Fruiting bodies of Pleurotus ostreatus (oyster) and Cantharellus cibarius (chanterelle) mushrooms underwent acid fermentation using 3 strains of lactic acid bacteria (LAB) as starter cultures. Polyphenol contents, antioxidant activities, and phenolic acid contents in fresh, blanched, and fermented mushrooms were investigated. Fruiting bodies of oyster mushrooms exhibited higher total phenolic contents than chanterelle mushrooms. Blanching caused a decrease in polyphenol contents and antioxidant activities in both mushroom types. No important differences were observed in total phenolic compound contents (measured using Folin-Ciocalteau reagent) in mushrooms using different LAB strains. Lactobacillus plantarum was the most useful microorganism for lactic acid fermentation of fruiting bodies for reduction of the pH value. The highest concentrations of single phenolic acids: gallic, homogentisic, and ferulic acids were present in mushrooms fermented using L. plantarum.  相似文献

The influence of white cabbage on oxidative and thermooxidative changes of plant fats (rapeseed oil) and animal fats (lard) was determined by an array of standard tests. The fats were heated at 100 °C for 6 h in a model system mimicking normal cooking conditions in the presence or absence of fresh cabbage juice (FCJ) or sauerkraut juice (SJ). After thermal processing of fats in the presence of cabbage juices, regardless of the kind, the formation of oxidized triacylglycerols (TAG) was decreased by about 40% compared to fats heated alone. Juices also inhibited the formation of TAG dimers and polymers. Such parameters as peroxide value, extinction coefficient at 232 nm (E1%1cm), and losses of polyene fatty acids revealed the protective effect of cabbage juices as well; however, in this case FCJ displayed a much stronger antioxidant effect than SJ. The protection was more visible for lard which contains much lower amounts of natural antioxidants.  相似文献

Corpora lutea and blood samples were collected from superovulated ewes 0, 4, 8, 12 and 24 h after prostaglandin F(2alpha) (PGF) analog injection on day 10 of the estrous cycle. Changes in vascular cell and fibroblast composition, apoptosis and mRNA expression for several angiogenic factors in the corpus luteum (CL) were determined. While peripheral progesterone concentration decreased at 24 h after PGF injection, CL weight did not change. The area of positive BS-1 lectin staining (endothelial cell marker), smooth muscle cell actin (SMCA; pericyte and SMC marker), collagen type 1 (fibroblast marker), and the rate of cell death changed in luteal tissues after PGF treatment. In association with these cellular changes, mRNA for several angiogenic factors including vascular endothelial growth factor (VEGF) and receptors (Flt and KDR), basic fibroblast growth factor (FGF2) and receptor, angiopoietin (ANGPT) 1 and receptor Tie-2, endothelial nitric oxide synthase (NOS3), and angiotensin II receptor 1 (AT1) were altered. Changes in endothelial cell marker expression were positively correlated with changes in VEGF and NO systems. In addition, changes in mRNA expression for VEGF, Flt and KDR were positively correlated with changes in ANGPT2, Tie-2, and NOS3, indicating a functional relationship. This data demonstrates that after an initial increase, the endothelial component of the vascular bed decreases during PGF-induced luteal regression. However, SMCA expression remained high during luteal regression, potentially indicating a role of pericytes and vascular SMC in luteolysis, likely to regulate tissue remodeling and to maintain the integrity of larger blood vessels. Further, it appears that early regression may increase collagen type 1 production and/or expression by fibroblasts. Expression of angiogenic factors is influenced by PGF-induced luteolysis and may serve to maintain vascular structure in order to aid luteal regression.  相似文献

The aim of this study was to evaluate the ex vivo and in vivo studies immune potential of α- and κ-casein. Ex vivo, naïve mouse splenocytes were stimulated with α- or κ-casein. After 120 h of culture, the proliferation index (PI), determined by 3-(4,5 dimethylthiazol-2yl)-2,5-diphenyl tetrazolium bromide (MTT) assay and carboxyfluorescein diacetate N-succinimidyl ester (CFSE) staining, did not vary for either antigen, suggesting similar ex vivo immunogenic potential of both casein fractions. In vivo, BALB/ccmdb mice were sensitized with α- or κ-casein and then gavaged with primary antigen. Mice immunized with α-casein had higher levels of IgG (216.33) and IgA (210.22) in serum at the end of the experiment compared with mice immunized with κ-casein (215 and 29.3 for IgG and IgA, respectively). The use of α-casein for mouse immunization and ex vivo lymphocyte stimulation resulted in higher concentrations of secreted cytokines (IL-4, IL-10) compared with κ-casein stimulation. This is consistent with increasing regulatory T cell (Treg) lymphocyte populations, independent of the antigen used for stimulation. In summary, the immunogenic potential of α- and κ-casein was similar. Humoral and cellular immune responses confirmed their strong, independent potential to induce B and T cells. We propose that the lymphocyte proliferation index be used as an initial screening for protein immunogenicity.  相似文献

A copper salt and α-methylstyrene were used as the polymerization retarders. The study provides detailed information on the differences in the structural, thermal and degradation properties of poly(ε‐caprolactone) synthesized in two different ionic liquids, 1‐butyl‐3‐methylimidazolium hexafluorophosphate [bmim][PF6] and 1‐butyl‐3‐methylimidazolium bis(trifluoromethylsulfonyl)imide [bmim][NTf2], regarding its further usage in the pharmaceutical field. The polymer structure confirms the presence of both linear polymer chains with end‐functional hydroxyl groups allowing covalent coupling of the therapeutic agents, and cyclic macromolecules, both affecting the degree of crystallinity of polymer. The highest macrocyclic content (64%) after 7 days of polymerization at 80 °C was observed for [bmim][NTf2]. For [bmim][PF6], the macrocyclic content value was not dependent on the reaction time and remained at a similar level (10–14% at 80 °C). The results of degradation test revealed that hydrolytic degradation of ester bonds is more pronounced for PCLs synthesized in [bmim][NTf2], due to their lower degree of crystallinity compared with PCLs obtained in [bmim][PF6]. A high purity, low polydispersity index of the obtained polymers and high yield of the process (ca., 90%) indicate that ionic liquids seem to be promising solvents for the synthesis of biomedical polymers. © 2016 Wiley Periodicals, Inc. A macroporous, styrene‐divinylbenzene polymer with N,N‐dichlorosulfonamide functional groups (? SO2NCl2), containing two chlorine atoms with oxidation number +1, have been prepared through the chemical modification of a commercial sulfonic cation exchanger (Amberlyst 15, Rohm and Haas). Obtained product was used as the heterogeneous oxidant of As(III) in aqueous solutions. The polymer's oxidizing capacity, determined as part of the batch studies, amounted to 193.29 mg As(III) g?1 (pH = 7.7) and 206.03 mg As(III) g?1 (pH = 2.0). The suitability of the redox polymer for long‐lasting operation in the aqueous environment was confirmed in the column study conducted using a solution with a concentration of 10 mg As(III) dm?3 at a flow rate of 6 bed volumes (BV) h?1. The concentration of As(III) in the effluent reached the value of 0.01 mg As(III) dm?3 only after 8 weeks of continuous operation when 7930 BV of the solution had passed through the bed. © 2014 Wiley Periodicals, Inc.
