BACKGROUND: In the tubers of Jerusalem artichoke (Helianthus tuberosus L.) the main carbohydrate is the well‐known prebiotic inulin, which is a good growth substrate for gut microorganisms. Jerusalem artichoke tuber is traditionally consumed boiled or pickled rather than in fermented form. Lactic acid bacteria are traditionally used in the production of fermented foods; nevertheless their behavior and metabolite production are considerably influenced by the substrate. The purpose of this study was to investigate the growth and production of the most important sensorically and antimicrobially active metabolites of different Lactobacillus strains on Jerusalem artichoke juice. RESULTS: All investigated strains grew well (in the range 109 cfu mL?1) in the media. The organic acids (lactic acid, 110–337 mmol L?1; acetic acid, 0–180 mmol L?1; and succinic acid, 0–79 mmol L?1), hydrogen peroxide (0.25–1.77 mg L?1), mannitol (0.06–3.24 g L?1), acetoin and diacetyl production of strains varies not only according to the species but also from strain to strain, which will be demonstrated and discussed in the paper. CONCLUSION: Our results showed that lactobacilli can be used for the fermentation of Jerusalem artichoke, which in this form could be used, alone or mixed with other raw food material, as a new synbiotic functional food. In this work, the effect of active coating on the shelf life of low-moisture Mozzarella cheese packaged in air and modified atmosphere (MAP) was studied. The active coating was based on sodium alginate (2%, wt/vol) and potassium sorbate (1%, wt/vol). The MAP was made up of 75% CO2 and 25% N2 (MAP1), 25% CO2 and 75% N2 (MAP2), or 50% CO2 and 50% N2 (MAP3). The product quality decay was assessed by monitoring microbiological and sensory changes during storage at 4, 8, and 14°C. Results showed that the combination of active coating and MAP was able to improve the preservation of low-moisture Mozzarella cheese. Specifically, the shelf life increased up to 160 d for samples stored at 4°C, and 40 and 11 d for those at 8 and 14°C, respectively. A faster quality decay for untreated samples packaged in air was observed. In particular, the Pseudomonas spp. growth and the appearance of molds were responsible for product unacceptability. The combination of active coating and MAP represents a strategic solution to prolong the shelf life of low-moisture Mozzarella cheese and to ensure the safety of the product under thermal abuse conditions. 相似文献

The cure rate of germ cell tumours (GCTs) has significantly increased from the late 1970s since the introduction of cisplatin-based therapy, which to date remains the milestone for GCTs treatment. The exquisite cisplatin sensitivity has been mainly explained by the over-expression in GCTs of wild-type TP53 protein and the lack of TP53 somatic mutations; however, several other mechanisms seem to be involved, many of which remain still elusive. The findings about the role of TP53 in platinum-sensitivity and resistance, as well as the reported evidence of second cancers (SCs) in GCT patients treated only with surgery, suggesting a spectrum of cancer predisposing syndromes, highlight the need for a deepened understanding of the role of TP53 in GCTs. In the following report we explore the complex role of TP53 in GCTs cisplatin-sensitivity and resistance mechanisms, passing through several recent genomic studies, as well as its role in GCT patients with SCs, going through our experience of Center of reference for both GCTs and cancer predisposing syndromes. 相似文献

The identification of the geological structure from seismic data is formulated as an inverse problem. The properties and the shape of the rock formations in the subsoil are described by material and geometric parameters, which are taken as input data for a predictive model. Here, the model is based on the Helmholtz equation, describing the acoustic response of the system for a given wave length. Thus, the inverse problem consists in identifying the values of these parameters such that the output of the model agrees the best with observations. This optimization algorithm requires multiple queries to the model with different values of the parameters. Reduced order models are especially well suited to significantly reduce the computational overhead of the multiple evaluations of the model. In particular, the proper generalized decomposition produces a solution explicitly stating the parametric dependence, where the parameters play the same role as the physical coordinates. A proper generalized decomposition solver is devised to inexpensively explore the parametric space along the iterative process. This exploration of the parametric space is in fact seen as a post‐process of the generalized solution. The approach adopted demonstrates its viability when tested in two illustrative examples. Although easily scalable, the production of graphene nanoplatelets (GNP) by the means of liquid-phase exfoliation of graphite flakes (GF) remains an energy- and time-intensive process. In this work, we demonstrate that significant time and energy can be saved in GNP production when employing expanded graphite (EG) in a surfactant-assisted liquid phase exfoliation process. Owing to its increased interlayer distance, the exfoliation of EG can be accomplished in a much shorter time (<30 min) compared to GF (approximately 7 h in the present case). Moreover, the energy required for the EG exfoliation is close to 80-fold lower than that for GF exfoliation. Monitoring of the mean lateral dimension, specific surface area, and graphite flake-to-GNP transition during exfoliation was performed experimentally using several analytical techniques. The EG-derived GNPs are produced much faster and require less energy for exfoliation compared to GF, thus making it a more efficient alternative technique. 相似文献
