The objectives of the present study were (a) to produce gluten-free bread, fortified with iron (GFB-Fe), using selected iron compounds (ferric pyrophosphate, ferric pyrophosphate with emulsifiers, NaFeEDTA, electrolytic iron, ferrous gluconate, ferrous lactate and ferrous sulphate) (b) to test sensory characteristics of the GFB-Fe (feel-mouth texture, crumb colour, aroma and taste) (c) to compare iron dialyzability of various iron compounds in GFB-Fe. The most acceptable products were those fortified with ferric pyrophosphate with emulsifiers and ferric pyrophosphate. Ferrous dialyzable iron (ferrous iron with molecular weight lower than 8000 Da, an index for prediction of iron bioavailability) was measured under simulated gastrointestinal conditions. Ferrous dialyzable iron in GFB-Fe fortified with ferric pyrophosphate with emulsifiers, NaFeEDTA, ferrous bis-glycinate, ferrous gluconate or ferrous sulphate was higher than that in GFB-Fe fortified with electrolytic iron, ferrous lactate or ferric pyrophosphate (P < 0.05). These results are promising for the development of GFB-Fe products in the future.  相似文献

Aquaporin-1 (AQP1), a water channel, and the hypoxia-inducible factor 1α (HIF1A) are implicated in acute lung injury responses, modulating among others pulmonary vascular leakage. We hypothesized that the AQP1 and HIF1A systems interact, affecting mRNA, protein levels and function of AQP1 in human pulmonary microvascular endothelial cells (HPMECs) exposed to lipopolysaccharide (LPS). Moreover, the role of AQP1 in apoptosis and wound healing progression was examined. Both AQP1 mRNA and protein expression levels were higher in HPMECs exposed to LPS compared to untreated HPMECs. However, in the LPS-exposed HIF1A-silenced cells, the mRNA and protein expression levels of AQP1 remained unaltered. In the permeability experiments, a statistically significant volume increase was observed at the 360 s time-point in the LPS-exposed HPMECs, while LPS-exposed HIF1A-silenced HPMECs did not exhibit cell swelling, implying a dysfunctional AQP1. AQP1 did not seem to affect cell apoptosis yet could interfere with endothelial migration and/or proliferation. Based on our results, it seems that HIF1A silencing negatively affects AQP1 mRNA and protein expression, as well as AQP1 function, in the setting of lung injury.  相似文献

In this study the effect of resistant starch (RS) addition on gluten‐free cakes from rice flour and tapioca starch physical and sensorial properties was investigated. Increase in RS concentration made cake batters less elastic (drop of G'(ω), G''(ω) values) and thinner (viscosity decreased). Cakes specific volume increased with an increase in RS level and was maximized for 15 g/100 g RS, although porosity values were significantly unaffected by RS content. Crumb grain analysis exhibited a decrease in surface porosity, number of pores and an increase in average pore diameter as RS concentration increased. During storage, cake crumb remained softer in formulations with increasing amounts of RS. Sensory evaluation of cakes demonstrated the acceptance of all formulations, with cake containing 20 g/100 g RS mostly preferred. Gluten‐free cakes with improved quality characteristics and high nutritional value can be manufactured by the incorporation of RS.  相似文献

The QuikSCAT mission provided valuable daily information on global ocean wind speed and direction from July 1999 until November 2009 for various applications including numerical weather prediction, ocean and atmospheric modelling. One new and important application for wind vector satellite data is offshore wind energy, where accurate and frequent measurements are required for siting and operating modern wind farms. The greatest advantage of satellite observations rests in their extended spatial coverage. This paper presents analyses of the 10 year data set from QuikSCAT, for the overview of the wind characteristics observed in the North and Baltic Seas, where most of Europe's offshore wind farms operate and more will be constructed. Significant issues in data availability are identified, directly related to the flagging schemes. In situ observations from three locations in the North Sea are used for comparisons. Mean biases (in situ minus satellite) are close to zero for wind speed and ‐2.7° for wind direction with a standard deviation of 1.2 m s ? 1 and 15°, respectively. The impact of using QuikSCAT and in situ measurements extrapolated to 10 m for wind power density estimations is assessed, accounting for possible influences of rain‐contaminated retrievals, the sample size, the atmospheric stability effects and either fitting the Weibull distribution or obtaining the estimates from the time series of wind speed observations.Copyright © 2012 John Wiley & Sons, Ltd.  相似文献

Cod roe landings are subject to great variability regarding their quality and subsequent price for the food industry. A scheme was developed for the classification of cod roe into four quality grades (A, B, C and D) based on appearance and texture attributes as described by cod roe traders. Evaluation of the maturity stage of 80 commercial cod ovaries through the frequency distribution of oocyte diameter and the percentage presence of empty follicular sacks revealed that cod ovaries with commercial value are at stage 4 (ripe or vitellogenic), stage 5 (spawning) and stage 6 (spent) of development. The designated maturity stages were found to be closely related to the described quality grades. This relationship implied that vitellogenic ovaries (stages 4a, 4b and 4c) were of A quality, early spawning ovaries (stage 5a) were most often classed as B quality, advanced and late spawning ovaries (stage 5b and 5c) were of C quality, whilst spent ovaries (stage 6) were of the lowest quality grade (D). Several physicochemical characteristics recorded (eg pH, membrane features) were also found to be related to the quality and the maturity stage of the ovaries. There is a significant relationship between roe quality and moisture content, with roes of higher quality having a lower moisture content. © 1999 Society of Chemical Industry  相似文献
