This research aimed at determining the influence of different factors (i.e. ingredients and process conditions) on the most important characteristics defining consumers' appreciation of 'Amaretti' cookies using DOE (design of experiment) technique. A different recipe than the original one was used in the manufacturing of the cookies, where saccharose was partially replaced with fructose and bamboo fibre was added as a new ingredient. Besides fructose/saccharose ratio and fibre, the effect of egg white, baking time and baking temperature on quality responses (hardness, water activity, moisture content and colour) of 'Amaretti' was measured by using a fractional factorial design in a screening test. Responses were affected mostly by changes in temperature and fructose/saccharose ratio levels and then by baking time; bamboo fibre had a statistically significant influence only on hardness. The power of fit of the regression models was significant for all four responses and had R 2 value in the range of 0.886–0.997. However, the power of prediction was significant only for hardness, moisture content and colour and had Q 2 value in the range of 0.584–0.965. The mathematical model for water activity resulted inappropriate to explain the link between factors and response. The achieved results can represent a useful tool to address and facilitate the next phase of optimisation.  相似文献

Summary Principal component analysis has been applied to analyze the correlation matrix obtained from a 8 × 43 data matrix. The 8 trace metals are Mn, Co, Ni, Cu, Zn, Cd, Hg, Ph, which are contained in the soft part of mussels (Mytilus galloprovincialis Lamarck). Mussels were sampled from two sites in the Gulf of Trieste. In both samples, 76–78% of the total variance is explained by the four principal components. The orthogonally rotated factor matrix indicates that Co and Ni are bonded to the first principal component and Cd and Pb to the first (site 2) or second principal component (site 1). The origin of trace metals in the soft part of mussels from the Gulf of Trieste is discussed.

Zusammenfassung Die Analyse der Hauptkomponenten wurde auf die Korrelationsmatrix, die aus der 8 × 43-Datenmatrix hervorgeht, angewandt. Diese 8 Spurenmetalle sind Mn, Co, Ni, Cu, Zn, Cd, Hg, Pb, die im Fleisch der Miesmuscheln (Mytilus galloprovincialis Lamarck) gefunden worden sind. Die Miesmuscheln stammen aus zwei Gegenden des Golfes von Triest. Vier Hauptkomponenten erklären 76–78 % der totalen Varianz der beiden Stichproben. Die orthogonale-rotierte Faktorenmatrix zeigt, daß Co und Ni an die erste Hauptkomponente und Cd und Pb an die erste (Lage 2) oder an die zweite Hauptkomponente (Lage 1) gebunden sind. Die Herkunft der Spurenmetalle im Muschelfleisch aus dem Golf von Triest wird diskutiert.

A technique, based on the Lund et al. (1998) [1] approach, is introduced in order to numerically prescribe time-dependent turbulent inflow conditions in spatially-developing thermal boundary layers. A major difference with Lund’s approach is that the new multi-scale approach considers different scaling laws for the inner and outer parts of the boundary layer. Direct numerical simulations (DNS) are performed for incompressible zero (ZPG) and adverse (APG) pressure gradient flows. To the best of our knowledge, the present DNS in ZPG flows at a momentum thickness Reynolds numbers (Reθ) of 2300 represents the evolving thermal boundary layer simulations at the highest Reθ in the turbulence community. The temperature is treated as a passive scalar with isothermal walls as a boundary condition and a molecular Prandtl number of 0.71. The predicted Stanton number shows fairly good agreement with empirical correlations, and experimental and numerical data from the literature. Moreover, the influences of the Reynolds number and the APG strength on thermal parameters are also examined. Furthermore, the budget of the temperature variance shows a significant increase of production, turbulent diffusion, and dissipation in the buffer layer at higher Reynolds numbers. The main effects of adverse pressure gradients on the temperature field are manifested by a decreasing trend of thermal fluctuations but an increasing trend of the wall-normal turbulent heat fluxes when normalized by wall units as the APG strength is augmented.  相似文献

Monitoring and detecting individual cows' liveweight (LW) and liveweight change (LWC) are important for estimation of nutritional requirements and health management, and could be useful to measure short-term feed intake, water consumption, defecation, and urination. Walk-over weighing (WOW) systems can facilitate measurements of LW for these purposes, providing automated LW recorded at different times of the day. We conducted a field study to (1) quantify the contribution of feed and water intake, as well as urine and feces excretions, to short-term LWC and (2) determine the feasibility of stationary and WOW scales to detect subtle changes in LW as a result of feed and water intake, urination, and defecation. In this experiment, 10 cows walked through a WOW system and then stood individually on a stationary scale collecting weights at 10 and 3.3 Hz, respectively. Cows were offered 4 kg of feed and 10 kg of water on the stationary scale. For each animal, LW before and after eating and drinking was then calculated using different approaches. Liveweight change was calculated as the difference between the initial and final LW before and after eating and drinking for each statistical measure. The weights of feed intake, water consumption, urination, and defecation were measured and used as predictors of LWC. Urine and feces were collected from individual cows while the cow was on the scale, using a container, and weighed separately. The agreement between LWC measured using either stationary or WOW scales was assessed to determine the sensitivity of the scales to detect subtle changes in LW using the coefficient of determination (R2), Lin's concordance correlation coefficient (CCC), and mean bias. The prediction model showed that most of the regression coefficients were not significantly different from +1.0 for feed and water, or ?1.0 for urine and feces. The R2 and CCC values demonstrated a satisfactory agreement between calculated and stationary LWC and values ranged from 0.60 to 0.92 and 0.71 to 0.94, respectively. A moderate agreement was achieved between calculated and automated LWC with R2 and Lin's CCC values of 0.45 to 0.63 and 0.60 to 0.74, respectively. Therefore, results demonstrated that new algorithms and data processing methods need to be continuously explored and improved to obtain accurate measurements of LW to measure changes in LW, especially from WOW scales.  相似文献

The addition of nisin into a gelatin matrix can change properties of the film. The aim of this work was to develop gelatin-based films containing different nisin concentrations in order to study their influence on the film's antimicrobial and physical properties and their rheological properties as a film-forming solution (FFS). The FFS was characterised by rheological assays, and the gelatin-based active films were characterised and assessed by the effects of nisin concentrations on their various properties, including antimicrobial activity. Nisin's concentration affected not only its viscoelastic properties of FFS but also its film solubility in water, film surface roughness and light barrier. The addition of nisin also slightly modified the water contact angle and the mechanical properties of the gelatin films. Finally, the films demonstrated activity against Staphylococcus aureus and Listeria monocytogenes at concentrations above 56 mg of nisin g−1 of gelatin.  相似文献
