Abstract

Baked confectionary products such as cakes, biscuits, cookies, and muffins are consumed globally as they are coveted for their sensory attributes. However, due to their high sugar and fat content, baked confectionary products are also considered major contributors to the prevalence of obesity and the rise of type II diabetes in industrialized nations and in emerging economies. Both sugar and fat have multiple roles in baked confectionary products in terms of structure, texture, shelf-life, aroma, and taste. Considerable efforts have been undertaken to modify product formulations to decrease sugar and fat contents without compromising on product or sensory quality, and this review focuses on relevant research undertaken to date. Aspects addressed include the impact of decreasing sugar and fat content, the impact of sugar or fat substitutes in relation to sensory perception, with a focus on the role of key product constituents, processing parameters, flavor reactions, aromatic compounds, and flavor chemical and sensory techniques.  相似文献

The local deposition of Ag nanoparticles (NPs) on ω-mercaptoalkanoic acid, HS(CH2)nCO2H, (n = 2, 10) self-assembled monolayers (SAMs) by scanning electrochemical microscopy (SECM) is reported. We found that the presence of a SAM had a pronounced effect on Ag deposition. Experiments were conducted by applying different potentials to an Au(1 1 1) substrate either in the presence of a constant concentration of Ag+ ions in solution (bulk deposition) or by generating a flux of Ag+ from an Ag microelectrode that was positioned close to the Au(1 1 1) substrate (SECM deposition). SECM was used for generating a controlled flux of silver ions by anodic dissolution of an Ag microelectrode close to the SAMs modified Au(1 1 1). We found that the shape of the NPs was affected by the length of the carbon-chain of the SAM. Tetrahedral NPs were obtained on bare Au(1 1 1) surfaces while rod like and cubic Ag NPs were deposited onto 3-mercaptopropanoic acid (MPA) and 11-mercaptoundecanoic acid (MUA) SAMs, respectively. The size and shape of the deposited NPs were influenced by the deposition potential.We conclude that the shape and distribution of locally deposited Ag NPs on Au(1 1 1) can be controlled by modification of the substrate with a SAM and through controlling the Ag+ flux generated by SECM.  相似文献

Electrocardiograms were recorded at baseline and regular intervals in 53 patients with myotonic dystrophy who were followed for a mean of 6.3 +/- 4.0 years. Patients with cardiac events had a significantly prolonged PR interval (p <0.001), a later age of onset of neuromuscular symptoms (p <0.05), and were older (p <0.005).  相似文献

The continuous exponential growth in transistors per chip as described by Moore's law has spurred tremendous progress in the functionality and performance of semiconductor devices, particularly microprocessors. At the same time, each succeeding technology generation has introduced new obstacles to maintaining this growth rate. Transient faults caused by single-event upsets have emerged as a key challenge likely to gain significantly more importance in the next few design generations. Techniques for dealing with these faults exist, but they come at a cost. Designers need accurate soft-error estimates early in the design cycle to weigh the benefits of error protection techniques against their costs. The objective of this study was to examine the feasibility of using a two-step, fully biological and sustainable strategy for the treatment of carbohydrate rich wastes. The primary step in this strategy involves the application of thermostable enzymes produced by the thermophilic, aerobic fungus, Talaromyces emersonii, to carbohydrate wastes producing a liquid hydrolysate discharged at elevated temperatures. To assess the potential of thermophilic treatment of this hydrolysate, a comparative study of thermophilic and mesophilic digestion of four sugar rich thermozyme hydrolysate waste streams was conducted by operating two high rate upflow anaerobic hybrid reactors (UAHR) at 37 °C (R1) and 55 °C (R2). The operational performance of both reactors was monitored from start-up by assessing COD removal efficiencies, volatile fatty acid (VFA) discharge and % methane of the biogas produced. Rapid start-up of both R1 and R2 was achieved on an influent composed of the typical sugar components of the organic fraction of municipal solid waste (OFMSW). Both reactors were subsequently challenged in terms of volumetric loading rate (VLR) and it was found that a VLR of 9 gCOD l−1 d−1 at a hydraulic retention time (HRT) of 1 day severely affected the thermophilic reactor with instability characterised by a build up of volatile fatty acid (VFA) intermediates in the effluent. The influent to both reactors was changed to a simple glucose and sucrose-based influent supplied at a VLR of 4.5 gCOD l−1 d−1 and HRT of 2 days prior to the introduction of thermozyme hydrolysates. Four unique thermozyme hydrolysates were subsequently supplied to the reactors, each for a period of 10 HRTs. The applied hydrolysates were derived from apple pulp, bread, carob powder and cardboard, all of which were successfully and comparably converted by both reactors. The % total carbohydrate removal by both reactors was monitored during the application of the sugar rich thermozyme hydrolysates. This approach offers a sustainable technology for the treatment of carbohydrate rich wastes and highlights the potential of these wastes as substrates for the generation of second-generation biofuels.  相似文献

The effects of different ozone concentrations and ozonation times on the inactivation of Escherichia coli and on the organoleptic properties of whole and ground black peppers were determined. Black peppers were exposed to three different ozone concentrations (0.1, 0.5, and 1.0 ppm) for different periods (0 to 360 min) at 85% +/- 3% relative humidity (RH) and 25 +/- 0.5 degree C. An approximately 7-log CFU/g reduction of E. coli in whole black peppers was achieved by treating the samples with 0.1, 0.5, or 1.0 ppm of ozone for 360, 240, or 120 min, respectively. E. coli populations in ground black peppers were reduced from an initial count of about 7.5 log CFU/g to 1 log CFU/g after 360 min at 0.1- and 0.5-ppm ozone concentrations, whereas the same microbial reduction was obtained after 240 min at 1.0-ppm ozone concentration. An ozone concentration of 0.1 ppm for 360 min was found to be appropriate to inactivate E. coli in whole and ground black peppers without alteration of the organoleptic properties. No significant differences (P > or = 0.05) were present in the bitterness, flavor, odor, color, or overall acceptability values of the whole and ground black peppers treated with 0.1 ppm of ozone for up to 360 min.  相似文献

Considerable research has been performed on biological nutrient removal (BNR) systems which remove the problematic nutrients, nitrogen and phosphorus, that cause eutrophication. This research focussed on setting up two laboratory‐scale anaerobic/anoxic/oxic (A/A/O) systems and investigating their reliability while undergoing various parameter changes. Pump failure, in the first trial, R1, led to a decrease in pH, exposure of the sludge to relatively low nitrate concentrations and reduction of the suspended solids concentration within the system. This adversely affected the phosphorus removal efficiency. Shock loading the system with increased influent phosphate concentrations for 56 days was shown to aid remediation of the phosphorus removal efficiency to values between 65 and 70% (w/w). The second trial, R2, highlighted the presence of bacteria capable of P‐uptake under anoxic conditions (in the presence of nitrate). The characteristic anaerobic P‐release was also evident. The bacteria responsible for phosphate uptake under anoxic conditions are thought to be the denitrifying phosphate removing bacteria (DPB). However, the presence of higher nitrate concentrations retarded the P‐removal efficiency to some extent. Secondary release of P was evident in the clarifier of the A/A/O system during the R2 trial and especially during times of increased nitrate concentrations in the system. Between 20 and 40% (w/w) of the P taken up in the oxic stage of the system was released in the clarifier at various stages throughout the trial. © 2000 Society of Chemical Industry  相似文献

The diversity, population dynamics, and activity profiles of methanogens in anaerobic granular sludges from two anaerobic hybrid reactors treating a molasses wastewater both mesophilically (37 degrees C) and thermophilically (55 degrees C) during a 1081 day trial were determined. The influent to one of the reactors was supplemented with sulphate, after an acclimation period of 112 days, to determine the effect of competition with sulphate-reducing bacteria on the methanogenic community structure. Sludge samples were removed from the reactors at intervals throughout the operational period and examined by amplified ribosomal DNA (rDNA) restriction analysis (ARDRA) and partial sequencing of 16S rRNA genes. In total, 18 operational taxonomic units (OTUs) were identified, 12 of which were sequenced. The methanogenic communities in both reactors changed during the operational period. The seed sludge and the reactor biomass sampled during mesophilic operation, both in the presence and absence of sulphate, was characterised by a predominance of Methanosaeta spp. Following temperature elevation, the dominant methanogenic sequences detected in the non-sulphate supplemented reactor were closely related to Methanocorpusculum parvum. By contrast, the dominant OTUs detected in the sulphate-supplemented reactor upon temperature increase were related to the hydrogen-utilising methanogen, Methanobacterium thermoautotrophicum. The observed methanogenic community structure in the reactors correlated with the operational performance of the reactors during the trial and with physiological measurements of the reactor biomass. Both reactors achieved chemical oxygen demand (COD) removal efficiencies of over 90% during mesophilic operation, with or without sulphate supplementation. During thermophilic operation, the presence of sulphate resulted in decreased reactor performance (effluent acetate concentrations of >3000 mg/l and biogas methane content of <25%). It was demonstrated that methanogenic conversion of acetate at 55 degrees C was extremely sensitive to inhibition by sulphide (50% inhibition at 8-17 mg/l unionised sulphide at pH 7.6-8.0), while the conversion of H(2)/CO(2) methanogenically was favoured. The combination of experiments carried out demonstrated the presence of specific methanogenic populations during periods of successful operational performance.  相似文献
