The aim of this study was to assess the food hygiene knowledge of professional food handlers from an institutional catering company which manufactures and distributes meals to the canteens of schools, kindergartens and nursing homes in Portugal. A total of 101 food handlers from 18 geographically distributed business units were assessed. Data collection employed a previously used, multiple-choice questionnaire, aimed at exploring the food safety knowledge and practices of individual respondents. The average score of questions answered correctly was 13 out of 23 (56.5%) with a standard deviation (SD) of 3.22. However, the percentage of correct answers varies with the issues questioned, being significantly lower on issues such as temperature control (p < 0.001) and sources of contamination/high-risk foods (p < 0.001). The level of knowledge was influenced by the level of formal education (p = 0.025) of respondents. The results reinforce the importance of conducting a preliminary assessment of training needs and evaluating the effectiveness of training. 相似文献

Fish and seafood may represent risk for human health since they can accumulate contaminants from aquatic environment and magnify them up the food chain. The purpose of this study was to analyze and evaluate the levels of aluminum, zinc, iron, manganese, cobalt, copper, arsenics, selenium, cadmium, barium, lead and bismuth in 11 fish species (Salmo salar, Sardinella brasiliensis, Pomatomus saltatrix, Micropogonias furnieri, Cynoscion leiarchus, Caranx crysos, Priacanthus arenatus, Mugil cephalus, Genypterus brasiliensis, Lopholatilus villarii and Pseudopercis numida) captured at Rio de Janeiro State Coast, Brazil. Concentration ranges (mg kg−1 of wet weight) of the selected elements were compared with those reported in other studies. In some cases, comparison of certain elements in the same fish species was difficult due to the lack of data. Aluminum concentration was significantly high in all samples and only M. cephalus, C. leiarchus e C. crysos presented arsenic concentrations below 1 mg kg−1, limit recommended by Brazilian legislation. 相似文献

Gas markets are becoming increasingly important around the world and the long-term evolution of these markets is of strategic importance for many countries. This makes it essential to understand how regulation and intervention in these markets affects the long-term prospect for the secure supply of gas. We use Argentina as a case to illustrate some of the issues and consequences of gas regulation. Argentina is a country that has had a significant increase in the use of gas over the years, and where a potential gas deficit looms large in the present and the future. Based on a simulation model developed to understand the supply of gas in Argentina, we discuss how regulation will influence the long-term supply of gas in both Argentina and surrounding countries. Using the model, we develop a series of scenarios to highlight the consequences of different current and possible future interventions in the market by the Regulator. Finally, we discuss short-term regulatory options to reduce the impact of a gas deficit, and the possibility of securing the long-term supply of gas in Argentina. 相似文献

Solar Parabolic Trough Collectors (PTCs) are currently used for the production of electricity and applications with relatively higher temperatures. A heat transfer fluid circulates through a metal tube (receiver) with an external selective surface that absorbs solar radiation reflected from the mirror surfaces of the PTC. In order to reduce the heat losses, the receiver is covered by an envelope and the enclosure is usually kept under vacuum pressure. The heat transfer and optical analysis of the PTC is essential to optimize and understand its performance under different operating conditions. In this paper a detailed one dimensional numerical heat transfer analysis of a PTC is performed. The receiver and envelope were divided into several segments and mass and energy balance were applied in each segment. Improvements either in the heat transfer correlations or radiative heat transfer analysis are presented as well. The partial differential equations were discretized and the nonlinear algebraic equations were solved simultaneously. Finally, to validate the numerical results, the model was compared with experimental data obtained from Sandia National Laboratory (SNL) and other one dimensional heat transfer models. We develop and validate a medium-term solar irradiance forecasting model by adopting predicted meteorological variables from the US National Weather Service’s (NWS) forecasting database as inputs to an Artificial Neural Network (ANN) model. Since the inputs involved are the same as the ones available from a recently validated forecasting model, we include mean bias error (MBE), root mean square error (RMSE), and correlation coefficient (R2) comparisons between the more established forecasting model and the proposed ones. An important component of our study is the development of a set of criteria for selecting relevant inputs. The input variables are selected using a version of the Gamma test combined with a genetic algorithm. The solar geotemporal variables are found to be critically important, while the most relevant meteorological variables include sky cover, probability of precipitation, and maximum and minimum temperatures. Using the relevant input sets identified by the Gamma test, the developed forecasting models improve RMSEs for GHI by 10-15% over the reference model. Prediction intervals based on regression of the squared residuals on the input variables are also derived. 相似文献

Automated monitoring devices (AMD) have become more affordable, and consequently more popular among dairy producers. We hypothesized that the addition of AMD-generated health alerts to a health-screening program improves survival, milk production, and reproductive success. In addition, we hypothesized that cows diagnosed with clinical disease that have AMD alerts are at greater risk of culling, lower milk production, and decreased risk of pregnancy than cows without AMD alerts. Holstein cows (nulliparous = 282, parous = 328) were enrolled at ?60 ± 3 d (d 0 = calving), when they were fitted with an AMD and assigned randomly to 1 of 2 health-screening strategies: (1) control: AMD alerts not provided to farm personnel; and (2) automated device: AMD alerts provided to farm personnel. Twice daily, study personnel determined which cows had AMD alerts (health index ≤79, rumination <200 min/d, or difference between current rumination and the average of the 3 preceding days <0) and provided the information to farm personnel. Farm personnel examined cows at 3, 5, and 9 d in milk (DIM) and when daily milk yield decreased ≥25% on consecutive days. We detected no differences between health-screening strategies regarding morbidity (control = 49.7 ± 3.3%, automated device = 52.8 ± 3.2%), but the interaction between health-screening strategy and parity tended to be associated with the number of clinical diseases per cow (primiparous: control = 0.46 ± 0.06, automated device = 0.65 ± 0.07 cases/cow; multiparous: 0.88 ± 0.08, automated device = 0.86 ± 0.08 cases/cow). Cows enrolled in the automated device strategy were more likely to be treated with supportive therapy (64.4 ± 3.1 vs. 55.0 ± 3.2%), whereas primiparous cows in the automated device strategy were more likely to be treated with anti-inflammatory drugs than those in the control strategy (41.6 ± 4.7 vs. 23.8 ± 4.0%). Health-screening strategy did not affect survival or total milk yield up to 22 wk postpartum, but cows in the automated device strategy had reduced risk of pregnancy after the first 2 services (54.5 ± 3.0 vs. 46.2 ± 3.2%). Cows diagnosed with a clinical disease without AMD alerts had reduced risk of removal from the herd by 150 DIM (5.7 ± 2.0 vs. 19.0 ± 3.3%), greater risk of pregnancy after the first 2 services (49.6 ± 4.5 vs. 33.6 ± 3.9%), and greater milk by 22 wk postpartum (6.7 ± 0.2 vs. 5.3 ± 0.2 × 103 kg) than cows diagnosed with a clinical disease that had an AMD alert. Adding AMD-generated health alerts to the health screening of postpartum cows in a herd with an existing screening program did not improve survival, milk yield, or reproductive success. In addition, AMD alerts in cows diagnosed with a clinical disease may be indicative of the future success of such cows. 相似文献

Polycyclic aromatic hydrocarbons (PAHs) are a family of toxicants that are ubiquitous in the environment. These contaminants generate considerable interest, because some of them are highly carcinogenic in laboratory animals and have been implicated in breast, lung, and colon cancers in humans. Dietary intake of PAHs constitutes a major source of exposure in humans. Factors affecting the accumulation of PAHs in the diet, their absorption following ingestion, and strategies to assess risk from exposure to these hydrocarbons following ingestion have received very little attention. This review, therefore, focuses on concentrations of PAHs in widely consumed dietary ingredients along with gastrointestinal absorption rates in humans. Metabolism and bioavailability of PAHs in animal models and the processes, which influence the disposition of these chemicals, are discussed. Finally, based on intake, disposition, and tumorigenesis data, the exposure risk to PAHs from diet is presented. This paper reports the first study of patulin occurrence in fruit juices and risk assessment related to patulin intake by children, adolescents and adults in Serbia. During 3 consecutive years (2013–2015), 142 fruit (apple or multi-fruit) juices were collected from the market and analysed using HPLC-UV. Patulin was found in 51.4% of juices with 0.7% of the samples in excess of the legal limit of 50 μg kg?1 (mean 4.3 μg kg?1). Apple juices showed significantly higher percentage of contaminated samples (74.0% vs 27.5%), as well as higher mean patulin content (6.4 vs 2.1 μg kg?1) when compared with the multi-fruit ones. Bioaccessibility of patulin in fruit juices was studied using the standardised in vitro digestion method. A mean of 21.6% of the initial patulin amount reached the end of the intestinal phase showing a significant reduction of this toxin during the human digestion process. Risk assessment of patulin intake by Serbian children, adolescents and adults, conducted by deterministic and probabilistic approaches and including the bioaccessibility results, revealed no health concern. Although patulin alone does not represent risk, further research should consider its co-occurrence with other toxic substances in food and potential adverse effects of their mixtures. 相似文献

An edible coating is a useful technology to preserve fruit quality by covering them with a protective layer which improves the appearance and provides a semipermeable barrier for gases and water vapor transfer, allowing extension of their shelf life. In this study, edible coatings based on hydroxypropyl methyl cellulose, k-carrageenan, glycerol, and cellulose nanofibers were formulated. The operational conditions of the spray system were studied to obtain a coating with optimal adhesion on grape (Vitis vinifera L.) surface. Furthermore, the physico-chemical properties of grapes covered with edible coatings were evaluated during refrigerated storage. A full factorial 23 experimental design was applied, where liquid suspension flow (1–5 L h?1), air pressure (50–200 kPa), and height of impact (0.3–0.5 m) were evaluated as independent variables, whereas the percentage of coating and thickness of coating was the response variables. Both mechanical and physico-chemical properties were evaluated during 41 days in both coated and uncoated grapes as shelf life criteria. Throughout the storage time, noticeable changes in pH and total soluble solids were not found in grapes covered with edible coatings and they showed the highest stability for the evaluated mechanical properties. Moreover, coated grapes showed final weight loss and water vapor permeability values of approximately 30 and 34% lower, respectively, than uncoated grapes, suggesting a shelf life extension. 相似文献

In this research, an experimental investigation has been performed to give insight into the potential of biodiesel as an alternative fuel for High Speed Direct Injection (HSDI) diesel engines. The scope of this work has been broadened by comparing the combustion characteristics of diesel and biodiesel fuels in a wide range of engine loads and EGR conditions, including the high EGR rates expected for future diesel engines operating in the low temperature combustion (LTC) regime.The experimental work has been carried out in a single-cylinder engine running alternatively with diesel and biodiesel fuels. Conventional diesel fuel and neat biodiesel have been compared in terms of their combustion performance through a new methodology designed for isolating the actual effects of each fuel on diesel combustion, aside from their intrinsic differences in chemical composition.The analysis of the results has been sequentially divided into two progressive and complementary steps. Initially, the overall combustion performance of each fuel has been critically evaluated based on a set of parameters used as tracers of the combustion quality, such as the combustion duration or the indicated efficiency. With the knowledge obtained from this previous overview, the analysis focuses on the detailed influence of biodiesel on the different diesel combustion stages known ignition delay, premixed combustion and mixing controlled combustion, considering also the impact on CO and UHC pollutant emissions.The results of this research explain why the biodiesel fuel accelerates the diesel combustion process in all engine loads and EGR rates, even in those corresponding with LTC conditions, increasing its possibilities as alternative fuel for future DI diesel engines. 相似文献
