The main responsible for the spoilage of cooked cured meat products stored under refrigerated and anaerobic conditions are lactic acid bacteria. The application of high hydrostatic pressure (HHP) reduces the lactic acid bacterial growth extending the product shelf-life and preserving natural taste, texture, color and vitamin content. This work studied the influence of pressure level and holding time on the lactic acid bacterial growth in vacuum-packaged sliced ham. Modified Gompertz and Logistic models were used to fit experimental data obtained from post-treatment microbial counts carried out along the product storage. Samples of sliced vacuum-packaged ham treated by HHP and control samples (non-treated) were stored at 8 °C until the microorganism population reached 107 CFU/g. An experimental planning 22 with triplicate at the central point was designed to determine the influence of pressure level (200, 300, and 400 MPa) and holding time (5, 10, and 15 min) on the product shelf-life. The results have shown that the pressure intensity and the holding time significantly influenced microbial population over the product storage. Shelf-life of ham treated at 400 MPa for 15 min was extended from 19 (control samples) to 85 days.  相似文献

The aim of the present investigation was to contribute to provide a basis for understanding how to control solidification parameters, microstructure and mechanical strength of Al–Fe alloys. Upward directional solidification experiments have been carried-out with commercially pure Al and Al–0.5 wt.% Fe, Al–1.0 wt.% Fe and Al–1.5 wt.% Fe alloys. The tensile tests results have been correlated to cell spacing (λ1), since cellular growth has prevailed along all obtained Al–Fe castings. The used casting assembly was designed in such way that the heat was extracted only through the water-cooled system at the bottom of the casting. In order to investigate the nature of Al–Fe intermetallic fibers, they were extracted from the aluminum-rich matrix by using a dissolution technique. These fibers were then investigated by SEM-EDAX microscopy. It was found that the ultimate tensile strength, yield tensile strength and elongation increase with decreasing cell spacing. The highest ultimate tensile strength was that obtained for the most refined microstructure, i.e. for the Al–1.5 wt.% Fe alloy sample, where a higher density of eutectic fibers was found distributed in a more homogeneous way along the casting section due to lower cell spacings. In contrast, the elongation was found to decrease with increasing solute content.  相似文献

Refrigerator compressors are currently driven mostly by rotary line start or variable-speed (inverter-fed) motors with mechanical transmission. Direct driving of pistons by linear oscillatory resonant PM 1 phase motors has just been introduced to low power (less than 100 W) such applications. The present paper introduces a 3 pole PM mover 1 phase PM linear oscillatory motors, in terms of optimal nonlinear analytical design methodology, with FEM and dynamics validation. Both 50 and 250 Hz (inverter fed) operation for 2000 and 100 W is exemplified for minimum active materials costs and, respectively, minimum global costs (losses capitalized cost is added). For the line start case study (at 2000 W, 50 Hz) a circuit model for transients is introduced and the motor self-starting transients with full power delivery at above 91% efficiency is available. The 50 Hz motors are heavier around (5.7 kg/kW at 2000 W and 7.5 kg/kW at 100 W, respectively) than the 250 Hz motors around (1.2 kg/kW, 3 kg/kW) but the latter require inverter control.  相似文献

In the present article some important trends have been shown regarding the relationship between solidification variables, microstructure, mechanical and corrosion properties of Zn-4 wt%Al alloy castings. The aim of the present work is to investigate the influence of heat transfer solidification variables on the microstructure of Zn-4 wt%Al castings and to develop correlations with mechanical and corrosion properties. Experimental results include transient metal/mould heat transfer coefficient (hi), secondary dendrite arm spacings (λ2), corrosion potential (ECorr), corrosion rate (iCorr), ultimate tensile strength (σu) and yield strength (σy) as a function of solidification conditions imposed by the metal/mould system. It was found that a structural dendritic refinement provides both higher corrosion resistance and better mechanical properties for a hypoeutectic Zn4Al alloy.  相似文献

Broad ranges of cooling rates () 0.8–30.5 and 0.4–5.0 K s?1 are attained during directional solidification of eutectic Sn–0.2 wt% Ni and hypereutectic Sn–0.5 wt% Ni alloys, respectively. A reverse high cooling rate cell‐to‐dendrite transition occurs for the eutectic composition and a transition from high cooling rate cells to plate like cells for the hypereutectic alloy. High cooling rate β‐Sn cells are associated with cooling rates >5.5 and >2.7 K s?1 for eutectic and hypereutectic compositions, respectively. A processing diagram, relating the ‘–Ni content’ space with the microstructural morphology, is proposed. A combination of plate like cells and plate NiSn4 eutectic phase results in higher ductility.

Tool condition monitoring, which is very important in machining, has improved over the past 20 years. Several process variables that are active in the cutting region, such as cutting forces, vibrations, acoustic emission (AE), noise, temperature, and surface finish, are influenced by the state of the cutting tool and the conditions of the material removal process. However, controlling these process variables to ensure adequate responses, particularly on an individual basis, is a highly complex task. The combination of AE and cutting power signals serves to indicate the improved response. In this study, a new parameter based on AE signal energy (frequency range between 100 and 300 kHz) was introduced to improve response. Tool wear in end milling was measured in each step, based on cutting power and AE signals. The wear conditions were then classified as good or bad, the signal parameters were extracted, and the probabilistic neural network was applied. The mean and skewness of cutting power and the root mean square of the power spectral density of AE showed sensitivity and were applied with about 91% accuracy. The combination of cutting power and AE with the signal energy parameter can definitely be applied in a tool wear-monitoring system.  相似文献

Solar observations at sub-THz frequencies detected a new flare spectral component peaking in the THz range, simultaneously with the well known microwaves component, bringing challenging constraints for interpretation. Higher THz frequencies observations are needed to understand the nature of the mechanisms occurring in flares. A THz photometer system was developed to observe outside the terrestrial atmosphere on stratospheric balloons or satellites, or at exceptionally transparent ground stations. The telescope was designed to observe the whole solar disk detecting small relative changes in input temperature caused by flares at localized positions. A Golay cell detector is preceded by low-pass filters to suppress visible and near IR radiation, a band-pass filter, and a chopper. A prototype was assembled to demonstrate the new concept and the system performance. It can detect temperature variations smaller than 1 K for data sampled at a rate of 10/s, smoothed for intervals larger than 4 s. For a 76 mm aperture, this corresponds to small solar burst intensities at THz frequencies. A system with 3 and 7 THz photometers is being built for solar flare observations on board of stratospheric balloon missions.  相似文献
