This study evaluated several physical and sensory parameters of different types of cheese available in the Polish market. The measurements of textural properties were conducted in an Instron universal testing machine, while the colour properties of cheeses were measured using a Minolta chromameter. The chemical composition was determined by means of the near‐infrared spectroscopy (NIRs). Moreover, a trained sensory panel was invited to assess the cheese texture‐related properties. Generally, cheeses with reduced fat content were characterised by higher hardness, adhesiveness, cohesiveness and elasticity. Texture‐related parameters of cheese with canola oil were comparable to that of most of full‐fat cheeses. The correlation analysis between physical and sensory attributes related to cheese textural properties indicated the potential applications of TPA, shear and penetration tests (r = 0.766, r = 0.75 and r = 0.765, respectively) for the evaluation of sensory properties related to the hardness. Meanwhile, the elasticity of cheese obtained from sensory evaluation was strongly correlated with the elasticity determined from the shear test (r = 0.722) and moderately correlated with the elasticity from penetration test (r = 0.588), indicating a need to refine the method of penetration test. In addition, cheeses exhibited higher meltability during convection heating at 230 °C than microwave heating. Rapid and sensitive point-of-care testing (POCT) is an extremely critical mission in practical applications, especially for rigorous military medicine, home health care, and in the third world. Here, we report a visual POCT method for adenosine triphosphate (ATP) detection based on Taylor rising in the corner of quadratic geometries between two rod surfaces. We discuss the principle of Taylor rising, demonstrating that it is significantly influenced by contact angle, surface tension, and density of the sample, which are controlled by ATP-dependent rolling circle amplification (RCA). In the presence of ATP, RCA reaction effectively suppresses Taylor-rising behavior, due to the increased contact angle, density, and decreased surface tension. Without addition of ATP, untriggered RCA reaction is favorable for Taylor rising, resulting in a significant height. With this proposed method, visual sensitive detection of ATP without the aid of other instruments is realized with only a 5 μL droplet, which has good selectivity and a low detection limit (17 nM). Rock joints infilled with sediments can strongly influence the strength of rock mass. As infilled joints often exist under unsaturated condition, this study investigated the influence of matric suction of infill on the overall joint shear strength. A novel technique that allows direct measurement of matric suction of infill using high capacity tensiometers (HCTs) during direct shear of infilled joints under constant normal stiffness (CNS) is described. The CNS apparatus was modified to accommodate the HCT and the procedure is explained in detail. Joint specimens were simulated by gypsum plaster using three-dimensional (3D) printed surface moulds, and filled with kaolin and sand mixture prepared at different water contents. Shear behaviours of both planar infilled joints and rough joints having joint roughness coefficients (JRCs) of 8–10 and 18–20 with the ratios of infill thickness to asperity height (t/a) equal to 0.5 were investigated. Matric suction shows predominantly unimodal behaviour during shearing of both planar and rough joints, which is closely associated with the variation of unloading rate and volumetric changes of the infill material. As expected, two-peak behaviour was observed for the rough joints and both peaks increased with the increase of infill matric suction. The results suggest that the contribution of matric suction of infill on the joint peak normalised shear stress is relatively independent of the joint roughness. 相似文献

Research funding has been seen as one of the most important resource in the reward system of science. And usage of publications denotes an interesting perspective of user behavior in scientific communication. This study aims to address the relationship between funding and Usage Count, which is a new metrics item established on the platform of Web of Science. Full records of 300,010 articles published in 2013 were downloaded in October 2015, and divided into six disciplines, including information science library science, education educational research, economics, computer science, materials science, and chemistry. Seven indicators were proposed to measure the impact, including Funding rate, Citation per paper, Usage rate, Usage per paper, Citation difference, Usage difference, and Conversion rate. It concluded funding has impact on usage and citation, and funded papers attract more usage, but varying in different disciplines. Usage Count can be used in the extension of citation metrics but with limits. This study originally engages with usage metrics and detected that there is positive correlation between usage and funding. 相似文献

This study assessed the collection efficiency (CE) of two popularly used sampling devices (BioSampler and Coriolis sampler) for fungal aerosols. Phosphate‐buffered saline (PBS) supplemented with or without surfactant (Tween‐20, Tween‐80, or Triton X‐100) and antifoam agent was prepared and used as collection liquids. The agar impactor (BioStage) was simultaneously operated with liquid‐based samplers to collect fungi from seven sites located at a university building, public library, and animal farming. Fungal concentrations determined by liquid samplers were divided by those by BioStage, and the ratio values represented CE. Results indicate that the CE of BioSampler was superior to that of Coriolis (P = 0.0001) and the PBS containing surfactant collected fungi better than that without surfactant (P < 0.0001), whereas antifoam agent showed no influence (P = 0.8). Moreover, fungal concentrations determined by BioSampler with surfactant‐added PBS were statistically indifferent from those by BioStage (P > 0.05) with a Spearman correlation coefficient of 0.81‐0.83 (P < 0.01). In addition to sampler and collection liquid, sampling location was also identified as a significant CE factor (P = 0.006), implying potential influences by fungal genera in the studied fields. Overall, BioSampler with surfactant‐supplemented PBS (eg, Triton X‐100) is recommended considering the great CE and compatibility with a variety of analytical assays. 相似文献

Theabrownins (TB) are polymeric phenolic compounds associated with the multiple bioactivities of Pu-erh tea, a post-fermented Chinese dark tea. High-TB instant Pu-erh tea was produced via a novel submerged fermentation (SF) using Aspergillus tubingensis and compared with samples produced commercially via the conventional solid-state fermentation (SSF). Viable microorganisms and microbial toxins, especially aflatoxins B1, G1, B2, G2, cyclopiazonic acid, fumonisins B1, B2, B3 and ochratoxin A, were below the detection limit in all samples. Fewer microbial metabolites were found in SF instant tea compared with the SSF teas. Based on an adult consuming 1 g of instant Pu-erh tea daily, the dietary intake of investigated elements was below the safe limits recommended by various authorities. Tasters viewed the instant tea infusions as very mild, smooth, mellow and full. This suggested that submerged fermentation using A. tubingensis offers a speedy and safe alternative to commercial production of instant Pu-erh tea. 相似文献
