Middle Eastern Countries are experiencing the emergence of high volume production and retail marketing over traditional unit baking and retailing. This phenomenon has revealed a shortcoming in quality issues in Arabic flat bread (AFB) manufacture. Therefore, shelf-life extension and quality improvement are in demand to limit economic loss. Five improvers and a control (without any improver) were selected for improving shelf-life and quality of AFB. The improver treatments included: (1) sodium 9 stearoyl-2-lactylate (SSL), (2) monoglycreides (MG), (3) hydroxy propyl methyl cellulose gum (HPMC), (4) high-fructose corn syrup (HFCS), and (5) a combination of all the aforementioned improvers. The texture analysis data indicated that the presence of HFCS may act as a plasticizer through contributing to the longer tearing time. The other treatments exhibited a significant decline in tearing time throughout storage. The NIRS data indicated that after 3 days, the control was less fresh than AFB formulated with HFCS or improver combinations. The sensory evaluation of AFB exhibited that the improver combination significantly improved the quality attributes.  相似文献

The wide ranging marine sponge Hyrtios erecta is the source of the spongistatins, a new class of macrocyclic lactone antineoplastic agents. Continuation of a detailed investigation of cancer cell growth inhibitory (P388 lymphocytic leukemia) fractions (trace) from H. erecta has revealed the presence (10(-5) to 10(-7)% yield) of cytotoxic pentacyclic sesterterpenes. Employing P388 leukemia and human tumor cell line-guided bioassay techniques, two new moderate inhibitors of cancer cells were isolated and named sesterstatins 4 (1a, P388 ED50 4.9 micrograms/mL) and 5 (1b, DU-145 prostate GI50 1.9 micrograms/mL). Similar to other sesterterpenes, sesterstatin 5 inhibited growth of a Gram-positive bacterium. High field (500 MHz) 2-D NMR techniques were primarily employed for initial structural assignments, and structural assignments were confirmed by X-ray crystal structure determination of sesterstatin 4 (1a) and 5 (1b).  相似文献

Colon cancer (CC) is considered a high-risk cancer in developed countries. Its etiology is correlated with a high consumption of red meat and low consumption of plant-based foods, including whole grains. Sorghum bran is rich in polyphenols. This study aimed to determine whether different high-phenolic sorghum brans suppress tumor formation in a genetic CC rodent model and elucidate mechanisms. Tissue culture experiments used colorectal cancer cell lines SW480, HCT-116 and Caco-2 and measured protein expression, and protein activity. The animal model used in this study was APC Min+/mouse model combined with dextram sodium sulfate. High phenolic sorghum bran extract treatment resulted in the inhibition of proliferation and induced apoptosis in CC cell lines. Treatment with high phenolic sorghum bran extracts repressed TNF-α-stimulated NF-κB transactivation and IGF-1-stimulated PI3K/AKT pathway via the downregulation of β-catenin transactivation. Furthermore, high-phenolic sorghum bran extracts activated AMPK and autophagy. Feeding with high-phenolic sorghum bran for 6 weeks significantly suppressed tumor formation in an APC Min/+ dextran sodium sulfate promoted CC mouse model. Our data demonstrates the potential application of high-phenolic sorghum bran as a functional food for the prevention of CC.  相似文献

ABSTRACT:  The quality and sensory properties of fresh egg noodles formulated with total or partial replacement of egg substitute were investigated. Cooking quality parameters, texture, and color were measured at d 0, 15, and 30. Whole-egg noodles (control) had less cooking loss, firmer texture, and larger L* and b* values among days compared with noodles prepared with 100% soy flour or Pasta Power. Noodles prepared with Bipro exhibited the least cooking loss and water uptake, firmer texture, and larger L* and b* values among egg substitutes at 50% replacement. Firmness was greater and L* and b* values were larger for noodles from soy flour and Pasta Power egg substitutes when they replaced 50% of egg, rather than 100%. Sensory analysis revealed the roughness and flavor of cooked noodles, which were not significantly affected by the type of egg substitute. Noodles containing Pasta Power exhibited greater stickiness, whereas those containing soy flour were less firm. Including whole eggs in the formulations reduced stickiness. None of the egg substitutes studied could totally replace whole egg in the egg noodles without resulting in some loss of quality. But partial replacement of eggs resulted in noodles with similar physical and sensory properties.  相似文献

ABSTRACT:  Two experiments were conducted to assess the role of aqueous- and lipid-based antioxidants in preventing or limiting beef lumbar vertebrae marrow discoloration. In experiment 1, lumbar vertebrae ( n = 8 replications) were treated with either 0%, 1.5%, or 2.5% (wt/wt) of ascorbic acid or ascorbate-6-palmitate. Vertebrae color (visual and L*a*b*) was evaluated during 5 d of display at 1 °C in high-oxygen modified atmosphere packaging (MAP; 80% oxygen/20% carbon dioxide). Ascorbic acid treatments minimized ( P < 0.05) discoloration compared with ascorbate-6-palmitate. In experiment 2, lumbar vertebrae ( n = 8 replications) were treated with 0, 0.06 M, or 0.10 M ascorbic acid and ascorbate-6-palmitate, packaged in high-oxygen MAP, and displayed for 5 d (1 °C). During display, vertebrae treated with ascorbic acid had a redder color ( P < 0.05) than those treated with ascorbate-6-palmitate, and both treatments were redder ( P < 0.05) than untreated controls. To better understand the mechanism of beef bone marrow discoloration, future work might address the hydrophobic antioxidants' lack of effectiveness and the potential localization of components responsible for bone discoloration within the aqueous phase of erythropoietic marrow.  相似文献

Placement of a guiding catheter through a tortuous, narrowed, or intrinsically small vessel may result in severe reduction or occlusion of blood flow. However, nonbraided guiding catheters can be simply modified with a catheter hole punch to create a temporary stent. The stent reestablishes blood flow, which is routed through the distal segment of the guiding catheter while maintaining the guide platform for the introduction of microcatheters and devices necessary to perform intervention.  相似文献

A specific Method of analysis for separation and identification of nitrosamines by combination of capillary gas chromatography and mass spectrometry
Summary By coupling gas chromatography and mass-spectrometry using special prepared columns we succeeded in finding à specific separating and detecting procedure for nitrosamines in region of microgramms. This procedure was tested with various nitrosamine model-mixtures.
