This work aimed to evaluate quality parameters of ‘Tommy Atkins’ mango slices pre-treated with citric acid and cassava starch or sodium alginate edible coatings, with or without glycerol. Samples only treated with citric acid were also evaluated. Mango slices dipped in sanitising solution were used as control. Colour parameters, mechanical properties, weight loss and respiration rate were analysed during 15 days at 5 °C. Cassava starch coating, with or without glycerol, provided higher stress at failure and lightness values than control sample throughout storage (p ≤ 0.05). The citric acid promoted colour preservation, but increased significantly samples weight loss during storage. Sodium alginate coatings did not maintain quality characteristics, showing stress at failure and lightness values lower than control after 15 days. All coatings reduced respiration rate, but citric acid dipping and cassava starch coating without glycerol treatments were more effective, reaching values around 41% lower, when compared to control sample.
Industrial Relevance
Fresh-cut mangoes are appreciated world-wide for its exotic flavour and nutritional composition. However, their shelf life is limited by changes in colour, texture, appearance and microbial growth. The edible coatings act as gas and water vapour barrier, extending the storage time of fresh-cut fruit and vegetables. Thus, cassava starch and alginate are alternatives to preserve minimally processed mangoes, maintaining the quality parameters of fresh fruit. This work is useful for the minimal processing industry in order to increase shelf life of fresh-cut mangoes, which can be considered an alternative to fast food and other ready-to-eat products, attending the demand for healthy and convenient foodstuffs. 相似文献882.

This study forms part of an effort to eliminate the need for fumigation with methyl bromide to control insect infestations in stored cocoa beans, through development of novel alternative vacuum-hermetic technology. In this communication, the effects of low pressures and exposure time were studied on the mortality of insects at a temperature of 18°C, chosen to simulate cocoa bean storage conditions in temperate climates.Three insect species were used, two of which are major pests of cocoa beans in producer countries, Ephestia cautella (Walker), and Tribolium castaneum (Herbst), while the third, Oryzaephilus surinamensis (L.), is a potential storage pest in temperate climates. For T. castaneum and E. cautella the egg stage was the most resistant to 55±10 mm Hg at 18°C, the times needed to obtain 99% egg mortality were 96 and 149 h, respectively. For O. surinamensis, the adult stage was the most resistant with 164 h being required to obtain 99% mortality. 相似文献

Polycyclic aromatic hydrocarbons (PAHs) are toxic compounds that are ubiquitous in the atmospheric environment. The input for an emissions processing system that was originally configured forthe study of criteria air pollutants was updated to calculate emissions of six semivolatile PAHs. The goal of the work was to produce emissions estimates with the spatial and temporal resolution needed to serve as input to a regional air quality model for southern Canada and the U.S. Such modeling is helpful in determining reductions in PAH emissions that may be necessary to protect human and ecosystem health. The total annual emission of the six PAHs (sigma6PAH) for both countries was estimated at 18 273 Mg/year. A total of 90% of these emissions arise from U.S. sources. The top six source types account for 73% of emissions and are related to metal production, open burning, incineration, and forest fires. The emission factors used in this study were derived from published compilations. Although this approach has the advantage of quality control during the compilation process, some compilations include factors from older studies that may overestimate emissions since they do not account for recent improvements in emission control technology. When compared to estimates published in the National Emissions Inventory (NEI) for 2002, the U.S. emissions in this study are higher by a factor of 4 (16 424 vs 4102 Mg/year). The cause of this difference has been investigated, and much of it is likely due to our use of data unavailable in the 2002 NEI but inferred here on the basis of the PAH emissions literature. Augmenting the 2002 NEI with this additional information would bring its reported annual emissions to 8213 Mg/year, which is within a factor of 2 of the estimates herein. Fruits of Myrcianthes pungens Berg. Legr. (Myrtaceae), known as guabiju, are widely consumed fresh as well as dried, processed into jam, marmalade, and juices. In this study, chemical composition and antichemotactic and antioxidant activities of fruits from a wild type (GB) and 2 genotypes, PL2 and PL1, of guabiju were investigated. Total anthocyanins for the genotypes ranged from 334 to 531 mg/100 g dry weight (dwt). Total flavonoids and polyphenols ranged from 79.8 to 154 mg/100 g and 2438 to 4613 mg/100 g (dwt), respectively. A reversed phase liquid chromatography method with photodiode array detection was used to determine chemical profiles of the main anthocyanins found in the extracts. An HPLC method for the quantification of flavonoids is proposed, providing a simple procedure with rapid sample preparation. All samples contained 5 identical anthocyanidins, distributed differently, with cyanidin as the main compound. Identified flavonoids were quercitrin, hyperoside, and isoquercitrin; their relative amounts varied among the extracts. The antioxidant activity of guabiju methanolic extract was comparable to that of Trolox, and at a test concentration of 0.25 mg/mL, GB and PL2 activities were higher than those exhibited by Trolox. Total dry extracts of guabiju exhibited greater inhibition of chemotaxis at a concentration of 4 μg/mL, except for GBH (wild-type hydrolyzed extract) which already presented high values at a concentration of 2 μg/mL. These results suggest that the consumption of this fruit, rich in polyphenols, may be beneficial to human health. Practical Application: The paper is the first attempt on the improvement of this native fruit, since it is widely consumed regularly as part of the South American diet. The content of phenolic compounds demonstrates that consumption of guabiju would be beneficial to human health. Differences among samples, originating from open pollination of plants growing on the same site, lead to the conclusion that improvements can be made in the chemical composition and beneficial activity of guabiju fruits by simply selecting genotypes for these characteristics among open-pollinated seedlings. 相似文献

There is extensive literature documenting the bioaccumulation of persistent organic pollutants in the marine environment, but relatively little data are available on contamination pathways in aquaculture systems such as that for farmed salmon. In recent years,the salmon industry has grown significantly in Europe. This study reports on the determination of a wide range of polychlorinated biphenyls (PCBs), organochlorine pesticides, and polybrominated diphenyl ethers (PBDEs) in farmed and wild European Atlantic salmon fish, aquaculture feeds, and fish oils used to supplement the feeds. The study confirms previous reports of relatively high concentrations of PCBs and indicates moderate concentrations of organochlorine pesticides and PBDEs in farmed Scottish and European salmon. Concentrations of the selected persistent organic pollutants varied among the samples: PCBs (salmon, 145-460 ng/g lipid; salmon feeds, 76-1153 ng/g lipid; fish oils, 9-253 ng/g lipid), S DDTs (salmon, 5-250 ng/g lipid; salmon feeds, 34-52 ng/g lipid; fish oils, 11-218 ng/g lipid), and PBDEs (salmon, 1-85 ng/g lipid: salmon feeds, 8-24 ng/g lipid; fish oils, ND-13 ng/g lipid). Comparison of the samples for all groups of contaminants, except for HCHs, showed an increase in concentration in the order fish oil < feed < salmon. Homologue profiles were similar, with an increase in contribution of hepta- and octa-PCBs in the fish, and profiles of DDTs were similar in all three types of samples. With a constant contribution to the total PCB content, the ICES 7 PCBs appear to be reliable predictors of the PCB contamination profile through all the samples. For PBDEs, BDE 47 dominated the profiles, with no significant difference in the PBDE profiles for the three matrixes. Samples with higher PCB contents generally showed higher levels of the pesticide residues, but this was not the case with the PBDEs, indicating the existence of different pollution sources. 相似文献

Two different sources of omega‐3 fatty acids (fish oil concentrate and menhaden oil) with or without the addition of natural antioxidants (rosemary and green tea) were incorporated into surimi gels at equivalent levels and examined for changes in sensory and physical properties and resistance to oxidation during 9 months of frozen storage. Gels with menhaden oil showed higher acceptance than gels with fish oil concentrate, which displayed a fishy taste that was partially masked by natural antioxidants. Formation of volatile compounds was similar in all samples. Upon heating to form the gel, there was a ca 20–25% decrease in the relative polyene index of the control containing no rosemary or green tea extract. Formulations with menhaden oil containing green tea and rosemary were more stable immediately after cooking; however, a slight pro‐oxidant effect occurred during storage. Omega‐3 fortified gels were whiter than gels with no added oil. Rosemary and green tea extracts increased yellowness (b*) and redness (a*), respectively. Indoor air concentrations of polybrominated diphenyl ethers (PBDEs) and polychlorinated biphenyls (PCBs) measured in 20 locations in Toronto ranged 0.008-16 ng·m(-3) (median 0.071 ng·m(-3)) and 0.8-130.5 ng·m(-3) (median 8.5 ng·m(-3)), respectively. PBDE and PCB air concentrations in homes tended to be lower than that in offices. Principal component analysis of congener profiles suggested that electrical equipment was the main source of PBDEs in locations with higher concentrations, whereas PUF furniture and carpets were likely sources to locations with lower concentrations. PCB profiles in indoor air were similar to Aroclors 1248, 1232, and 1242 and some exterior building sealant profiles. Individual PBDE and PCB congener concentrations in air were positively correlated with colocated dust concentrations, but total PBDE and total PCB concentrations in these two media were not correlated. Equilibrium partitioning between air and dust was further examined using log-transformed dust/air concentration ratios for which lower brominated PBDEs and all PCBs were correlated with K(OA). This was not the case for higher brominated BDEs for which the measured ratios fell below those based on K(OA) suggesting the air-dust partitioning process could be kinetically limited. Total emissions of PBDEs and PCBs to one intensively studied office were estimated at 87-550 ng·h(-1) and 280-5870 ng·h(-1), respectively, using the Multimedia Indoor Model of Zhang et al. Depending on the air exchange rate, up to 90% of total losses from the office could be to outdoors by means of ventilation. These results support the hypotheses that dominant sources of PBDEs differ according to location and that indoor concentrations and hence emissions contribute to outdoor concentrations due to higher indoor than outdoor concentrations along with estimates of losses via ventilation. 相似文献

The oenological quality of Spanish oak wood from Navarra (Quercus petraea Liebl.) in relation to French wood of recognised quality in cooperage has been evaluated. We have studied the effects of the Spanish wood on wine evolution during ageing, in regards to chromatic characteristics, polyphenols, and volatile compounds related to oak wood, in three different mono-varietal wines (cv. Tempranillo, cv. Cabernet Sauvignon and cv. Merlot) from the Origin Denomination Navarra. Polybrominated diphenyl ether (PBDE) body burdens in North America are 20 times that of Europeans and some "high accumulation" individuals have burdens up to 1-2 orders of magnitude higher than median values, the reasons for which are not known. We estimated emissions and fate of sigma PBDEs (minus BDE-209) in a 470 km2 area of Toronto, Canada, using the Multi-media Urban Model (MUM-Fate). Using a combination of measured and modeled concentrations for indoor and outdoor air, soil, and dust plus measured concentrations in food, we estimated exposure to sigma PBDEs via soil, dust, and dietary ingestion and indoor and outdoor inhalation pathways. Fate calculations indicate that 57-85% of PBDE emissions to the outdoor environment originate from within Toronto and that the dominant removal process is advection by air to downwind locations. Inadvertent ingestion of house dust is the largest contributor to exposure of toddlers through to adults and is thus the main exposure pathway for all life stages other than the infant, including the nursing mother, who transfers PBDEs to her infant via human milk. The next major exposure pathway is dietary ingestion of animal and dairy products. Infant consumption of human milk is the largest contributor to lifetime exposure. Inadvertent ingestion of dust is the main exposure pathway for a scenario of occupational exposure in a computer recycling facility and a fish eater. Ingestion of dust can lead to almost 100-fold higher exposure than "average" for a toddler with a high dust intake rate living in a home in which PBDE concentrations are elevated. 相似文献
