In the cheese industry, whey, which is rich in lactose and proteins, is underutilized, causing adverse environmental impacts. The fractionation of its components, typically carried out through filtration membranes, faces operational challenges such as membrane fouling, significant protein loss during the process, and extended operating times. These challenges require attention and specific methods for optimization and to increase efficiency. A promising strategy to enhance industry efficiency and sustainability is the use of enzymatic pre-treatment with the enzyme transglutaminase (TGase). This enzyme plays a crucial role in protein modification, catalyzing covalent cross-links between lysine and glutamine residues, increasing the molecular weight of proteins, facilitating their retention on membranes, and contributing to the improvement of the quality of the final products. The aim of this study is to review the application of the enzyme TGase as a pretreatment in whey protein filtration. The scope involves assessing the enzyme's impact on whey protein properties and its relationship with process performance. It also aims to identify both the optimization of operational parameters and the enhancement of product characteristics. This study demonstrates that the application of TGase leads to improved performance in protein concentration, lactose permeation, and permeate flux rate during the filtration process. It also has the capacity to enhance protein solubility, viscosity, thermal stability, and protein gelation in whey. In this context, it is relevant for enhancing the characteristics of whey, thereby contributing to the production of higher quality final products in the food industry. © 2023 Society of Chemical Industry. 相似文献

Porous silicon photodetectors obtained by electrochemical etching of p-type non-polished crystalline silicon were studied. A metal-porous silicon structure was used to obtain the rectifying behavior. The geometry of the metal layer deposited by thermal evaporation on the porous zone was modified with different masks fabricated using a photolithographic method. The samples obtained under different anodization conditions were characterized by PL. The sample that showed the best intensity in photoluminescence, centered on 675 nm, was selected and five samples obtained under these conditions were prepared to compare the difference in the photoresponse because of the geometry of the evaporated metal layer. The responsivities obtained show us an important difference between the devices and allow us to propose a specific geometrical pattern to obtain a better response in this kind of devices. 相似文献

In this study, formulations of cassava starch and poly(butylene adipate-co-terephthalate) flexible films were developed, with glycerol, coconut nanocellulose, annatto, and citric acid in different concentrations, as well as the effectiveness of the selected materials in fresh-cut mangoes storage was evaluated. The tensile strength of the different formulations varied from 1.90 (E4) to 6.65 MPa (E3c), and the strain varied from 206.31 (E1c) to 278.41% (E8); this variation was dependent on the percentage of the polymer matrix incorporated. The aw values of the formulations ranged from 0.396 (E2) to 0.569 (E3c). The Formulations E4 and E7 (with additives) presented good properties and were selected to condition mangoes. The micrographs of these films showed regions of micropores that can facilitate the diffusion of water from the packaged product to the surface, allowing decreases in moisture and aw, which is associated with higher color maintenance during fruit storage. E7 presented better barrier properties than E4 (lower values of WVP and water solubility) which may have influenced in a positive way to maintain the stability of the package in the studied period. Fructooligosaccharides have been isolated from roots and leaves of Stevia rebaudiana, by hot aqueous extraction, followed by precipitation with ethanol. Their structure has been determined using methylation and NMR analysis, MALDI-TOF, and ESI-MS. Fructooligosaccharides contained almost exclusively (2→1)-linked β-fructofuranosyl, with terminal α-glucopyranosyl and β-fructofuranosyl units. MALDI-TOF and ESI-MS analyses showed the wide range of degree of polymerisation (DP) present in various extracts. From roots and leaves, three different fractions gave profiles of homologous series, with DPs ranging up to 17 with MALDI-TOF and 19 using ESI-MS. These inulin-type fructooligosaccharides were the major component of extracts from S. rebaudiana roots and significant components from the leaves. 相似文献

The Dynamic Cone Penetrometer (DCP) is a device that is used in the construction industry for the assessment of in situ soil compaction quality. Over the past few decades, numerous correlations have been developed between the DCP test results and soil strength and stiffness parameters. This paper proposes a comprehensive set of criteria and recommendations for quality control (QC) of compacted subgrade that take into account the inherent statistical variability of DCP test results. For the development of the QC criteria, a new statistical methodology is used to extract representative test values from the raw field DCP test data. In order to use the proposed QC criteria, soils are first classified into two broad categories (fine-grained and coarse-grained) depending on their fabric and response to compaction efforts. Test results indicate that (i) for fine-grained soils, the DCP test values have good correlation with the plasticity index (PI), which is indicative of the type and amount of clay content of the soil and (ii) for coarse-grained soils, the DCP test values have good correlation with the optimum water content of the soil, which is directly related to its in situ density. DCP blow count correlation equations are presented for both soil categories. Recommendations for field DCP testing and data analysis are also provided to highlight the significance of the statistical distribution of the DCP test results in QC testing of compacted subgrade. 相似文献

Composite films in coacervation condition offer an alternative to change properties of protein-based films, and they present potential applications such as inclusion, stabilization, and release of bioactive compounds in foods. Maximum interactions between soy protein isolate (SPI) (5%) and high methoxyl pectin (PEC) (0.5, 1, 1.5, and 2%), by zeta potential analysis, are found at a pH of 3. The transparency of the SPI films is lost at this pH. When PEC is added to SPI films, the elasticity, solubility, and permeability to water vapor are not significantly altered, but the tensile strength increases. Permeabilities to oxygen are higher for low PEC contents, but as PEC is added, their values are typical of SPI films produced at a pH of 11. A homogeneous structure is found at the higher PEC concentrations. The interactions of PEC–SPI can be useful to tailor films and coatings for applications such as to carry and protect substances of interest. © 2019 Wiley Periodicals, Inc. J. Appl. Polym.
