The drying of raw cured ham proceeds under natural convection. The aim of this work was to determine the effect of external resistance on the drying of frozen and salted Biceps femoris and Semimembranosus. Natural convection drying kinetics were obtained at 5, 10, 15, and 20°C. The De values obtained neglecting external resistance were underestimated. Activation energy, Ea, agreed with literature results. The use of a De value from literature and a calculated Ea allowed us to calculate De for the temperatures used in this study. The mass transfer coefficient (k) was estimated from a model taking external resistance and the calculated De into account. The k values agreed with the ones in literature; thus, under natural convection conditions, external mass transfer resistance must be considered. 相似文献

Generation of well-dispersed, well-characterized fibers is important in toxicology studies. A vortex-tube shaking method is investigated using glass fibers to characterize the generated aerosol. Controlling parameters that were studied included initial batch amounts of glass fibers, preparation of the powder (e.g., preshaking), humidity, and airflow rate. Total fiber number concentrations and aerodynamic size distributions were typically measured. The aerosol concentration is only stable for short times (t < 10 min) and then falls precipitously, with concomitant changes in the aerosol aerodynamic size distribution; the plateau concentration and its duration both increase with batch size. Preshaking enhances the initial aerosol concentration and enables the aerosolization of longer fibers. Higher humidity strongly affects the particle size distribution and the number concentration, resulting in a smaller modal diameter and a higher number concentration. Running the vortex shaker at higher flow rates (Q > 0.3 lpm), yields an aerosol with a particle size distribution representative of the batch powder; running the vortex shaker at a lower aerosol flow rate (Q ~ 0.1 lpm) only aerosolizes the shorter fibers. Abstract A new type of resin wool filter (RWF) that persists the load with oil droplets was developed by Kimura and colleagues. In the present work, the initial collection performances of RWF (A and C) are measured for various particle sizes (0.03, 0.05, 0.1, 0.15, 0.2, 0.25, and 0.3 μm) with different charging states at various filtration velocities (0.05, 0.1, 0.15, and 0.3 m/s). As a result, it is shown that the present RWF impregnated with PTBP resin can attain high collection efficiency (99.999% at filtration velocity of 0.05 m/s) with a pressure drop of less than 30 Pa. The charge density is estimated by applying prediction equations of single-fiber collection efficiencies of electret filters with a dipolar charge distribution because no other prediction equation for RWF are available at present. The experimental single-fiber efficiencies for uncharged particles are successfully predicted by assigning a single value of charge density in the prediction equations for dipolar fibers. The estimated charge density on RWF fibers is 2.1 × 10? 4 C/m2, which is much higher than those of conventional electret filter media. A large number of data on mobility and mass have been newly obtained or reanalyzed for clusters of a diversity of materials, with the aim of determining the relation between electrical mobility (Z) and mass diameter d m = (6m/ π ρ ) 1/3 (m is the particle mass and ρ the bulk density of the material forming the cluster) for nanoparticles with d m ranging from 1 nm to 6.5 nm. The clusters were generated by electrospraying solutions of ionic liquids, tetra-alkyl ammonium salts, cyclodextrin, bradykinin, etc., in acetonitrile, ethanol, water, or formamide. Their electrical mobilities Z in air were measured directly by a differential mobility analyzer (DMA) of high resolution. Their masses m were determined either directly via mass spectrometry, or assigned indirectly by first distinguishing singly (z = 1) and doubly (z = 2) charged clusters, and then identifying monomers, dimers, … n-mers, etc., from their ordering in the mobility spectrum. Provided that d m > 1.3 nm, data of the form d m vs. [z(1+m g /m) 1/2 /Z)] 1/2 fall in a single curve for nanodrops of ionic liquids (ILs) for which ρ is known (m g is the mass of the molecules of suspending gas). Using an effective particle diameter d p = d m + d g and a gas molecule diameter d g = 0.300 nm, this curve is also in excellent agreement with the Stokes-Millikan law for spheres. The diffusion coefficient (D) values of tert‐butyloxycarbonyl‐glycine, tert‐butyloxycarbonyl‐L ‐tryptophan, tert‐butyloxycarbonyl‐L ‐phenylalanine (Boc‐Phe), and 9‐fluorenylmethoxycarbonyl‐L ‐phenylalanine in Merrifield polystyrene (MPS) gels, poly(ethylene glycol)‐grafted polystyrene (PEG–PS) gels, and crosslinked ethoxylate acrylate (CLEAR) gels, as used in solid‐phase peptide synthesis, were determined by the pulsed‐field‐gradient spin‐echo 1H‐NMR method. From these experimental results, it was found that the amino acids in MPS gels, PEG–PS gels, and CLEAR gels with N,N‐dimethylformamide‐d7 (DMF‐d7) as a solvent had multidiffusion components within a measurement timescale of 10 ms. The D value of Boc‐Phe in polystyrene gels (1% divinylbenzene crosslinked) with tetrahydrofuran‐d8 was much larger than that in the same gels with DMF‐d7. Furthermore, the required time in which an amino acid transferred from a reactive site to a reactive site was estimated, within which the solvents and amino acids in the polymer supports diffused in the swollen beads.© 2003 Wiley Periodicals, Inc. Members of the microRNA-29 (miR-29) family directly target the DNA methyltransferases, DNMT3A and DNMT3B. Disturbances in the expression levels of miR-29 have been linked to tumorigenesis and tumor aggressiveness. Members of the miR-29 family are currently thought to repress DNA methylation and suppress tumorigenesis by protecting against de novo methylation. Here, we report that members of the miR-29 family repress the activities of DNA methyltransferases and DNA demethylases, which have opposing roles in control of DNA methylation status. Members of the miR-29 family directly inhibited DNA methyltransferases and two major factors involved in DNA demethylation, namely tet methylcytosine dioxygenase 1 (TET1) and thymine DNA glycosylase (TDG). Overexpression of miR-29 upregulated the global DNA methylation level in some cancer cells and downregulated DNA methylation in other cancer cells, suggesting that miR-29 suppresses tumorigenesis by protecting against changes in the existing DNA methylation status rather than by preventing de novo methylation of DNA. 相似文献

Fully-hydrolyzed poly (vinyl alcohol) (PVA) nanofibers were successfully electrospun from aqueous solutions of PVA in the presence of acetic acid. A continuous spinning of uniform PVA nanofibers proceeded by the addition of acetic acid due to the changes of electronic conductivity and surface tension of aqueous solution of PVA. When cross-linking agent 1 was added to aqueous solution of PVA and subsequent thermal treatment of as-spun nanofibers, chemically cross-linked PVA nanofibers were achieved to resist disintegration in contact with hot water and the tensile mechanical property of nanofiber non-wovens was greatly improved by the formation of cross-linking points. Magnetite was deposited uniformly onto the hydrophilic surface of cross-linked PVA nanofibers and the resulted nanofibers decorated with magnetite showed a magnetic responsiveness. The deposition of magnetite on the PVA nanofibers can generate self-standing magnetic non-wovens. 相似文献

The stabilities of a commercial diacylglycerol‐rich oil (DAG) and a salad oil (TAG) that had been prepared from a mixture of rapeseed and soybean oils were compared while frying potatoes at 180 °C for 3 h. The representative chemical and physical characteristics of the oils were assessed before and after frying, together with the amount of volatile aldehydes in the exhaust of frying. Among the deterioration indications, the carbonyl value, polymer content, and residual polyunsaturated fatty acid content were similar and not significantly different between the TAG and DAG. On the other hand, the characteristics relating to free fatty acids, i.e. the acid value and emission of chemiluminescence at 100 °C, were greater and the smoke and flash points were lower in the DAG than in the TAG. An irritating odor was generated from the DAG after 1 h of frying and got stronger as frying continued. These results suggested that DAG more easily forms free fatty acids under frying conditions than TAG. 相似文献

Around 3000 proteins are thought to bind zinc in vivo, which corresponds to ~10% of the human proteome. Zinc plays a pivotal role as a structural, catalytic, and signaling component that functions in numerous physiological processes. It is more widely used as a structural element in proteins than any other transition metal ion, is a catalytic component of many enzymes, and acts as a cellular signaling mediator. Thus, it is expected that zinc metabolism and homeostasis have sophisticated regulation, and elucidating the underlying molecular basis of this is essential to understanding zinc functions in cellular physiology and pathogenesis. In recent decades, an increasing amount of evidence has uncovered critical roles of a number of proteins in zinc metabolism and homeostasis through influxing, chelating, sequestrating, coordinating, releasing, and effluxing zinc. Metallothioneins (MT) and Zrt- and Irt-like proteins (ZIP) and Zn transporters (ZnT) are the proteins primarily involved in these processes, and their malfunction has been implicated in a number of inherited diseases such as acrodermatitis enteropathica. Studies were conducted with used frying oils in a flat membrane batch cell using five different types of polymeric membranes
to decrease the soluble degradation products. During membrane processing, triglycerides permeated preferentially compared
to the majority of the polar compounds including oxidation products, polymers, and color compounds. Two of the composite membranes,
NTGS-AX and NTGS-2200, selectively rejected polar compounds and oxidation products to the extent of 25–48% and 24–44% respectively.
The reduction in Lovibond color values (5R+Y) was in the range of 83–93%. The viscosity of the used frying oil was reduced
to the extent of 22%. The composite membranes were effective in reducing the soluble impurities, as well as insoluble particulates,
without causing any undesirable changes to the oil. The membrane process appears to improve the life of used frying oils and
does not have the disadvantages associated with the active filtration systems, however, for commercial application the permeate
