Chickpea flour (CF)‐based muffin formulations were made with CF alone and with added biopolymers [whey protein (WP), xanthan gum (XG) and inulin (INL)] to evaluate their suitability to be a wheat flour (WF) substitute in muffins. Structural characteristics of the batters and muffins were studied by means of rheometry, microscopy, physicochemical properties, and texture and sensory analysis. Partial replacement of CF with XG, alone (at 0.5 and 1%) or blended with either WP or INL, significantly increased the batter viscoelasticity as denser matrices developed; moreover, the muffins with XG added at 1% had similar hardness to wheat gluten muffins. The replacement of WF decreased the springiness, cohesiveness, chewiness, resilience and specific volume of the muffin. However, baked muffins with added XG also showed higher sensory sponginess and moisture associated with numerous air bubbles in the batter and were perceived to be easier to swallow and to have better general appearance. 相似文献

This work concerns the investigation of porous polybenzoxazines based on the non-toxic renewable diphenolic acid. The approach described relies on the in situ generation of foaming agent (CO2) during the thermal curing. For this purpose, the previously synthesized benzoxazine monomer from diphenolic acid was thermally polymerized at different temperatures. As the beginning of decarboxylation is about 200 °C, we selected five foaming temperatures (Tf) ranging from 190 to 230 °C. The influence of the foaming temperature on the cellular structure and its dependency on final properties is discussed. 相似文献

The combination in metabolomics of advanced analytical methods and bioinformatics tools provides wide chemical compositional data that contributes to corroborate (or not) the substantial equivalence and occurrence of unintended changes resulting from genetic transformation. The low energy (∼50–350 eV) noble gases ion bombardment of the steel surface shows that the pre-treatments increase nitrogen diffusion by modifying the outermost structure of the material. The surface microstructure and morphology of the studied samples were characterized by Scanning Electron Microscopy (SEM) and Atomic Force Microscopy (AFM). The crystalline and chemical structures in the outermost layers of the surface were analyzed by grazing angle X-ray diffraction (GAXRD) and photoemission electron spectroscopy (XPS). Temperature effusion studies of the implanted ions are used to elucidate the noble gases site localization in the network. The local compressive stress induced by the nearby iron atoms on the core level electron wave functions of the trapped noble gases are studied by photoemission electron spectroscopy (XPS) and interpreted considering a simple mechanical model. Nano-hardness measurements show the dependence of the material elastic constant on the energy of the implanted noble gases. Although the ion implantation range is about few nanometers, the atomic attrition effect is larger enough to modify the material structure in the range of micrometers. Two material stress zones were detected where the outermost layers shows compressive stress and the underneath layers shows tensile stress. The implanted noble gases can be easily removed by heating. A diffusion model for polycrystalline-phase systems is used in order to discuss the influence of the atomic attrition on the N diffusion coefficient. The concomitant effect of grain refining, stress, and surface texture on the enhancing nitrogen diffusion effect is discussed. 相似文献

Commercially available graphitized carbon nanofibers and multi-walled carbon nanotubes, two carbon materials with very different structure, have been functionalized in a nitric–sulfuric acid mixture. Further on, the materials have been platinized by a microwave assisted polyol method. The relative degree of graphitization has been estimated by means of Raman spectroscopy and X-ray diffraction while the relative concentration of oxygen containing groups has been estimated by X-ray photoelectron spectroscopy, which resulted in a graphitic character trend: Pt/GNF > Pt/F-GNF ? Pt/MWCNT > Pt/F-MWCNT. Transmission electron microscopy showed that the Pt particle size is around 3 nm for all samples, which was similar to the crystallite size obtained by X-ray diffraction. The activity towards electrochemical reduction of oxygen has been quantified using the thin-film rotating disk electrode, which has shown that all the samples have a better activity than the commercially available electrocatalysts. The trend obtained for the graphitic character maintained for the electrochemical activity, while the reverse trend has been obtained for the accelerated ageing test. Long-term potential cycling has demonstrated that the functionalization improves the stability for multi-walled carbon nanotubes, at the cost of decreased activity. 相似文献

The reaction of mixtures of renewable diphenolic acid (DPA) and its methylesterbenzoxazine derivative (MDP-Bz) has been studied. The DPA was introduced to lower the high temperature needed to complete the curing of the pure benzoxazine. In this way, samples with different DPA/MDP-Bz ratio (0, 2, 5, 10 and 25% of DPA) were investigated. Moreover, high performance flame retardant thermosetting resins with phosphorus were prepared through the mixture of MDP-Bz and a DPA-phosphazene derivative (DPA-PPZ). The curing behavior of these materials was studied by differential scanning calorimetry (DSC). Physical chemical properties of cupuassu fat were modified by dry fractionation. Stearin and olein fractions were obtained at 29, 26, and 24 °C. Polymorphic behavior of unfractionated cupuassu fat (UCF) and its fractions were studied in situ by small-angle (SAXS) and wide-angle (WAXS) X-ray scattering using synchrotron light. Polymorphic transitions were followed in real time tempering samples with a thermal cycle. For UCF, the main polymorphic form crystallized under selected conditions was the β’2. α and β’1-forms appeared in trace amounts. β2-form was obtained after storage at 25 °C for 3 months. Stearins obtained at 26 (S-26) and 24 °C (S-24) showed a similar polymorphic behavior. However, S-26 with improved physical properties might be more suitable for chocolate production or as a trans-fat alternative than UCF. Stearin fraction obtained at 29 °C (S-29) had a complex polymorphic behavior. The α-form was the first polymorphic form detected followed by β’2-form. There was a polymorphic transition from α to β’1-form but no transition between β’-forms. They were independent to each other showing fractionation in two different solid solutions. Increased contents of the triacylglycerols (TAG) SOA and SOB together with lower contents of SOO compared to UCF led to co-crystallization because there was no complete compatibility among all TAG present in S-29. β1-form crystallized after storage forming crystals with a double-layer arrangement and a characteristic morphology. This form could be useful for accelerating crystallization process in melted liquid systems. 相似文献
