In this study, carrot pomace powder (CPP) with particle sizes of 210 μm (CPP210) and 500 μm (CPP500) was added in the gluten‐free sponge cake recipe. Flour (rice and corn flour, 1:1, w/w) was replaced with 0, 10, 20 and 30% CPP. With increasing the level and particle size of CPP, batter density, viscosity, consistency and firmness increased. The control cake had a dense, hard texture, irregular shape and low sensory scores. These properties improved with addition of CPP so that the cake density, hardness and cohesiveness reduced, while symmetry index and sensory scores increased. Varying the particle size of CPP had no considerable effects on most of the batter and cake properties, while increasing the level of CPP had great positive effects on the quality of batter and cake. Overall, addition of 30% CPP with either of the particle sizes resulted in an acceptable gluten‐free cake.  相似文献

Wheat germ is an available and economical source of protein, vitamins and antioxidants with an increasing application in food products. The main aim of this study was to investigate the effects of different levels (0.0, 2.5, 5.0, 7.5 and 10.0%) and particle sizes (120, 210 and 354 μm) of wheat germ on physicochemical properties of fresh chilled dairy dessert. With increasing wheat germ level, dry matter of the dessert increased while the pH decreased. Particle size had no significant effect on these parameters. Increasing the wheat germ content and particle size enhanced darkness, hardness, cohesiveness and gumminess of the desserts while decreasing springiness and water release of the samples. Wheat germ level had greater effects on different quality aspects of the desserts than its particle size. The most acceptable dessert was produced with no more than 5.0% wheat germ with either of the particle sizes used in this study.  相似文献

Air-cooled proton exchange membrane fuel cells (PEMFCs), having combined air cooling and oxidant supply channels, offer significantly reduced bill of materials and system complexity compared to conventional, water-cooled fuel cells. Thermal management of air-cooled fuel cells is however a major challenge. In the present study, a 3D numerical thermal model is presented to analyze the heat transfer and predict the temperature distribution in air-cooled PEMFCs. Conservation equations of mass, momentum, species, and energy are solved in the oxidant channel, while energy equation is solved in the entire domain, including the membrane electrode assembly (MEA) and bipolar plates. The model is validated with experiments and can reasonably predict the maximum temperature and main temperature gradients in the stack. Large temperature variations are found between the cool incoming air flow and the hot bipolar plates and MEA, and in contrast to water-cooled fuel cells, significant temperature gradients are detected in the flow direction. Furthermore, the air velocity and in-plane thermal conductivity of the plate are found to play an important role in the thermal performance of the stack.  相似文献

A novel U-shape buried oxide lateral double diffused metal oxide semiconductor (LDMOS) is reported in this paper. The proposed structure features ionized charges in both sides of dielectric between source and gate region to enhance the breakdown voltage. The dielectric between drain and drift region affects on the breakdown voltage by adding a new peak in the electric field profile. Two dimensional simulation with a commercial software tool predicts significantly improved performance of the proposed device as compared to conventional LDMOS structures.  相似文献

In this study, a temperature-sensitive fabric with antibacterial properties was prepared by the formation of silver nanoparticles (AgNPs) on nonwoven poly (propylene) (PP) grafted with poly (N-iso-propylacrylamide) (PNIPAAm-PP). First, PNIPAAm was grafted onto corona-treated nonwoven PP. Afterwards, silver nanoparticles were synthesized on the temperature-sensitive hydrogel layer grafted to the surface of nonwoven PP by the reduction of silver ions (Ag+). Fourier transform infra-red spectroscopy confirmed the presence of PNIPAAm on the nonwoven PP. scanning electron microscopy-energy dispersive X-ray spectroscopy was used to investigate surface morphology and the presence of silver particles in the samples. Inductively coupled-plasma atomic emission spectroscopy revealed that the Ag content in Ag-functionalized PNIPAAm-PP was significantly higher than Ag-functionalized corona-treated PP with the same concentration of silver solution. Moreover, the results of the swelling rate experiment confirmed that PNIPAAm-PP maintained temperature-sensitive properties after functionalizing with Ag. The results showed that the formation of AgNPs with enhancement in antibacterial property was possible onto PNIPAAm-PP.  相似文献

The St. Lawrence River near Cornwall Ontario is affected by industrial mercury contamination of sediments and biota. It has been suggested that pulp and paper mill effluents may stimulate bacterial mercury methylation in these sediments, leading to contamination of aquatic biota. To test this hypothesis, we examined sediment–porewater dynamics of total mercury (THg) and methyl mercury (MeHg) at a site with high concentrations of wood fibers from a pulp and paper mill effluent and a nearby reference site with low wood fiber content. Dissolved phase THg (THgdiss) and MeHg (MeHgdiss) in porewater profiles showed that 38 ± 30.9% (SD) of THg in porewaters was in the methylated form regardless of wood fiber content. MeHgdiss and THgdiss concentrations were homogeneous between porewater and overlying water, indicating (a) that there is minimal net diffusion of MeHgdiss and THgdiss and (b) that redox-dependent processes such as sulfate reduction and Fe reduction were not associated with MeHgdiss distribution in these sediment profiles. MeHg and THg in solid phase showed coincident subsurface peaks at depths > 40 cm suggesting either that historical deposits of MeHg on particles (MeHg(p)) are preserved in deep sediments, or that Hg methylation is active in deep sediments.  相似文献

Ohmic‐assisted hydrodistillation (OAHD) is a combination of ohmic heating and distillation, and could be considered as a novel method for the extraction of essential oils. Major problems with traditional methods are long extraction time and lower purity of the extract. In this study, OAHD was applied as an economic and green technology for the extraction of essential oils from Zataria multiflora Boiss. (Shirazi thyme) aerial parts and the results were compared to those obtained from hydrodistillation (HD) as a conventional method. The results showed that OAHD method had the extraction time of 32.21 ± 2.59 min while this value was about 57.21 ± 2.33 min for hydrodistillation (HD). Scanning electron micrographs of thyme leaves showed a sudden eruption of essential oil glands and their surrounding area for OAHD samples. GC–MS analysis indicated that both methods of OAHD and HD can extract the same compounds.  相似文献
