Determination of biogenic amines in sucuk   总被引:1,自引:0,他引:1  
The biogenic amines content of sucuk (Turkish dry fermented sausage) were determined on 30 samples obtained from retail markets and butchers in Turkey. Also, pH and aw values, microbiological properties, and NPN levels of these samples were analyzed. The most important biogenic amines were tyramine (range 2.4–676 mg/kg), followed by putrescine varied from not detected to 364 mg/kg. Histamine content was under 50 mg/kg in 80% of the samples while it was over 100 mg/kg in only one sample. Tryptamine was detected in 16 of 30 samples in the range of 1.2–82.3 mg/kg.

Lactic acid bacteria, Micrococcus/Staphylococcus and Enterobacteriaceae counts of samples varied from 2.84 to 8.85 log cfu/g, <2.00 to 6.74 log cfu/g, and <2.00 to 5.04 log cfu/g, respectively. pH values were varied between 4.53 and 6.29 while water activity (aw) were measured to be between 0.761 and 0.960. NPN values were determined to be between 1.47% and 4.10%. Generally, total amine content was high in samples that had high NPN levels.  相似文献

Polycrystalline Cu–Al–Ni–Fe-based shape memory alloys with different chemical composition were produced in an arc-melting furnace under an argon atmosphere. Homogenized and aged specimens were prepared for multiple analyses. The temperatures of reversible martensitic transformations, namely As, Af, Ms, Mf, Amax and ΔH enthalpy values were determined by a DSC device. The phase transition analysis from the room temperature to 850°C was undertaken by DTA. To characterize the lattice structure, an XRD analysis was conducted, the results of which were confirmed by microstructure images obtained from optical microscope observations.  相似文献

The historic Hagia Sophia in Istanbul, which held the record as the world's largest domed building for some 800 years, is analysed with a finite element formulation, including the effects of thickness shear deformations and the term z/Rz/R, to understand its structural behaviour under the action of static loading. The structure, including all essential elements of the system, is modelled by using the same curved trapezoidal finite element with 40 degrees of freedom. Its structural behaviour and its structural load carrying system are demonstrated and the results are compared with those obtained earlier and also with those observed at the structure.  相似文献

Polyurethane nanocomposites are versatile engineering polymers with unique properties. In this study, nano hexagonal boron nitride containing thermoplastic polyurethane elastomers were prepared via melt blending and hot‐pressing techniques. The nanocomposites were characterized using Fourier transform infrared, differential scanning calorimetry, thermal gravimetric analysis, tensile tests, and thermal conductivity measurements. The surface morphology of the TPU/h‐BN composites was characterized by scanning electron microscopy. The optical properties of the composites were determined by UV transmittance measurements and as the amount of h‐BN increased, optical transparencies decreased dramatically. Nanocomposites displayed higher E‐modulus values and lower elongation at break values than the pure TPU elastomer. Char yields of TPUs increased with increasing h‐BN percentage. A mechanical behaviour of random fibrous networks is predominantly governed by their microstructure. This study examines the effect of microstructure on macroscopic deformation and failure behaviour of random fibrous networks and its practical implication for optimisation of its structure by using finite-element simulations. A subroutine-based parametric modelling approach—a tool to develop and characterise random fibrous networks—is also presented. Here, a thermally bonded polypropylene nonwoven fabric is used as a model system. Its microstructure is incorporated into the model by explicit introduction of fibres according to their orientation distribution in the fabric. The model accounts for main deformation and damage mechanisms experimentally observed and provides the meso- and macro-level responses of the fabric. The suggested microstructure-based approach identifies and quantifies the spread of stresses and strains in fibres of the network as well as its structural evolution during deformation and damage. Its simulations also predict a continuous shift in the distribution of stresses due to structural evolution and progressive failure of fibres.  相似文献

In this study, effect of the post-deposition thermal annealing on copper oxide thin films has been systemically investigated. The copper oxide thin films were chemically deposited on glass substrates by spin-coating. Samples were annealed in air at atmospheric pressure and at different temperatures ranging from 200 to 600°C. The microstructural, morphological, optical properties and surface electronic structure of the thin films have been studied by diagnostic techniques such as X-ray diffraction (XRD), Raman spectroscopy, ultraviolet–visible (UV–VIS) absorption spectroscopy, field emission scanning electron microscopy (FESEM), atomic force microscopy (AFM), and X-ray photoelectron spectroscopy (XPS). The thickness of the films was about 520 nm. Crystallinity and grain size was found to improve with annealing temperature. The optical bandgap of the samples was found to be in between 1.93 and 2.08 eV. Cupric oxide (CuO), cuprous oxide (Cu2O) and copper hydroxide (Cu(OH)2) phases were observed on the surface of as-deposited and 600 °C annealed thin films and relative concentrations of these three phases were found to depend on annealing temperature. A complete characterization reported herein allowed us to better understand the surface properties of copper oxide thin films which could then be used as active layers in optoelectronic devices such as solar cells and photodetectors.  相似文献

Vertically aligned silicon nanowire (Si NW) arrays have been fabricated over large areas using an electroless etching (EE) method, which involves etching of silicon wafers in a silver nitrate and hydrofluoric acid based solution. A detailed parametric study determining the relationship between nanowire morphology and time, temperature, solution concentration and starting wafer characteristics (doping type, resistivity, crystallographic orientation) is presented. The as-fabricated Si NW arrays were analyzed by field emission scanning electron microscope (FE-SEM) and a linear dependency of nanowire length to both temperature and time was obtained and the change in the growth rate of Si NWs at increased etching durations was shown. Furthermore, the effects of EE parameters on the optical reflectivity of the Si NWs were investigated in this study. Reflectivity measurements show that the 42.8% reflectivity of the starting silicon wafer drops to 1.3%, recorded for 10 μm long Si NW arrays. The remarkable decrease in optical reflectivity indicates that Si NWs have a great potential to be utilized in radial or coaxial p-n heterojunction solar cells that could provide orthogonal photon absorption and enhanced carrier collection.  相似文献

The Hagia Sophia, a 6th century masonry edifice in Istanbul, is analysed with a linear finite element model including thickness shear deformations, the terms z/R, and rotatory inertia effects with consistent mass matrix to provide insight to the structure's behaviour under earthquake loading. The structure, including the primary main dome and supporting system, is modelled by using a two-dimensional model composed of eight-node shell element. The dynamic characteristics of the system are obtained by using the Wilson-θ method, step-by-step integration method, and also by applying the available ground motion data to understand its general structural behaviour in the future earthquakes.  相似文献

The effect of dried-ground Urtica dioica L. on microbiological characteristics of Turkish dry-fermented sausage (sucuk) were investigated. Dried-ground Urtica dioica L. was added to sucuk batters by the rate of 0%, 1%, 3% and 5%, and microbiological analysis were made on the 0, 3, 7, 10 and 14 days of ripening period.

According to the results, both the level of Urtica dioica L. and ripening time had a significant effects on the total aerobic mesophylic bacteria, lactic acid bacteria, Micrococcus/Staphylococcus, yeast-mould and Enterobacteriaceae counts (p<0.01). It was determined that the interactions ripening time × the levels of Urtica dioica L. had a significant effects on the counts of total aerobic mesophylic bacteria, lactic acid bacteria, Micrococcus/Staphylococcus, yeast-mould and Enterobacteriaceae (p<0.01). Enterobacteriaceae count were also found to be under the detectable level (<100 cfu/g) in sucuks (in day 14 of ripening) containing 3% and 5% Urtica dioica L.  相似文献

The CO + NO reaction is one of the profoundly important reactions that take place on Pd-based industrial three-way catalysts (TWC). In this review, we discuss results from polarization modulation infrared reflection absorption spectroscopy (PM-IRAS) and conventional IRAS experiments on CO adsorption, NO adsorption and the CO + NO reaction on a Pd(111) model catalyst surface within a wide range of pressures (10?6–450 Torr) and temperatures (80–650 K). It will be shown that these studies allow for a detailed understanding of the adsorption behavior of these species as well as the nature of the products that are formed during their reaction under realistic catalytic conditions. CO adsorption experiments on Pd(111) at elevated pressures reveal that CO overlayers exhibit similar adsorption structures as found for ultrahigh vacuum (UHV) conditions. On the other hand, in the case of the CO + NO reaction on Pd(111), the pressure dependent formation of isocyanate containing species' was observed. The importance of this observation and its effects on the improvement of the catalytic NO x abatement is discussed. The kinetics of the CO + NO reaction on Pd(111) were also investigated and the factors affecting its selectivity are addressed.  相似文献
