Our objective was to assess the effects of lactate enhancement in combination with different packaging systems on beef longissimus lumborum and psoas major steak color. Strip loins and tenderloins (n = 16) were assigned to one of four injection treatments (non-injected control, water-injected control, 1.25%, and 2.5% lactate in the finished product). Steaks were individually packaged in either vacuum, high-oxygen (80% O2/20% CO2), or 0.4% CO (30% CO2/69.6% N2) and stored for either 0, 5, or 9 days at 1 °C. The L and a values of both the longissimus and psoas responded similarly to lactate, which at 2.5% darkened steaks (P < 0.05) packaged in all atmospheres and improved (P < 0.05) the redness of steaks packaged in high-oxygen. Packaging steaks in CO did not counteract the darkening effects of lactate. Nevertheless, CO improved (P < 0.05) color stability compared with high-oxygen packaging.  相似文献

Our overall objective was to better understand the effects of added pyruvate on enhanced beef color stability. The 2 possible mechanisms assessed were the role of pyruvate in lipid oxidation and direct interaction between pyruvate and beef myoglobin. Microsomes were incubated with pyruvate at pH 5.6, 25 °C, and lipid oxidation was measured hourly for 3 h. Bovine oxymyoglobin at pH 5.6 was incubated with pyruvate and used to quantify both redox stability (metmyoglobin formation) and pyruvate-myoglobin adduction using mass spectrometry analysis. Surface color and lipid oxidation were measured on ground beef patties stored for 6 d in polyvinyl chloride over-wrap (PVC) or high oxygen. Addition of pyruvate to microsomes decreased lipid oxidation compared with controls (P < 0.05). Conversely, no effect on myoglobin was observed (no changes in redox stability and no peaks corresponding to pyruvate were observed; P > 0.05). However, pyruvate increased color stability and decreased lipid oxidation of ground beef patties packaged in PVC and high oxygen. Pyruvate decreased nitric oxide metmyoglobin-reducing capacity and oxygen consumption of patties compared with controls (P < 0.05). This research suggests that pyruvate may improve beef color stability primarily through its antioxidant effect on lipids. Practical Application: Discoloration of meat often results in significant revenue loss. This study suggests that pyruvate can improve the color stability of patties packaged in high oxygen and PVC primarily through its antioxidant effect on lipids.  相似文献

In this work, Sr and Zn co-doped calcium copper titanate having nominal formula Ca0.90Sr0.10Cu3Ti3.95Zn0.05O12 has been synthesized and systematically studied for structure, dielectric and electrical properties. The phase purity of the prepared composition has been confirmed by X-ray diffraction (XRD) pattern and various structural parameters are presented here with Rietveld refinement data. The Scanning electron microscopy (SEM) image revealed the presence of homogeneous fine-grained microstructure investigated in the prepared ceramic. The impedance data well fitted with 2 R-CPE model confirmed the non-ideality of the system. Dielectric studies have shown the existence of two relaxation processes in low and high frequency domains. Low frequency dielectric response proposed as a combination of Maxwell-Wagner relaxation and intrinsic defect (Vo++) while high frequency behavior has been interpreted in terms of polaronic relaxation caused by hopping process of an electron between Ti3+ and Ti4+ states. The frequency dependent behavior of conductivity has been well fitted to Dong’s model and interpreted in term of Overlapping Large Polaron Tunneling (OLPT) mechanism. The various parameters; relaxation angular frequency (ω1) of Debye process, ionic hopping frequency (ω2), dc conductivity (σo), cole- cole parameter (α) and frequency exponent (s) have been determined by Dong’s Model fitting.  相似文献

Shock recovered samples of a coarse grain (10 μm), high density (>99.9% theoretical) alumina from asymmetric impact tests conducted at 6.5 GPa (e.g. 3.2 times its Hugoniot Elastic Limit) in a single stage gas gun and characterized by X-ray diffractometry, scanning and field emission scanning electron microscopy, and transmission electron microscopy showed prolific presence of reduced crystallite size, higher average microstrain, grain localized micro/nano-scale deformations, micro-cleavages, grain-boundary microcracks, micro-wing crack formation, extensive shear induced deformations and fractures localized at grains, grain boundaries and triple grain junctions, grain localized entanglement of dislocations and their pile up impeded at grain boundaries. A new qualitative model based on micro-shear and micro-twist induced deformation and fracture in single and/or multiple planes in suitably oriented grain and/or grain assembly was developed to explain the experimentally observed damage evolution process.  相似文献

Polymethylmethacrylate (PMMA) microfluidic devices have been fabricated using a hot embossing technique to incorporate micro-pillar features on the bottom wall of the device which when combined with either a plasma treatment or the coating of a diamond-like carbon (DLC) film presents a range of surface modification profiles. Experimental results presented in detail the surface modifications in the form of distinct changes in the static water contact angle across a range from 44.3 to 81.2 when compared to pristine PMMA surfaces. Additionally, capillary flow of water (dyed to aid visualization) through the microfluidic devices was recorded and analyzed to provide comparison data between filling time of a microfluidic chamber and surface modification characteristics, including the effects of surface energy and surface roughness on the microfluidic flow. We have experimentally demonstrated that fluid flow and thus filling time for the microfluidic device was significantly faster for the device with surface modifications that resulted in a lower static contact angle, and also that the incorporation of micro-pillars into a fluidic device increases the filling time when compared to comparative devices.  相似文献

A series of poly(arylene ether)s ( 7a–7f ) were successfully synthesized by aromatic nucleophilic substitution reactions of imidoaryl biphenol (5), 4,9‐bis‐(4‐hydroxy‐phenyl)‐2‐phenyl‐benzo[f]isoindole‐1,3‐dione with six different trifluoromethyl substituted bisfluoro monomers ( 6a–6f ). The weight‐average molar masses of the polymers were up to 280 kD as measured by GPC. These poly(arylene ether)s exhibited glass transition temperatures up to 361°C in DSC. These polymers showed very high thermal stability up to 558°C for 10% weight loss under synthetic air in TGA. Except 7d–7f, remaining polymers 7a–7c were soluble in a wide range of organic solvents. Transparent thin films of these polymers cast from DCM or NMP exhibited tensile strengths up to 75 MPa and elongation at break up to 41% depending on their exact repeating unit structures. These poly(arylene ether)s showed cut‐off wavelength in between 400 and 450 nm except 7d and water absorption were in the range of 0.4 to 0.6%. © 2011 Wiley Periodicals, Inc.
