The anion (Cl?, NO?3, So2-4, PO3-4, OX2-) and cation (Na+, K+, NH4+) composition of raw, frozen and canned spinach samples was determined by Ion Chromatography (IC). In general, the levels of these ions were determined after typical food processing operations. Important for its health-related and nutritional point of view is the observation that nitrate levels decreased by about 50% with losses of 15% in total organic nitrogen after typical commercial processing methods.  相似文献

Alkaline noodle characteristics and flour gel properties made with one white and one red hard winter wheat cultivar were studied. The wheat was grown in four Oklahoma agricultural districts, with two to seven locations on each district. Both cultivars had similar flour protein content and overall raw dough sheet color stability ( ΔL * and Δb *) in three out of four agricultural districts. Cimarron and Oro Blanco showed differences in Δa *, Δb * and adhesiveness in the North Central agricultural district. Resilience values of cooked noodles from Oro Blanco were small, but significantly higher in the Central district. Higher flour peak viscosity was observed for Oro Blanco, plus a trend to lower polyphenol oxidase activity and higher elastic modulus than Cimarron.

PRACTICAL APPLICATIONS


Hard red winter wheat from the U.S.A. is used in the manufacturing of alkaline noodles in Asia. Color and texture characteristics are among the most important attributes that determine the quality of this type of noodles. Two types of winter wheat cultivars, red and white, were compared and their key properties (including gel properties) of importance in the international trade and noodle manufacturing are reported.  相似文献

Solubility and liquid-liquid phase equilibrium data have been determined for the ternary systems Water-Phosphoric Acid-Di-n-propyl Ether as supplied by Merck (with about 6.4% of the isomer propyl-isopropyl ether), and Water-Phosphoric Acid-Di-n-propyl Ether (rectified up to less than 1% of propyl-isopropyl ether), at 25 and 40°C The temperatures at which three liquid phases at equilibrium appeared were 28.0-28.2°C and 49.0-50.0°C, respectively. Data for the binodal curve have been obtained by analyzing the phosphoric acid percentage in both aqueous and organic phases. The plait point composition has been calculated by the Hand, Coolidge and Sherwood methods. The phosphoric acid extraction capacity of dibutyl ether has been compared to that of several solvents previously studied in the Alicante Chemical Engineering Division, showing that dibutyl ether has a phosphoric acid extraction capacity similar to propyl-ether and lower than isoamyl alcohol.  相似文献

Biomineralisation in the fleshy pericarp of berries of Vitis vinifera L. gives rise to crystals of two distinct forms, viz. raphides and druses, which are found in exocarp and endocarp cells respectively. Druses have generally been considered as crystalline aggregates of calcium oxalate. However, the organic moiety of raphide crystals has been commonly accepted as tartrate, although we have found no analytical data to support that assumption. We now present TEM and X-ray powder diffraction analysis data showing that raphide crystals of V. vinifera berries are composed of calcium oxalate monohydrate. This work also established ascorbic acid as the biosynthetic precursor of both oxalic and tartaric acids. When ascorbic acid labelled with 14C at position 1 was introduced into berries via the rachis, 21% and 52% of the added radiolabel was recovered as oxalic and tartaric acids respectively. Purified crystals from the radiolabelled grape berries contained approximately 20% of the original radioactivity, further confirming the role of ascorbic acid in oxalic acid biosynthesis. To our knowledge, this is the first evidence to be published on the formation of oxalic and tartaric acids from ascorbic acid via two distinct pathways operating within the same physiological entity (organ).  相似文献

This paper presents the summary application of an adaptive predictive control system (APCS) to the control and optimization of the processes in a coal power station. Aclar, a copolymer film with properties very similar to those of tissue culture plastic, is a versatile substrate to grow cells for light (including fluorescence) and electron microscopic applications in combination with both chemical fixation and cryoimmobilization. In this paper, we describe complete procedures to perform correlative light and electron microscopy using Aclar as substrate for the culture of cell monolayers to be finally embedded in plastic. First, we developed straightforward, efficient and flexible ways to mark the surface of the Aclar to create substrates to locate cells first at the light microscopy and then the electron microscopy level. All the methods enable the user to self‐design gridded Aclar pieces, according to the purpose of the experiments, and create a large number of substrates in a short time. Second, we confirmed that marked Aclar supports the normal growth and morphology of cells. Third, we validated the correlative light and electron microscopy procedure using Aclar. This validation was done for the high‐resolution analysis of endothelial cells using transmission electron microscopy and focused ion beam–scanning electron microscopy in combination with the use of fluorescence, phase contrast and/or bright field microscopy to map areas of interest at low resolution. The methods that we present are diverse, easy to implement and highly reproducible, and emphasize the versatility of Aclar as a cell growth substrate for diverse microscopic applications.  相似文献
