Falling films exhibit very complex wavy patterns, which depend on the properties of the liquid, the Reynolds number, the wall inclination angle, and the distance from the film inlet. The film hydrodynamics governs the heat and mass transfer in the liquid films. Our vision is to control and enhance heat and mass transport by using walls with specific microscale topographies that influence the falling film flow, stability, and wavy pattern. In this work, long-wave theory and integral boundary layer approximation are used for modeling the falling film flow on walls with three-dimensional periodic microstructures. The wall topography is periodic both in the main flow direction and in the transverse direction. Examples of such microstructures are longitudinal grooves with sinusoidal path (or meandering grooves) and herringbone structures. The effects of the Reynolds number, the wall inclination angle, and the longitudinal and transverse periods of the structure on the shape of liquid–gas interface are investigated. It is shown that, as opposed to straight grooves in longitudinal direction, grooves with meandering paths may lead to significant interface deformations.  相似文献

In spite of the statutory meat inspection at abattoirs, Taenia saginata cysticercus infection in cattle remains an economically important parasitic disease for the livestock industry by affecting food safety. The routinely performed standard meat inspection protocol has a low diagnostic sensitivity for the detection of T. saginata cysticerci infections. Therefore, an abattoir trial aiming to increase the detection level was undertaken. In three EU-approved abattoirs, several additional heart incisions were performed in a total of 1088 slaughtered cattle originating from 832 farms throughout Switzerland. Cysticerci as putative parasitic lesions were classified by visual examination during meat inspection and confirmed microscopically and/or by molecular analyses. With the EU-approved routine meat inspection, bovine cysticercosis was diagnosed in 1.8% (20/1088) of the slaughtered animals. Additional incisions into the heart muscle revealed a further 29 cases, indicating that the prevalence was at least 4.5%. All infected animals originated from individual farms. This straightforward technique had a significantly higher sensitivity and is feasible for routine practice. It also confirms that the prevalence of this zoonotic parasite in the cattle population is underestimated based on the routine abattoir reports.  相似文献

Aim of the present study was to compare two methods for the determination of the degree of substitution of starch esterified with octenyl succinic anhydride (OSA). A maximum degree of substitution of 0.034 was analysed in commercial samples of hydrolysed OSA starch using a method based on acidification of the free carboxyl group of the OSA-starch molecule after its optimization. In contrast a high degree of substitution up to 0.134 was determined when analysing the same samples using a method based on saponification of the OSA groups. An interference with reducing sugars was hypothesized as possible reason and confirmed by control experiments using different reducing and non reducing low molecular weight carbohydrates.  相似文献

Salmonella serotype Kentucky emerged since 2002 and now ranks among the top ten serovars isolated from humans in Europe, and 8th to 10th in Switzerland. A total of 106 strains isolated from different patients from 2004 through 2009 in Switzerland were further characterized by (i) assessing phenotypic antibiotic resistance profiles using the disk diffusion method and (ii) by genotyping using pulsed-field gel electrophoresis (PFGE) after macrorestriction with XbaI in order to evaluate strain relationships and trends.In Switzerland, there is evidence for an outbreak in 2006 as the annual incidence almost doubled. A total of 30 strains (28%) were resistant or showed intermediate resistance to one to three antimicrobials and 48 strains (45%) displayed resistance to more than three antibiotics. We found a high prevalence (67%) of nalidixic acid resistance, and 58% were resistant to ciprofloxacin. One strain was a producer of extended-spectrum β-lactamase (ESBL). PFGE discriminated four clusters (similarity coefficient cut off at 80%).The resistance situation among the strains isolated from 2004 to 2009 in Switzerland is discussed and shown to coincide with findings in other European countries. Based on genetic subtyping, a so far undetected outbreak is likely to have occurred in Switzerland in 2006. Finally, our data identified travelling to Northern Africa as a risk factor for S. Antimony is used in large quantities in a variety of products, though it has been declared as a pollutant of priority interest by the Environmental Protection Agency of the United States (USEPA). Oxidation processes critically affect the mobility of antimony in the environment since Sb(V) has a greater solubility than Sb(lll). In this study, the cooxidation reactions of Sb(lIl) with Fe(ll) and both O2 and H2O2 were investigated and compared to those of As(III). With increasing pH, the oxidation rate coefficients of Sb(lll) in the presence of Fe(ll) and O2 increased and followed a similar pH trend as the Fe(ll) oxidation by O2. Half-lives of Sb(lll) were 35 and 1.4 h at pH 5.0 and pH 6.2, respectively. The co-oxidation with Fe(ll) and H2O2 is about 7000 and 20 times faster than with Fe(ll) and O2 at pH 3 and pH 7, respectively. For both systems, *OH radicals appear to be the predominant oxidant below approximately pH 4, while at more neutral pH values, other unknown intermediates become important. The oxidation of As(lll) follows a similar pH trend as the Sb(lll) oxidation; however, As(lll) oxidation was roughly 10 times slower and only partly oxidized in most of the experiments. This study shows that the Fe(ll)-mediated oxidation of Sb(Ill) can be an important oxidation pathway at neutral pH values.  相似文献

The foodborne pathogen Listeria monocytogenes has many physiological adaptations that enable survival under a wide range of environmental conditions. The microbes overcome various types of stress, including the cold stress associated with low temperatures in food-production and storage environments. Cold stress adaptation mechanisms are therefore an important attribute of L. monocytogenes, enabling these food pathogens to survive and proliferate to reach minimal infectious levels on refrigerated foods. This phenomenon is a function of many molecular adaptation mechanisms. Therefore, an improved understanding of how cold stress is sensed and adaptation measures implemented by L. monocytogenes may facilitate the development of better ways of controlling these pathogens in food and related environments. Research over the past few years has highlighted some of the molecular aspects of cellular mechanisms behind cold stress adaptation in L. monocytogenes. This review provides an overview of the molecular and physiological constraints of cold stress and discusses the various cellular cold stress response mechanisms in L. monocytogenes, as well as their implications for food safety.  相似文献

At sequential steps of slaughter (scalding, dehairing, singeing, polishing, trimming, washing, and chilling), 200 pig carcasses from two abattoirs were examined for total viable bacteria count (TVC) and the presence of Enterobacteriaceae and coagulase-positive Staphylococcus (CPS) by the wet-dry double-swab technique at the neck, belly, back, and ham. Before scalding, mean TVCs ranged from 5.0 to 6.0 log CFU cm(-2), and Enterobacteriaceae and CPS were detected on all carcasses. At abattoir A, mean TVCs and the percentage of Enterobacteriaceae-positive carcasses were reduced (P < 0.05) after scalding (1.9 log CFU cm(-2) and 12%, respectively), singeing (1.9 log CFU cm(-2) and 66%, respectively), and blast chilling (2.3 log CFU cm(-2) and 17%, respectively) and increased (P < 0.05) after dehairing (3.4 log CFU cm(-2) and 100%, respectively) and polishing (2.9 log CFU cm(-2)). The proportion of CPS-positive samples decreased to < or = 10% after scalding and remained at this level. At abattoir B, mean TVCs and the percentages of Enterobacteriaceae- and CPS-positive carcasses were reduced (P < 0.05) after scalding (2.4 log CFU cm(-2) and 29 and 20%, respectively), polishing (3.7 log CFU cm(-2)), and chilling (2.6 log CFU cm(-2) and 55 and 77%, respectively) and increased (P < 0.05) after the combined dehairing-singeing (4.7 log CFU cm(-2) and 97 and 100%, respectively). Among sites, the neck tended to yield higher levels of contamination from trimming to chilling at both abattoirs (P < 0.05). Consequently, scalding, singeing, and chilling may be integrated in a hazard analysis critical control point (HACCP) system for pig slaughter. As indicated by the higher levels of contamination on carcasses after dehairing-singeing and the following stages at abattoir B, each abattoir should develop its own baseline data and should customize HACCP systems to match process- and site-specific circumstances.  相似文献

Oranges are clinically relevant allergenic foods. To date, orange allergens have not been characterized in detail. The study is aimed at analyzing the sensitization profile in orange-sensitized subjects with and without clinical allergy, and to identify orange allergens. Fifty-six sensitized subjects with self-reported reactions to orange were grouped into reactors (anaphylaxis or multiple episodes of immediate reactions and/or positive challenge tests) and non-reactors (negative open food challenge tests). Allergens were characterized by IgE immunoblotting, N-terminal sequencing, IgE-inhibition assays, and mediator release assays were performed to determine the allergenic potency of orange profilin. Of 56 subjects, 23 were classified as orange allergic showing mainly an oral allergy syndrome. Of 23 subjects classified as orange allergic, 22 were sensitized to profilin, Cit s 2. In patients with mono-sensitization to profilin in vitro histamine releases up to 75% from basophils were induced using orange extract and purified plant profilins. Of the allergic patients 78% were sensitized to germin-like protein, Cit s 1. Both allergens showed retained IgE reactivity in heat-processed orange juice. Interestingly, subjects with and without clinical allergy showed a comparable sensitization profile. Profilin and germin-like proteins are major orange allergens. The potential clinical relevance of orange profilin was indicated by its strong capacity to release histamine from basophils. However, a predominant sensitization to both allergens in subjects without symptoms also indicates a high frequency of clinically insignificant sensitization.  相似文献
