ABSTRACT
This work aimed to evaluate the antioxidant activity of Lentinus edodes and Agaricus blazei mushrooms, as well as to measure the content of total phenolic compounds of mushroom extracts and verify the oxidative stability of soybean oil added with mushroom extracts that showed higher antioxidant activity according to the methods of the 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH•) free radical scavenging and the β‐carotene/linoleic acid system. According to the DPPH• method, the maximum antioxidant activity for L. edodes and A. blazei methanol extracts was 92.84 and 95.10%, respectively. For the β‐carotene/linoleic acid system, the highest values of antioxidant activity were 93.06% for L. edodes and 78.96% for A. blazei. The content of total phenolic compounds ranged from 7.21 to 128.44 and 26.67 to 134.67 mg gallic acid equivalent/g for L. edodes and A. blazei, respectively. The oxidative stability values provided by the Rancimat method indicated that the two varieties presented similar induction period of 19.85 h.PRACTICAL APPLICATIONS
Mushrooms present high content of antioxidant compounds that are capable of reducing the harmful effects of free radicals. Among the antioxidants present in mushrooms, phenolic compounds stand out as phenolic acids, flavonoids and tocopherols. To decrease or prevent lipid oxidation, synthetic antioxidants are used as food additives. Nevertheless, studies have revealed that these compounds are likely to pose risks to human health. The concern regarding the safety of synthetic antioxidants has motivated the search of natural antioxidants that can substitute them totally or partially.22.
A rapid methodology (less than 90 min) is described for the qualitative and quantitative analysis of 2,5-dimethyl-4-hydroxy-3 (W)-furanone (furaneol), furaneol-β-glucoside, and 2,5-dimethyl-4-methoxy-3 (2H)-furanone (mesifurane) in strawberries. These compounds were resolved by HPLC with a RP C18 column, using acetate buffer and methanol as binary mobile phase and detection at 280 nm, and confirmed by GC-MS. The aqueous extraction procedure gave an average recovery of these compounds from strawberries > 90%, with detection limits: 0.14 furaneol, 0.05 furaneol-β-glucoside, and 0.36 μg/rnL mesifurane. 相似文献

The anion (Cl?, NO?3, So2-4, PO3-4, OX2-) and cation (Na+, K+, NH4+) composition of raw, frozen and canned spinach samples was determined by Ion Chromatography (IC). In general, the levels of these ions were determined after typical food processing operations. Important for its health-related and nutritional point of view is the observation that nitrate levels decreased by about 50% with losses of 15% in total organic nitrogen after typical commercial processing methods. 相似文献

Sugar is a determinant for the quality of mangoes, but information about its accumulation is scarce. Although starch can contribute to sugar production during ripening, not much is known about the enzymes involved. This work presents the changes in carbohydrate and enzymes during the development and ripening of Keitt mangoes. Starch disappearance was concomitant to a fivefold increase of sucrose, the most abundant sugar of the ripe fruits. The activities of α-amylase, β-amylase, phosphorylase and isoamylase were detected in the pulp, and while α-amylase increased parallel to the starch content, β-amylase presented a 20-fold increase during ripening. On the other hand, high phosphorylase activity was observed when fruits were still accumulating starch, and lowered during ripening. Isoamylase was detected during development and increased slightly during ripening, which would be in agreement to the expected role for isoamylases as acting on both subproduct of starch synthesis and degradation.
The present work reinforces our previous works that Keitt mangoes do not ripen when attached to the tree. Detrimental immune response has a crucially important role in the development and progression of inflammatory eye diseases. Inflammatory mediators and proteolytic enzymes released by activated immune cells induce serious injury of corneal epithelial cells and retinal ganglion cell which may result in the vision loss. Mesenchymal stem cells (MSCs) are regulatory cells which produce various immunosuppressive factors that modulate phenotype and function of inflammatory immune cells. However, several safety issues, including undesired differentiation and emboli formation, limit clinical use of MSCs. MSC-derived exosomes (MSC-Exos) are nano-sized extracellular vesicles which contain all MSC-derived immunoregulatory factors. Intraocular administration of MSC-Exos efficiently attenuated eye inflammation and significantly improved visual acuity in experimental animals without causing any severe side effects. As cell-free product, MSC-Exos addressed all safety issues related to the transplantation of MSCs. Therefore, MSC-Exos could be considered as potentially new remedy for the treatment of inflammatory eye diseases which efficacy should be explored in up-coming clinical trials. 相似文献

Albacore tuna (Thunnus alalunga) was steamed and canned in soy bean oil and sterilized at 115°C for 55 or 90 min. Proximate composition, total amino acid and available lysine content were determined during different phases of the process. Water and protein were lost in all phases and fat content increased. There was a decrease in available lysine during cooking but no loss in total amino acids. Amaranth lectin from Amaranthus cruentus seeds was isolated, purified and partially characterized. The purification method used was based on its ability to interact with fetuin. Effects of temperature, pH and buffers and concentration were determined by measurement of lectin hemagglutination activity. Amaranth lectin biological activity was best maintained at temperatures between 4 and 30°C and pH's above or below 5. It was possible to store amaranth lectin at 4°C in acetate buffers, pH 4.8, for prolonged periods and to concentrate it 10-fold by ultrafiltration with only 18% loss of activity. The rheological behavior of an aqueous solution composed of 65% sucrose and 0.1% CMC was experimentally determined from -10C to 50C using a rotational viscometer equipped with coaxial cylinders. The model solution behaved as pseudoplastic fluid, represented by the power-law model. Flow behavior and consistency indices determined at -10.1, 0.5, 9.8, 19.0, 30.1 and 50. OC, showed values between 0.79 to 0.86 and 0.15 to 10.22 Pa. sn , respectively. The effect of temperature on the rheological parameters was represented by Arrhenius-type relationships, with R2 ≥ 0.97. They were compared to the rheological behavior of a concentrated orange juice with 65° Brix and 7% pulp content.
