickly bring the neuron up to threshold when the membrane potential is close to the resting potential. 相似文献

In computational phylogenetics, supertree methods provide a way to reconstruct larger clades of the Tree of Life. The supertree problem can be formalized in different ways, to cope with contradictory information in the input. In particular, there exist methods based on encoding the input trees in a matrix, and methods based on finding minimum cuts in some graph. Matrix representation methods compute supertrees of superior quality, but the underlying optimization problems are computationally hard. In contrast, graph-based methods have polynomial running time, but supertrees are inferior in quality. In this paper, we present a novel approach for the computation of supertrees called FlipCut supertree. Our method combines the computation of minimum cuts from graph-based methods with a matrix representation method, namely Minimum Flip Supertrees. Here, the input trees are encoded in a 0/1/?-matrix. We present a heuristic to search for a minimum set of 0/1-flips such that the resulting matrix admits a directed perfect phylogeny. We then extend our approach by using edge weights to weight the columns of the 0/1/?-matrix. In our evaluation, we show that our method is extremely swift in practice, and orders of magnitude faster than the runner up. Concerning supertree quality, our method is sometimes on par with the “gold standard” Matrix Representation with Parsimony. 相似文献

This paper proposes a new higher order model reference adaptive control (HO-MRAC) approach following direct adaptive control philosophy, which estimates unknown time-varying parameters. This approach leads to a Lyapunov based conventional MRAC update law, augmented by an observer type parameter predictor dynamics. The predictor dynamics are composed of a stable known part, a feedback of the parameter error and unknown higher order parameters, which are updated using a Lyapunov based adaptive design. So, this HO-MRAC can cope with rapidly changing parameters, due to estimation of their time derivatives. Moreover, for stability analysis, a Lyapunov based generic ultimate boundedness theorem is presented, which allows for a computation of separate bounds for each state vector partition. Furthermore, this theorem formulates the explicit specification of transient and ultimate bounds, reaching time on the ultimate bounds and a set of admissible initial conditions. The concept of hybridization of natural fibre composites with synthetic fibres is attracting increasing scientific attention. The present study addresses the flexural properties of hybrid flax/glass/epoxy composites to demonstrate the potential benefits of hybridization. The study covers both experimental and theoretical assessments. Composite laminates with different hybrid fibre mixing ratios and different layer configurations were manufactured, and their volumetric composition and flexural properties were measured. The relationship between volume fractions in the composites is shown to be well predicted as a function of the hybrid fibre mixing ratio. The flexural modulus of the composites is theoretically assessed by using micromechanical models and laminate theory. The model predictions are compared with the experimentally determined flexural properties. Both approaches show that the flexural modulus of the composites is consistently increased when the flax fibre fabrics are replaced by glass fibre fabrics from the inner layers to the outer layers. The observed deviations between the experimental and theoretical values are explained by the simplifying model assumptions applied for the configuration of the composites, in particular the flax fibre composites.
