Rice wine was prepared in the laboratory from a black pigmented rice (cv. Poireton) using standardized methodology. The wine was fortified with the probiotic strains Lactobacillus acidophilus ATCC 4356 and Lactobacillus sakei ATCC 15521 and allowed to undergo a storage period of 28 days at 4°C. These rice wines were compared with a commercial wine used as a standard reference wine. A panel consisting of 30 judges performed the sensory evaluation. The scores obtained were based on the quality attributes of colour, taste, aroma and alcoholic strength. Analysis of the sensory scores and ranking of the different samples were performed using fuzzy analysis. The quality attributes were also ranked according to their importance in the overall acceptability. Colour and alcoholic strength were accorded the highest importance, compared with aroma and taste, as quality attributes. The rice wines were rated as ‘not satisfactory’, ‘fair’, ‘medium’, ‘good’ and ‘excellent’ on the sensory scale. Out of the wines prepared, black pigmented rice wine fortified with L. acidophilus was the most acceptable and was ranked as ‘good’, which was also at par with the commercial wine. On the other hand, black pigmented rice wine fortified with L. sakei and black pigmented rice wine fortified with L. acidophilus and L. sakei were ranked in the ‘satisfactory’ category followed by the unfortified wine ranked in the ‘fair’ category. Dietary fibre (DF)-anthocyanin formulation was incorporated in bread to develop anthocyanin rich DF powder (ARDFP) fortified bread. Prior to incorporation of DF-anthocyanin formulation in bread preparation, the cytotoxicity of DF and anthocyanin extracts was assessed. The effect of incorporation of different level of ARDFP with moisture on bread quality characteristics such as specific volume, textural, colour, sensory properties and starch digestibility was studied. The results revealed that extracted DF and anthocyanin of culinary banana bracts were nontoxic towards peripheral blood mononuclear cell and cytotoxic towards HT29 cancerous cell line. Incorporation of 2% ARDFP with 68% moisture was rated as best with higher specific volume (5.50 cm3 g−1), improved textural properties (high springiness and cohesiveness), anthocyanin content (9.08 mg per 100 g), colour characteristics and sensory acceptability next to control. The effect of 5, 10, 20, 40, 60, 80, 100, 120, and 160 mg/kg body weight (b.wt.) of aqueous extract of cystone (an ayurvedic herbal medicine) administered intraperitoneally was studied on the radiation‐induced mortality in mice exposed to 10 Gy of γ‐radiation. Treatment of mice with different doses of cystone, consecutively for five days before irradiation, delayed the onset of mortality and reduced the symptoms of radiation sickness when compared with the non‐drug treated irradiated controls. The pretreatment of mice with different doses of cystone before exposure to 10 Gy of γ‐radiation resulted in a dose‐dependent elevation in the survival up to 40 mg/kg b. wt., where the highest number of survival (55.55%) was observed by 30 days post irradiation, when compared with the 10 Gy irradiated control (6.66%). Thereafter, the number of survivors declined and reached a nadir at 160 mg/kg, where no survivors could be observed. The optimum protection against irradiation was observed for 40 mg/kg cystone, where the highest number of survivors were reported by 30 days post irradiation and it was 8.34‐fold greater than that of the irradiated control group. 相似文献

Phytochemicals content and antimicrobial activity of Artocarpus heterophyllus, Cyclosorus extensa, Oldendia corymbosa, and Alpinia malaccensis were investigated. Maximum alkaloids and terpenoids were found in A. heterophyllus; tannins and saponins in C. extensa; flavonoids, polyphenols, and phytosterols in O. corymbosa and anthraquinone, glycosides, and anthocyaninin A. malaccensis. Aqueous, methanolic, ethyl acetate, and hexane extracts were prepared from all the leaves. Attenuated total reflectance Fourier transform infrared spectrophotometric (ATR-FTIR) analysis revealed that alkanes and alkyl halides were prevalent in all the extracts and the ethyl acetate extracts contained comparatively higher number of functional groups, which were also more effective against Candida albicans, Escherichia coli, and Staphylococcus aureus. The minimum inhibitory concentration values of A. malaccensis against the tested pathogens were found to be lesser than the other species. 相似文献

Summary The amount of nondeterminism in a nondeterministic finite automaton (NFA) is measured by counting the minimal number of guessing points a string w has to pass through on its way to an accepting state. NFA's with more nondeterminism can achieve greater savings in the number of states over their deterministic counterparts than NFA's with less nondeterminism. This study represents a comprehensive analysis and scientific validation of our ancient knowledge about the ethnopharmacological aspects of cow urine by measuring the lipid peroxidation, radical scavenging, and level of reduced glutathione and catalase activity. Graded doses of cow urine were administered orally to experimentally treated rats. Results of liver and plasma from experimentally treated rats indicated that cow urine reduced the levels of thiobarbituric acid reactive substance significantly in all the treatments (P < 0.01). In vitro experiments with the liver of control and experimentally treated rats were also carried out against cumene hydroperoxide-induced lipid peroxidation. On LCMS analysis, the antioxidant component of cow urine was identified as uric acid (m/z 169.07). The results demonstrate that the cow urine-mediated induction of antioxidant level controls oxidative damage, even after minimal processing, and thus is indicative of its potential as a viable substitute of synthetic antioxidants. 相似文献
