The influence of ultrasound power (1000–3000 W/L), citric acid concentration (0–3%) and solid:liquid ratio (1:5–1:15) on the phenolic compounds recovery and antioxidant capacity of Syrah grape skin extracts were evaluated. Total phenolic compounds varied from 6485 to 11732 mg gallic acid/100 g and monomeric anthocyanin content from 453 to 685 mg malvidin-3-glucoside/100 g. The antioxidant capacity measured by ORAC and ABTS methods ranged from 230 to 516 μmol Trolox/g and from 442 to 939 μmol Trolox/g, respectively. The most suitable conditions chosen for extraction, within the studied ranges, were 3000 W/L of power, 2.5% citric acid and solid:liquid ratio of 1:15. The extraction yield was satisfactory, with a recovery of 59% of the quantified phenolic compounds, with only 3 min of processing. Ultrasound was considered a suitable method as compared to the conventional extraction, improving the extraction of phenolic acids and facilitating their release. 相似文献

The heart of palm is a food extracted from several species of palm trees. Only 10–20% of the raw material is transformed into canned hearts of palm, therefore this agro‐industry generates a large quantity of solid residue. The aim of this work was to extract and characterise a juice produced from this solid residue. This extract is compared with the traditional fruit juices (orange and pineapple juices), obtaining higher contents of minerals, such as magnesium (22.80 mg/100 g) and potassium (276.90 mg/100 g), phenolic compounds (gallic, 3,4‐dihydroxybenzoic, chlorogenic, syringic and caffeic acids) and high free radical scavenging capacity (expressed as 2,2‐diphenyl‐1‐picrylhydrazyl), which suggest high antioxidant activity. Additionally, a new soft drink was formulated using this king palm juice as its main ingredient. The soft drink samples formulated with this juice had high sensory acceptability and high intention of consumption, which suggests an important and low‐cost application for this industrial residue. 相似文献

This study demonstrates new possibilities in using freeze‐dried buckwheat sourdoughs in the processing of gluten‐free bread (GFB). Fresh and freeze‐dried (at temperatures of 20, 40 and 60 °C) sourdoughs were added in the amounts of 10, 20, 30 and 40% of the total flour content. Significant and beneficial changes in the quality of bread under the influence of different quantities of fresh and freeze‐dried sourdoughs additive were observed. Freeze‐dried buckwheat sourdoughs at the level of 20 and 30% gave the best baking results for GFB. pH of bread significantly changed, which had a positive effect on increasing its suitability for the storage. Buckwheat sourdough dried at 40 °C is the most highly recommended for GFB processing. Higher temperatures (60 °C) caused the least change in bread volume; however, a bitter aftertaste from burning was slightly detectable. Adsorption of Cu, Cd, and Ni on goethite in the presence of natural groundwater ligands 总被引:1,自引:0,他引:1
The adsorption of copper, cadmium, and nickel on goethite was examined in natural groundwater samples from an infiltration site of the river Glatt at Glattfelden (Switzerland). Unfractionated dissolved organic matter was used at its natural concentrations. Metal concentrations were close to environmental conditions. Cu, Cd, and Ni presented the typical pH adsorption edge of cations. The major influence on metal adsorption was due to a strong organic ligand L(I), which inhibited adsorption of Cu, Cd, and Ni in the alkaline pH region. Complexation of Cu, Cd, and Ni by the natural organic ligands was described with a model defining a minimum number of discrete ligands: a strong ligand L(I) at low concentration and additional weaker ligands with higher concentrations. The adsorption of Cu, Cd, and Ni on the goethite surface in the presence of the natural organic ligands was adequately described by considering only surface complexation and complexation in solution by organic ligands. No ternary complexes had to be invoked in the model. The major effect was complexation by the strongest ligand, whereas interactions with other cations and anions had only a minor influence. Lysozyme (N-acetyl-muramyl-hydrolase E.C. 3.2.1.17) is a low-molecular enzyme (14,400 Da) found in body secretions, systemic fluids and tissues of humans and animals. Antibacterial activity of lysozyme monomer is limited first of all to Gram-positive bacteria, which is connected with the structure of the cell wall. This enzyme catalyzes hydrolysis of β-glycoside bonds (1–4), releasing N-acetylglucosamine and N-acetylmuramic acid. The spectrum of antibacterial activity of lysozyme may be extended thanks to modifications of the enzyme. The aim of the study was to assess antibacterial activity, hydrolytic activity and surface hydrophobicity of different forms of lysozyme. Chemical and thermo-chemical modification of lysozyme was performed, and the antibacterial action of lysozyme monomer and modified preparations were compared. It was found that in comparison with monomer and the control, all modified preparations exhibit effective action against Gram (−) bacteria Pseudomonas fluorescens. A particularly effective action was found in case of lysozyme subjected to thermo-chemical modification, which was characterized by the highest proportion of oligomeric forms and the highest hydrophobicity. 相似文献

Corynebacterium bovis is a mastitis-causing microorganism responsible for economic losses related to decrease in milk production. The aim of the study was identify Corynebacterium spp. strains recovered from milk samples of subclinical mastitis by using matrix-assisted laser desorption/ionization mass spectrometry (MALDI-MS). Samples were collected during a 10-mo mastitis-monitoring program in a high-production dairy farm. In this study, 80 strains were analyzed; from these 54 (67.5%) were identified at species level as Corynebacterium bovis, 24 (31.2%) isolates were identified at the genus level as Corynebacterium spp., and only 1 (1.35%) isolated had unreliable identification. Results demonstrated that MALDI-MS could be an important technique for the identification of Corynebacterium spp. in milk. 相似文献

Current studies about lipase production involve the use of agro-industrial residues and newly isolated microorganisms aimed at increasing economic attractiveness of the process. Based on these aspects, the main objective of this work is to perform the partial characterization of enzymatic extracts produced by a newly isolated Penicillium crustosum in solid-state fermentation. Lipase extract presented optimal temperature and pH of 37?°C and 9?C10, respectively. The concentrated enzymatic extract showed more stability at 25?°C and pH?7. The enzymes kept 100% of their enzymatic activity until 60?days of storage at 4 and ?10?°C. The stability under calcium salts indicated that the hydrolytic activity presented decay with the increase of calcium concentration. The specificity under several substrates indicated good enzyme activities in triglycerides from C4 to C18. 相似文献

Seven target polychlorinated biphenyls (PCBs; IUPAC nos. 28, 52, 101, 118, 138, 153, and 180) and the organochlorine pesticides (OCPs) hexachlorobenzene (HCB) and dichlorodiphenyltrichloroethane (DDT) and its related metabolites (p,p'-DDT, p,p'-DDE, and p,p'-DDD) were quantified in edible tissues from seven marine species (European hake, red mullet, blue whiting, Atlantic mackerel, blue and red shrimp, European flying squid, and Mediterranean mussel) from the Gulf of Naples in the southern Tyrrhenian Sea (Italy). PCBs 118, 138, and 153 were the dominant congeners in all the species examined. The concentrations of all PCBs (from not detectable to 15,427 ng g(-1) fat weight) exceeded those of all the DDTs (from not detectable to 1,769 ng g(-1) fat weight) and HCB (not detectable to 150.60 ng g(-1) fat weight) in the samples analyzed. The OCP concentrations were below the maximum residue limits established for fish and aquatic products by the Decreto Ministerale 13 May 2005 in all the samples analyzed; therefore the OCPs in the southern Tyrrhenian Sea species are unlikely to be a significant health hazard. Conversely, the mean concentrations of PCBs exceeded (greatly in some cases) the current limits (200 ng(-1) fat weight) set by the European Union for terrestrial foods. Although the manufacture and use of PCBs are banned or highly restricted, these compounds still are important persistent chemical contaminants in the Gulf of Naples. 相似文献
