Fresh foods occupy an important position in the human diet. A growing number of consumers are attracted by fresh foods due to their high nutritional value, healthy image, and appealing taste. Electronic tongue based on the concept of global selectivity is a sensor technology that has developed rapidly since last century (1998). Compared with human panelists, it has the advantages of measuring toxic substances, conducting objective analysis and having no detection fatigue. In this paper, the principle, types, and characteristics of electronic tongue are described. The application of electronic tongue to measure sensory and safety index is discussed. Fresh fruits and vegetables are important parts of the human diet. The consumer demand for fruits and vegetables is increasing due to their rich nutritional value, appealing taste, and healthy perception. However, due to their highly perishable nature, appropriate preservation technologies must be developed to meet the consumer’s demand for healthy, additive-free, microbiologically safe, and high quality fresh fruits and vegetables. The preservation technologies based on modification or control of pressure alters the normal atmospheric pressure of the preservation environment. The materials to be preserved are subjected to either very high or low pressure to extend their shelf life. The mechanism, advantages, and limitations of pressure modification-based preservation methods such as high hydrostatic pressure, hyperbaric treatment, vacuum cooling, hypobaric storage, and vacuum packaging focusing on their applicability to fresh fruits and vegetables have been reviewed. This review suggests that these technologies have potential to extend the shelf life and achieve a better preservation of the quality of fresh fruits and vegetables. 相似文献

The compositional analysis of tocols in oils extracted from Korean caneberry seeds was compared with commercial soybean, corn, olive, canola, perilla, and grape seed oils. The oils from caneberry seeds of six different species were extracted using either a chloroform–methanol–water system or hot hexane. Tocols from all of the oils were analysed using isocratic HPLC. The contents of total tocopherols in the caneberry seed oils were about 75–290 mg/100 g oil, whereas tocotrienols were not detected. γ-Tocopherol was the most abundant tocopherol (31.8–239 mg/100 g oil) in the caneberry seed oils, followed by α-tocopherol (7.6–58.2 mg/100 g oil). The contents of total tocols in soybean, corn, olive, canola, perilla, and grape seed oils were 99.9, 61.1, 28, 27, 45.4, and 52.2 mg/100 g oil, respectively. Total tocol content was higher in most of the caneberry seed oils including the refined ones than in the commercial vegetable oils. 相似文献

Flow of water inside a jig has a strong bearing on the rate of stratification of particles. For this reason, various fluid waveforms are proposed for achieving optimal stratification rate. In the present investigation, the flow of water is analyzed in a carefully controlled laboratory jig. In a very simplified manner, the amplitude and frequency of pulsation is controlled by means of the compensator pressure and a level sensor. This allows for proper analysis of the dynamics of motion of the fluid as function of the amplitude and frequency of pulsation. Furthermore, the effects of amplitude and frequency of pulsation on the stratification behavior of the particles is analyzed to establish the existence of an optimal operating condition in terms of amplitude and frequency of pulsation. 相似文献

Memristors such as phase‐change memory and resistive memory have been proposed to emulate the synaptic activities in neuromorphic systems. However, the low reliability of these types of memories is their biggest challenge for commercialization. Here, a highly reliable memristor array using floating‐gate memory operated by two terminals (source and drain) using van der Waals layered materials is demonstrated. Centimeter‐scale samples (1.5 cm × 1.5 cm) of MoS2 as a channel and graphene as a trap layer grown by chemical vapor deposition (CVD) are used for array fabrication with Al2O3 as the tunneling barrier. With regard to the memory characteristics, 93% of the devices exhibit an on/off ratio of over 103 with an average ratio of 104. The high on/off ratio and reliable endurance in the devices allow stable 6‐level memory applications. The devices also exhibit excellent memory durability over 8000 cycles with a negligible shift in the threshold voltage and on‐current, which is a significant improvement over other types of memristors. In addition, the devices can be strained up to 1% by fabricating on a flexible substrate. This demonstration opens a practical route for next‐generation electronics with CVD‐grown van der Waals layered materials. 相似文献

Since a high intake of trans fatty acids (TFA) has been associated with the increased risk of developing cardiovascular disease, food regulation worldwide has been amended with respect to nutrition labeling and health claims on TFA. In the present study, the TFA levels of Korean food products were investigated to assess the regulation effect of TFA labeling. Same Korean food products within 7 different categories were purchased in years 2005 and 2008, and the contents of TFA and lipid and fatty acid composition were investigated. Lipid and TFA contents decreased in all food products manufactured in 2008. TFA levels were 0.01 to 6.88 g/100 g food in 2005, but the levels remarkably decreased to nondetectable level or up to 0.5 g TFA/100 g food in 2008. The foods from 2005 contained a various level of TFA ranging 0.6% to 44.6% of total fatty acids; however, the TFA level significantly decreased in most foods up to 3.8% from year 2008. For TFAs, trans C18:1 levels were greater than trans isomers of C18:2, and the levels in 2005 were significantly reduced in 2008 (P < 0.05). TFA levels at the sn-2 position were up to 48.3% of total fatty acids in 2005, but the level considerably decreased up to 5.4% in 2008. The considerably decreased content of TFA in 2008 suggested that food manufacturers recognized the adverse effect of TFA on human health and followed the compulsory trans fat labeling rule by Korean Food and Drug Administration (KFDA), which started December 2007. 相似文献

Highly efficient and stable electrocatalysts, particularly those that are capable of multifunctionality in the same electrolyte, are in high demand for the hydrogen evolution reaction (HER), oxygen evolution reaction (OER), and oxygen reduction reaction (ORR). In this work, highly monodisperse CoP and Co2P nanocrystals (NCs) are synthesized using a robust solution‐phase method. The highly exposed (211) crystal plane and abundant surface phosphide atoms make the CoP NCs efficient catalysts toward ORR and HER, while metal‐rich Co2P NCs show higher OER performance owing to easier formation of plentiful Co2P@COOH heterojunctions. Density functional theory calculation results indicate that the desorption of OH* from cobalt sites is the rate‐limiting step for both CoP and Co2P in ORR and that the high content of phosphide can lower the reaction barrier. A water electrolyzer constructed with a CoP NC cathode and a Co2P NC anode can achieve a current density of 10 mA cm?2 at 1.56 V, comparable even to the noble metal‐based Pt/C and RuO2/C pair. Furthermore, the CoP NCs are employed as an air cathode in a primary zinc–air battery, exhibiting a high power density of 62 mW cm?2 and good stability. 相似文献

3‐Monochloropropanediol (3‐MCPD) esters are contaminants produced from the high‐temperature processing of edible oils. The accurate measurement of 3‐MCPD using an easy‐to‐follow and reliable method that uses a readily available instrument is important. Here, we report an acid transesterification heptafluorobutyrylimidazole (HFBI) derivatisation method for the accurate measurement of 3‐MCPD esters in edible oils. We developed a dispersed matrix solid‐phase supported liquid–liquid extraction (DMSP‐SLE) system to remove impurities. Both the transesterification and DMSP‐SLE conditions were optimised. A good linear relationship was obtained within the range of 0.05–10 mg kg?1 (R2 ≥ 0.999) in both blank solvent and an oil sample. The limit of detection was 20.36 μg kg?1. The average recovery of the 3‐MCPD esters spiked at 0.5, 1.0 and 2.0 mg kg?1 into a blank oil matrix was in a range from 105.09 ± 2.77% to 120.16 ± 10.88%. The method we developed was further confirmed by performing detection on a Food Analysis Performance Assessment Scheme (FAPAS) sample. 相似文献

We demonstrate the possibility of controlling the success probability of a secret sharing protocol using a quantum cloning circuit. The cloning circuit is used to clone the qubits containing the encoded information and en route to the intended recipients. The success probability of the protocol depends on the cloning parameters used to clone the qubits. We also establish a relation between the concurrence of initially prepared state, entanglement of the mixed state received by the receivers after cloning scheme and the cloning parameters of cloning machine. 相似文献
