The total phenolics, anthocyanins, flavan 3‐ols, carotenoids and antioxidant capacity of mashua (Tropaeolum tuberosum Ruiz & Pavón) tubers from 10 yellow and purple cultivars were determined at different maturity stages (5–7.5 months after planting) and sunning post‐harvest storage periods (7–35 days). Both the antioxidant capacity (ORAC and ABTS assays) and the content of the bioactive compounds tested varied markedly between cultivars. Purple varieties reached the highest antioxidant capacity during tuber development (271–446 µmol Trolox equiv g?1 DM, ORAC assay). The kinetics of accumulation or disappearance of the bioactive compounds tested during maturation was dependent both on the cultivar and on the compound considered. For anthocyanins, there was a marked increase during maturation in all the purple cultivars. During the sunning post‐harvest storage, the changes in antioxidant capacity (ABTS assay) and content of the bioactive compounds tested also varied between cultivars. A marked decrease in anthocyanins was observed for the anthocyanin‐containing cultivars. In general, the correlation between antioxidant capacity and the content of bioactive compounds varied markedly between cultivars. Antioxidant capacity in purple varieties correlated with total phenolics or flavan 3‐ols while only in some yellow varieties antioxidant capacity correlated with total phenolics. Popularly known by various names such as caninha, dangerous, drips, damned and many other denominations, cachaça is the genuine Brazilian drink, produced by the fermentation of sugarcane juice by yeast, followed by distillation in alambics. Considering that cachaça is the most widely consumed distilled beverage from Brazil, the knowledge of the chemical composition and the presence of potentially toxic compounds such as ethyl carbamate, considered a human carcinogen, is important. The aim of this study was to evaluate the influence of different conditions of the agro‐industrial cachaça production systems, including the variety of sugarcane, on the quantification of ethyl carbamate through the chromatographic. Thirteen unaged beverage samples, produced from different varieties of sugarcane, were analysed. Using analysis of variance and comparison of average concentrations of ethyl carbamate (Scott–Knott, α = 5%), all of the samples were found to contain contaminant levels below the ceiling established by the legislation, which is 210 µg L?1. The influence of vacuum time and solution concentration on mass transfer and mechanical properties of osmodehydrated melon cubes has been studied. Pulsed vacuum osmotic dehydration (PVOD) was carried out at 30 °C for 4 h, using sucrose solutions (40, 50 or 60°Brix) and applying a vacuum pulse (100 mbar for 5, 10 or 15 min). Kinetics of water loss, solid gain and stress at rupture were analysed, as well as effective diffusivities using the hydrodynamic model. The increase in solution concentration favoured water removal, but no significant effect of vacuum time was observed. The use of less concentrated solutions coupled to the action of vacuum pulse resulted in greater solid uptake. Samples subjected to PVOD using 60°Brix sucrose solution presented greater water loss, lower sugar uptake and better maintenance of fresh fruit texture throughout the process. Diffusion coefficients estimated by the hydrodynamic model showed a good fit to the experimental data. 相似文献

The assembly of a stirred tank reactor capable of precise reaction temperature control is described. The unit allows easy on-line determination of the thermal effect and calculation of heat transfer coefficients and heat capacities. Construction elements are standard, low cost, and high quality. Temperature control is achieved by a heating-cooling loop integrated to the reactor jacket and a cascade control procedure. An important feature of the equipment is the integration of the data acquisition system with the supervisory control system that allows the capability of an advanced strategy for process control and data acquisition. The capability of the reaction system is demonstrated for the microemulsion polymerization of vinyl acetate, by the use of batch and isothermal operational modes. The course of the reaction is followed on-line by the temperature variation of the jacket. Procedures are described for the calibration of the unit. The reactor developed is versatile, is easy to configure and extend, is low cost, and can compete advantageously with commercial reactor units such as the Mettler RC1. © 1996 John Wiley & Sons, Inc. 相似文献
