Nachweis von Maillard-Produkten in Malzen, Bieren und Braucouleuren

Zusammenfassung Bei der Maillard-Reaktion reagieren primär reduzierende Zucker mit den freien Aminogruppen der Aminosäuren. Dabei entstehen aus Aldosen als erste stabile Zwischenprodukte die 1-Aminosäure-1-desoxy-ketosen (Amadori-Verbindungen). In Malzen konnten zehn Amadori-Verbindungen quantitativ bestimmt werden. Sie entstehen während des Darrens des Malzes. Aufgrund unterschiedlicher Darrbedingungen unterscheiden sich die Malztypen im Gehalt und im Muster dieser Substanzen. Während der Erhitzungsvorgänge beim Brauprozeß (Maischen, Würzekochung) werden die Amadori-Verbindungen etwa zur Hälfte abgebaut, dagegen sind bei der an schließenden Gärung keine Veränderungen zu beobachten. Aus dem Gehalt und dem Muster der Amadori-Verbindungen im Bier können somit Rückschlüsse auf das verwendete Malz gezogen werden. Bei der Herstellung von Braucouleuren werden Ammoniak bzw. Ammoniumverbindungen als Aminokomponenten eingesetzt. Die Couleure enthalten deshalb keine 1-Aminosäure-l-desoxy-ketosen, dafür aber Desoxyfructosazine, die bei der Reaktion von Zuckern mit Ammoniak entstehen. Diese Pyrazinderivate wurden in Braucouleuren in hohen Mengen (2–6 g/100 g) gefunden. Es wird eine Methode vorgestellt, mit der ein Zusatz von Braucouleuren zum Bier über die Bestimmung der Desoxyfructosazine eindeutig nachgewiesen werden kann.

Detection of Maillard products in malts, beers, and brewing couleurs

During the Maillard reaction, the reducing sugars first react with the free amino groups of the amino acids. With aldoses, 1-amino-l-deoxyketoses (ketose-amino acids, Amadori compounds) are the first stable intermediates to be formed. In malts ten different Amadori compounds could be determined that formed during the kiln-drying of malt. Dependent on the kiln-drying conditions, the different types of malt contain different amounts and proportions of these compounds. During the brewing process (mashing, mash wort cooking) about half of the Amadori compounds are decomposed, whereas during fermentation no changes can be observed. Therefore the amount and composition of Amadori compounds detected in beer may indicate the type of malt used. During the production of brewing couleurs, ammonia or ammonium compounds react with sugars and deoxyfructosazines are formed. In brewing coleurs, relatively high amount of these pyrazine derivatives (2–6 g/100 g) could be found. An analytical method is described for the quantitative determination of deoxyfructosazines, indicating an addition of brewing couleur to beer.

     

Energieinformatik

Due to the increasing importance of producing and consuming energy more sustainably, Energy Informatics (EI) has evolved into a thriving research area within the CS/IS community. The article attempts to characterize this young and highly dynamic field of research by describing current EI research topics and methods and provides an outlook of how the field might evolve in the future. It is shown that two general research questions have received the most attention so far and are likely to dominate the EI research agenda in the coming years: How to leverage information and communication technology (ICT) to (1) improve energy efficiency, and (2) to integrate decentralized renewable energy sources into the power grid. Selected EI streams are reviewed, highlighting how the respective research questions are broken down into specific research projects and how EI researchers have made contributions based on their individual academic background.     

On-line process control of a fluidized bed reactor with non-catalytic gas/solid reaction

In a bench-scale, stainless steel reactor, experiments were carried out to investigate fluidized bed behavior by means of on-line process control. The non-catalytic thermal decomposition of sodium hydrogen carbonate to sodium carbonate, carbon dioxide and water was used a model reaction. The experimental equipment was provided with control systems and reulating units which were connected to a PDP 11/40 computer by means of suitable analogue and digital input/output interfaces. The operating conditions are highly influenced by the chemical reaction as well as by the fluid-dynamical behavior of the reactor. Several experiments were carried out to evaluate the kinetics of the model reaction. The fluid-dynamics was investigated by means of on-line experiments with and without chemical reaction. Based on the experimental results, a model was developed to describe the whole process so that model simulations should yield information on the process itself. With this model, strategies are tested before they are applied to the process computer for on-line process control.

Macklins Substitutionsthese und der Begriff der Menschenwürde in der Bioethik

Definition of the problem

Ruth Macklin’s influential essay “Dignity is a useless concept” has revitalized a broad debate on the question whether the concept of dignity is meaningful in medical ethics. In this paper, I would like to examine Macklin’s so-called redundancy claim: according to this claim, the concept of human dignity can be replaced by other concept(s)—the concept of autonomy most prominent among them. What is the meaning of this claim?

Arguments

Starting from an analysis of Macklin’s arguments, I am going to show under which conditions a redundancy claim indeed leads to the eliminating consequences emphasized by its defenders—we should abandon the concept of dignity.

Conclusion

I am going to identify the advantages of her position both in comparison with more radical eliminative standpoints as well as positions that regard it as valid, but unanalyzable.     

INSIGMA: an intelligent transportation system for urban mobility enhancement

Intelligent Transportation Systems (ITS) aim to improve safety, mobility and environmental performance of road transport. The INSIGMA project provides a fresh look at the possible innovations in this field, by enhancing the functionality and accuracy of ITS in urban environments. This paper describes the architecture, sensors, processing algorithms, output modules and advantages of the developed system. A comparison of existing ITS systems has been provided as background. Special attention has been given to performance and privacy issues, as the system includes social aspects such as location monitoring.     

SOA-enabled compliance management: instrumenting, assessing, and analyzing service-based business processes

Facilitating compliance management, that is, assisting a company’s management in conforming to laws, regulations, standards, contracts, and policies, is a hot but non-trivial task. The service-oriented architecture (SOA) has evolved traditional, manual business practices into modern, service-based IT practices that ease part of the problem: the systematic definition and execution of business processes. This, in turn, facilitates the online monitoring of system behaviors and the enforcement of allowed behaviors—all ingredients that can be used to assist compliance management on the fly during process execution. In this paper, instead of focusing on monitoring and runtime enforcement of rules or constraints, we strive for an alternative approach to compliance management in SOAs that aims at assessing and improving compliance. We propose two ingredients: (i) a model and tool to design compliant service-based processes and to instrument them in order to generate evidence of how they are executed and (ii) a reporting and analysis suite to create awareness of a company’s compliance state and to enable understanding why and where compliance violations have occurred. Together, these ingredients result in an approach that is close to how the real stakeholders—compliance experts and auditors—actually assess the state of compliance in practice and that is less intrusive than enforcing compliance.     

Exploring multi-user interactions with dynamic NFC-displays

Near Field Communication (NFC) is an emerging technology for touch-based mobile interactions with single- and multi-tagged objects. Although the latter may allow for simultaneous and collaborative interactions, most prototypes were not designed for multiple users and were only evaluated with single-user interactions. In this paper, we investigate the design, usability and user experience of multi-user interactions on dynamic NFC-displays. These interactive surfaces use a grid of NFC-tags for the direct manipulation of projected application user interfaces. In two user studies with three prototypes for multi-user interaction, we evaluated the performance of dynamic NFC-displays, interactions among users and the interplay between mobile devices and large displays.
