The aim of this work was to determine modifying effects of lactic fermentation and extrusion processes on functionality of lupin proteins. Protein content, surface hydrophobicity, water absorption capacity (WAC), water solubility index (WSI) and emulsifying properties (EAI, ESI) of protein preparations obtained from lupin seeds (Lupinus luteus, Lupinus albus, Lupinus angustifolius), with various contents of hull, were analyzed. Changes of protein properties were affected by lupin cultivar, hull content and applied processing method. An increase of soluble protein content after controlled lactic fermentation of lupin seeds, and changes of surface protein hydrophobicity, WAC and WSI values after each treatment and significant worsening of protein emulsifying properties were observed. Correlations were found between parameters examined in this study.  相似文献

Determination of Iron Species in Samples of Iron-Fortified Food   总被引:1,自引:0,他引:1  
The paper presents the determination of iron forms in food products. The procedure of sample extraction was developed and optimized, preserving the content of particular forms of iron. The colorimetric method using 2,2′-bipirydyl (measurements at 520 nm) was applied in Fe(II) determinations, while in Fe(III) determinations, the colorimetric method with potassium thiocyanate (measurements at 470 nm) was applied. The total content of iron was determined by the technique of atomic absorption spectrometry, which allowed for the determination of iron content in organic and inorganic complex compounds. Detection limits of 1 mg kg?1 were obtained for all determined iron forms, with the precision ranging between 0.7 % and 1.5 % for 10 mg kg?1 concentration. The optimized analytical procedure was applied in the determinations of iron forms in iron-fortified food products.  相似文献

The study evaluated the effect of grape by‐products (GP) on the chemical composition, soluble (SDF) and insoluble (IDF) dietary fibre, phenolic compounds and antioxidant activity (AA) and organoleptic characteristics of sourdough mixed rye bread. The following samples of sourdough mixed rye bread were prepared: control bread (BC) and breads with GP at four different levels: 4%, 6%, 8% and 10%. Addition of GP significantly improves dietary fraction contents, as bread with a 10% addition of GP accounts for 39% and 37% higher contents of IDF and SDF than BC. The assay of radical‐scavenging activity and reducing ability showed that GP addition greatly enhanced antioxidant properties of mixed rye breads. Profiles of phenolic compounds of supplemented breads were dominated by procyanidin B1 and B2, catechin, epicatechin, caffeic acid and myricetin. With an increase in the level of GP, the hardness and gumminess of the bread significantly increase. Although both BC and supplemented breads showed common volatile compound profiles, there were slight differences in the concentrations of those components. Sensory evaluation of GP‐enhanced breads revealed that a maximum of 6% GP could be incorporated to prepare acceptable products.  相似文献

Two hyperbranched polyglycerols bearing 1,1,1-tris(hydroxymethyl)propane or Bisphenol A core and terminal hydroxyl functionality were examined as components of novel wood adhesive systems. Two 1,3-dimethylol-4,5-dihydroxyethyleneurea resins (DMDHEU) were used as crosslinkers. Shear strength tests revealed that the adhesives containing up to 75 wt% of renewable glycerol-derived polyglycerols retained performance comparable to that of neat DMDHEU. The results give way to extending the area of application of hyperbranched polyglycerols in the field of wood adhesives.  相似文献

While patterning 2D metallic nanostructures are well established through different techniques, 3D printing still constitutes a major bottleneck on the way to device miniaturization. In this work a fluid phase phospholipid ink is used as a building block for structuring with dip-pen nanolithography. Following a bioinspired approach that relies on ink-spreading inhibition, two processes are presented to build 2D and 3D metallic structures. Serum albumin, a widely used protein with an innate capability to bind to lipids, is the key in both processes. Covering the sample surface with it prior to lipid writing, anchors lipids on the substrate, which ultimately allows the creation of highly stable 3D lipid-based scaffolds to build metallic structures.  相似文献

Investigations are presented on the effect of the preliminary ozonation on ultrafiltration (UF) and powdered activated carbon (PAC) /UF process performance, especially on permeate flux decline and the effectiveness of model organics removal. Flat membranes from regenerated cellulose were used. A model solution was prepared as a mixture of humic acids and phenol. PAC dosage was equal to 100 mg/l−1. The ozone dosages were in the range of 1–3 mg O3 l−1 (0.2–0.6 mg O3/mg TOC). It was found that the most advantageous configuration was preliminary ozonation with an ozone dosage of 0.4 mgO3/mg TOC–UF. The permeate flux reached a value equal to the pure water flux value. Moreover, a very high effectiveness of model organics removal was obtained: TOC was reduced by about 96% and UV254 absorbance was removed completely. When PAC was added to the feed containing humic acids without ozonation, a drop in a permeate flux was observed compared to UF. Similarly, the addition of PAC to feed treated with ozone resulted in a significant drop in the permeate flux in comparison with pure water flux, regardless of ozone dosage applied.  相似文献

Anthropogenic activities generate a high quantity of organic pollutants, which have an impact on human health and cause adverse environmental effects. Monitoring of many hazardous contaminations is subject to legal regulations, but some substances such as therapeutic agents, personal care products, hormones, and derivatives of common organic compounds are currently not included in these regulations. Classical methods of removal of organic pollutants involve economically challenging processes. In this regard, remediation with biological agents can be an alternative. For in situ decontamination, the plant-based approach called phytoremediation can be used. However, the main disadvantages of this method are the limited accumulation capacity of plants, sensitivity to the action of high concentrations of hazardous pollutants, and no possibility of using pollutants for growth. To overcome these drawbacks and additionally increase the efficiency of the process, an integrated technology of bacteria-assisted phytoremediation is being used recently. For the system to work, it is necessary to properly select partners, especially endophytes for specific plants, based on the knowledge of their metabolic abilities and plant colonization capacity. The best approach that allows broad recognition of all relationships occurring in a complex community of endophytic bacteria and its variability under the influence of various factors can be obtained using culture-independent techniques. However, for practical application, culture-based techniques have priority.  相似文献
