The effects of adding sodium hydroxide (NaOH), separately or in combinastion with various inorganic phosphates, on meat emulsion characteristics were studied. In comparing the addition of either NaPP or NaOH, 0.075% NaOH resulted in a higher raw emulsion pH and greater solubilized protein than 0.30% NaPP, but NaPP resulted in a more stable emulsion. The combination of 0.075% NaOH and 0.30% NaPP resulted in a soluble protein level less than when the ingredients were added individually and only slightly higher than if neither were present. The addition of NaOH (at 1 part NaOH to 4 parts phosphate) decreased cooked yields. With NaAPP and NaPP, NaOH reduced yields below that of the control. 相似文献

The objective of this study is to determine the conditions under which the inclusions present in liquid steel can act as heterogeneous
nucleants for solidification. In order to study the factors that define the undercooling of a given metal/oxide couple, the
undercooling of a pure iron sessile droplet in contact with Al2O3, ZrO2, and MgO substrates was measured under controlled oxygen partial pressures by observing droplet recalescence. The results
showed that the undercooling of iron, in contact with a particular substrate, did not have a unique value, but was significantly
affected by the oxygen content on the gas phase. For oxygen partial pressures between 10−21 and 10−19, the undercooling of iron on ZrO2 substrates was stable and around 290 °C. In the same range of oxygen partial pressure, the undercooling of iron on MgO substrates
remained below 100 °C due to the low stability of this oxide. At lower oxygen contents, substrate decomposition might be the
cause for the observed drop in the undercooling of iron on ZrO2 substrates to below 100 °C. The undercooling also decreased for increasing oxygen content as verified when the gas was changed
from gettered Ar/Ar-H2 to CO/CO2 mixtures. The variation in undercooling was related to the wetting of the substrate by the liquid metal, where the deep undercooling

Quantitative texture analysis is used to study texture formation in an MA2-1 magnesium alloy subjected to axisymmetric upsetting at temperatures of 250–450°C and strain rates of 10?4–100 ?1. The deformed structure is examined by optical microscopy, and the results obtained are used to plot the structural-state diagram of the alloy after 50% upsetting. As electrochromic device (ECD) emerges into the market, the necessity of cost reduction via high-throughput manufacturing is unavoidable. Inorganic monolithic ECD has compatibility in its manufacturing steps, allows continuous processing and hence low-cost ECD. Removing noise from audio signals requires a nondiagonal processing of time-frequency coefficients to avoid producing ldquomusical noise.rdquo State of the art algorithms perform a parameterized filtering of spectrogram coefficients with empirically fixed parameters. A block thresholding estimation procedure is introduced, which adjusts all parameters adaptively to signal property by minimizing a Stein estimation of the risk.
