Butyrate possesses negative sensory qualities and is most effectively utilized in the intestine to provide energy to the colonocyte for the maintenance of intestinal health. Butyrate has also shown promise in the treatment of intestinal disorders and diseases such as short bowel syndrome, inflammatory bowel disease, and colon cancer. To modify sensory properties, intestinal release, and butyrate production capabilities, tributyrin (TB) was microencapsulated in whey protein isolate (WPI)‐based and gamma‐cyclodextrin (GC)‐based materials. Using an in vitro digestion and fermentation model, microcapsules containing TB were monitored for their release and production of butyrate in vitro. All samples containing TB showed limited butyrate release (<5%) during oral and gastric stages. In the small intestinal phase, all microcapsules containing TB released approximately 75% of their total butyrate with no significant differences (P > 0.05) across formulations. During the fermentation phase, GC‐based microcapsules produced significantly more butyrate (P < 0.001) on a molar basis than all WPI‐based microcapsules. Butyrate production increased significantly (P < 0.001) over each time interval with GC‐based microcapsules having the highest during the 12 h of fermentation. The GC‐based TB encapsulation systems were able to effectively deliver butyrate to the small intestine and generate butyrate in the large intestine. These microcapsules may, therefore, be beneficial for the maintenance of intestinal health and improvement of disease states across all areas of the gastrointestinal tract.  相似文献

The effects of formulation and processing parameters on sodium availability in a model lipid/protein‐based emulsion gel were studied for purposes of sodium reduction. Heat‐set model gels were prepared with varying levels of protein, lipid, and NaCl contents and high pressure homogenization treatments. Single quantum and double quantum‐filtered 23Na NMR spectroscopy experiments were used to characterize sodium mobility, structural order around “bound” (restricted mobility) sodium, and sodium binding, which have been correlated to saltiness perception in food systems previously. Total sodium mobility was lower in gels with higher protein or fat content, and was not affected by changes in homogenization pressure. The gels with increased protein, fat, or homogenization pressure had increased structure surrounding “bound” sodium and more relative “bound” sodium due to increased interfacial protein interactions. The data obtained in this study provide information on factors affecting sodium availability, which can be applied towards sodium reduction in lipid/protein‐based foods.  相似文献

Trans‐resveratrol has demonstrated the potential to provide both therapeutic and preventive activities against chronic diseases such as heart disease and cancer. The incorporation of trans‐resveratrol into food products would allow for broader access of this bioactive compound to a larger population. However, this strategy is limited by instability of trans‐resveratrol under environmental conditions and within the digestive system leading to isomerization of trans‐resveratrol (bioactive form) to cis‐resveratrol (bio‐inactive form). Studies in the stabilization of trans‐resveratrol into protein microparticles are presented. Trans‐resveratrol was encapsulated using whey protein concentrate (WPC) or sodium caseinate (SC), with or without anhydrous milk fat (AMF). Binding of resveratrol and aromatic residues in protein was estimated utilizing the Stern–Volmer equation and the number of tryptophan residues. The stability of encapsulated resveratrol was evaluated after exposure to ultraviolet A (UVA) light and 3‐stage in vitro digestion. After UVA light exposure, SC‐based microcapsules maintained a higher trans:cis resveratrol ratio (0.63, P < 0.05) than WPC‐based microcapsules (0.43) and unencapsulated resveratrol (0.49). In addition, encapsulation of resveratrol in both protein microparticles led to an increased digestive stability and bioaccessibility in comparison to unencapsulated resveratrol (47% and 23%, respectively, P < 0.05). SC‐based microcapsules provided a higher digestive stability and bioaccessibility (86% and 81%; P < 0.05) compared to WPC‐based microcapsules (71% and 68%). The addition of AMF to the microcapsules did not significantly change the in vitro digestion values. In conclusion, SC‐based microencapsulation increased the stability of trans‐resveratrol to UVA light exposure and simulated digestion conditions. This encapsulation‐system‐approach can be extended to other labile, bioactive polyphenols.  相似文献

The microstructure of food can be engineered to enhance sodium release during mastication, which may be used as a strategy to reduce sodium content in foods. This study aimed to relate sodium release to microstructural properties of solid lipoproteic colloid (SLC) foods. The SLC gels with 1.5% (w/w) NaCl were prepared by homogenization of whey protein isolate and anhydrous milk fat, followed by heat‐induced gelation. The gels varied in protein content (8% or 16%), fat content (0%, 11%, 22%, or 33%), and homogenization pressures (14 or 55 MPa). The maximum rate of sodium release during the initial gel compression increased with increasing gel porosity and pore size. This was due to more releasable serum in the gels with larger pore volume and larger pores. The maximum concentration of sodium at the end of sodium release increased with reduced size of the fat particles in the gels. The smaller fat particles were dispersed more uniformly and interrupted the protein network more, and facilitated the gel breakdown. The above findings suggested that, during the breakdown of the SLC gels, the major mechanisms of sodium release are via serum release followed by sodium diffusion, which are governed by the gel porosity and the particle size of fat, respectively. This study demonstrated the dependence of temporal sodium release properties on the microstructural properties of an SLC food system. The findings from this study could lay the foundation for further investigation of the dependence of saltiness perception on SLC microstructure, which can provide insight for sodium reduction in SLC products.  相似文献

The demand for multimedia services, such as voice over Internet Protocol, video on demand, information dissemination, and ?le sharing, is increasing explosively in wireless local area networks. These multimedia services require a certain level of QoS. Thus, it is important to provide QoS for multimedia applications. IEEE 802.11e tries to meet the QoS requirement of multimedia services by using Enhanced Distributed Channel Access. This gives more weights to high‐priority tra?c than low‐priority tra?c in accessing the wireless channel. However, Enhanced Distributed Channel Access suffers from many problems such as low aggregate throughput, high collision rates, and ineffective QoS differentiation among priority classes. In this paper, we propose a new medium access scheme, the Arbitration Interframe Space‐controlled Medium Access Control (AC‐MAC), that guarantees absolute priority in 802.11 wireless networks. In AC‐MAC, the AIFS and contention window values are controlled, so that a higher‐priority tra?c can preferentially access and effectively utilize the channel. Extensive simulations show that AC‐MAC can perfectly provide absolute priority and good throughput performance regardless of the number of contending nodes. In the simulation of voice over Internet Protocol service, AC‐MAC provides effective QoS differentiation among services and also meets the high level of QoS requirements. AC‐MAC also adapts quickly in a dynamic environment and provides good fairness among the nodes belonging to the same priority class. Copyright © 2011 John Wiley & Sons, Ltd.  相似文献

The advent of information and communication technology has made people practice prosocial behavior in social networking services (SNSs) more easily. For this reason, the aim of the study was to identify the social and individual factors that induce prosociality in SNS. The concept of isomorphism for categorizing the characteristics of each social networks was adopted. The study also considered the concept of social presence for representing each individual. The experiment manipulated types of isomorphism (Mimetic, Normative, and Coercive) and degrees of social presence in an experimental SNS context. The study also measured individuals’ intention and activity of prosocial behavior. The experiment results indicate that mimetic and normative isomorphic conditions induce higher levels of prosocial intention and activity than coercive isomorphic condition. Also, a higher degree of social presence induces a higher level of prosocial intention. More interesting, the impact of mimetic condition is stronger when the social presence is higher.  相似文献

A near-field scanning microwave microscope (NSMM) is used to detect sequence-specific hybridization between surface-immobilized and free DNA single strands. Hybridization between target (free) and capture (immobilized) sequences leads to changes in the reflection coefficient (S11) which are measured by the NSMM. These changes are caused by hybridization-induced modification of the dielectric constant profile of the DNA film. NSMM instrumentation does not require labeling of target sequences with fluorophores or other tagging groups. The physical basis of reflection coefficient changes underpinning the NSMM approach is discussed.  相似文献

A thermodynamic asphaltene precipitation model was developed based on the model of Nghiem et al. using the Peng-Robinson equation of state (PR EOS). This model calculates the amount of asphaltene precipitation based on changes in temperature and pressure. The effects of asphaltene precipitation on rock properties were investigated by observing changes in porosity and permeability. In this model, phase equilibrium was achieved by repeatedly reducing the amount of the asphaltene component, in contrast to the model of Qin et al. using the secant method. The results of this model were compared with experimental data of measured precipitation, based on changes in pressure, and agreed more closely than the model of Qin et al. Our results also confirmed that the maximum precipitation of asphaltene occurred at the bubble-point pressure. Thus, using the model, we verified that the precipitation pattern of asphaltene depended on temperature and pressure, and it is expected that changing patterns in reservoir productivity can be analyzed using asphaltene precipitation in heavy oil-containing asphaltene.  相似文献

Cyclone, a type of particle collector widely used in the field of ambient sampling and industrial particulate control, is the principal type of gas-solids separator that use a centrifugal force. The goal of this study is to transform conventional cyclone into a new type of cyclone that can be used for the household vacuum cleaners. To meet the goal, first, the analysis about local environment and dust is carried out. Second, it must have enough high-efficiency not to reduce suction power due to clogging of exhaust filter unit. Two single cyclones with central-hopper-dust-outlet and side-wall-dust-outlet and a twin cyclone are designed and fabricated to evaluate, and compare, their dust collection efficiencies and pressure drops. The measurements of separation efficiency for dust by using DMT test dust type 08 are carried out. House dust experiment is additionally performed to check the local matters applicability such as tissue papers, fur and hairs. The collection efficiency of the twin cyclone is found to be 3–6% greater than those of two single cyclones with the same body diameter, inlet and inner cylinder diameter. Twin cyclone with a large body diameter, a small inner cylinder diameter, a short inner cylinder, a narrow inlet has high separation efficiency. This result indicates the possibility of achieving higher collection efficiencies with a twin cyclone.  相似文献
