ABSTRACT: The effect of inoculation of the "salchichón" (dry fermented sausage) surface with an atoxigenic, proteolytic, and lipolytic strain of Mucor racemosus and/or the addition of a intracellular extract of the same mold on the ripening process was studied. Four batches of salchichón were manufactured: control, superficially inoculated, added with intracellular extract, and a combination of both treatments. Superficial mold modified the amino and free fatty acid contents, volatile compounds, and sensory properties. Intracellular extract degraded free amino acids, producing a rise in ammonia and volatile compounds. Both treatments combined improved significantly the sensory properties, which were given scores higher than control sausages at the end of ripening. 相似文献

The role of the ratio (PEG:PPG) of a triblock copolymer (PPG‐b‐PEG‐b‐PPG) in the cure kinetics,miscibility and thermal and mechanical properties in an epoxy matrix 下载免费PDF全文
The aim of this study was to evaluate the role of different poly(ethylene glycol):poly(propylene glycol) (PEG:PPG) molar ratios in a triblock copolymer in the cure kinetics, miscibility and thermal and mechanical properties in an epoxy matrix. The poly(propylene glycol)‐block‐poly(ethylene glycol)‐block‐poly(propylene glycol) (PPG‐b‐PEG‐b‐PPG) triblock copolymers used had two different molecular masses: 3300 and 2000 g mol?1. The mass concentration of PEG in the copolymer structure played a key role in the miscibility and cure kinetics of the blend as well as in the thermal–mechanical properties. Phase separation was observed only for blends formed with the 3300 g mol?1 triblock copolymer at 20 wt%. Concerning thermal properties, the miscibility of the copolymer in the epoxy matrix reduced the Tg value by 13 °C, although a 62% increase in fracture toughness (KIC) was observed. After the addition of PPG‐b‐PEG‐b‐PPG with 3300 g mol?1 there was a reduction in the modulus of elasticity by 8% compared to the neat matrix; no significant changes were observed in Tg values for the immiscible system. The use of PPG‐b‐PEG‐b‐PPG with 2000 g mol?1 reduced the modulus of elasticity by approximately 47% and increased toughness (KIC) up to 43%. Finally, for the curing kinetics of all materials, the incorporation of the triblock copolymer PPG‐b‐PEG‐b‐PPG delayed the cure reaction of the DGEBA/DDM (DGEBA, diglycidyl ether of bisphenol A; DDM, Q3‐4,4′‐Diaminodiphenylmethane) system when there is miscibility and accelerated the cure reaction when it is immiscible. All experimental curing reactions could be fitted to the Kamal autocatalytic model presenting an excellent agreement with experimental data. The aim of this study was to compare some of the properties of native and extruded amaranth flour obtained under mild and severe extrusion conditions. The chemical composition of the flours was similar. Flours obtained by both extrusion processes presented high solubility in water, low values of L∗ (luminosity) and an absence of endothermic peak on the DSC method. Water absorption, retrogradation tendency, final viscosity and the viscous behavior by rheology analysis were also studied. The results indicate that extruded flours have a good potential as an ingredient for food exposed to heat treatment at a high temperature and mechanical shear, for use in instant meal products. On the other hand, original flour properties are comparable to those of amaranth starch, which exhibits similarly high quality paste stability, low solubility in water, and elastic behavior, and could be used as a substitute for raw flour in a range of food formulas. 相似文献

Carbon emissions related to human activities have been significantly contributing to the elevation of atmospheric [CO2] and temperature. More recently, carbon emissions have greatly accelerated, thus much stronger effects on crops are expected. Here, we revise literature data concerning the physiological effects of CO2 enrichment and temperature rise on crop species. We discuss the main advantages and limitations of the most used CO2-enrichment technologies, the Open-Top Chambers (OTCs) and the Free-Air Carbon Enrichment (FACE). Within the conditions expected for the next few years, the physiological responses of crops suggest that they will grow faster, with slight changes in development, such as flowering and fruiting, depending on the species. There is growing evidence suggesting that C3 crops are likely to produce more harvestable products and that both C3 and C4 crops are likely to use less water with rising atmospheric [CO2] in the absence of stressful conditions. However, the beneficial direct impact of elevated [CO2] on crop yield can be offset by other effects of climate change, such as elevated temperatures and altered patterns of precipitation. Changes in food quality in a warmer, high-CO2 world are to be expected, e.g., decreased protein and mineral nutrient concentrations, as well as altered lipid composition. We point out that studies related to changes in crop yield and food quality as a consequence of global climatic changes should be priority areas for further studies, particularly because they will be increasingly associated with food security. 相似文献

Mobile robots and smart environments are two areas of research that can easily profit from each other. Smart environments, which are spaces unobtrusively equipped with sensors and actuators, providing ambient services to the people living within. Mobile robots inside those smart environments can use the existing infrastructure to increase their performance while decreasing the cost of local sensor systems. On the other side, evaluation of ambient services is often a laborious task. This work presents an approach that simplifies the evaluation by making use of two frameworks from robotics to perform tests in simulated smart environments. A method based on the language as action principle is used to extract realistic behavior of people living in real-world smart environments. Using this data, many different scenarios with varying configurations (different floor layouts, numbers and types of sensors, different number of people and pets) can easily be simulated and the performance of the ambient services evaluated. 相似文献

Networks-on-Chip (NoC) is an interesting option in design of communication infrastructures for embedded systems. It provides a scalable structure and balanced communication between the cores. Parallel applications that take advantage of the NoC architectures, are usually are communication-intensive. Thus, a big deal of data packets is transmitted simultaneously through the network. In order to avoid congestion delays that deteriorate the execution time of the implemented applications, an efficient routing strategy must be thought of carefully. In this paper, the ant colony optimization paradigm is explored to find and optimize routes in a mesh-based NoC. The proposed routing algorithms are simple yet efficient. The routing optimization is driven by the minimization of total latency during packets transmission between the tasks that compose the application. The presented performance evaluation is threefold: first, the impact of well-known synthetic traffic patterns is assessed; second, randomly generated applications are mapped into the NoC infrastructure and some synthetic communication traffics, that follow known patterns, are used to simulate real situations; third, sixteen real-world applications of the E3S and one specific application for digital image processing are mapped and their execution time evaluated. In both cases, the obtained results are compared to those obtained with known general purpose algorithms for deadlock free routing. Introduction: Obesity in asthmatic patients has important relationships with asthma control, pulmonary function, and quality of life. The objective of this study was to conduct a systematic review of the literature on the effect of diet on asthma management in adults. Methods: We searched PubMed, Embase, and Scopus (January 1948–October 2014) for randomized clinical trials that evaluated the effects of diet in adults with asthma. Results: Of 12,215 studies identified, 21 were included. A reduction in weight of at least 7.5% from baseline as a result of caloric restriction can be beneficial for improving disease control, quality of life, and pulmonary function in obese patients with asthma. A dietary pattern rich in foods with potential antioxidant effect had an impact in improving asthma control, but with little clinical significance. Studies involving antioxidant supplementation showed improvements in asthma control with magnesium supplementation and less decline in lung function with vitamin C supplementation. Studies of fatty acid supplementation demonstrated effects on weight loss and improvement of asthma control and lung function. Studies of supplementation with propolis and caffeine reported significant increases in FEV1. Conversely, studies of high dietary salt intake reported greater declines in lung function. Conclusions: The evidence shows that, for obese adults with asthma, the best dietary intervention seems to be caloric restriction, regardless of specific dietary components. 相似文献
