PHYSIOLOGICAL CONSEQUENCES OF MINIMALLY PROCESSED FRUITS AND VEGETABLES

The physiological consequences of minimal processing are dire. Mechanical injury sets off a complex series of events which result in loss of quality (i.e. color, texture and flavor). Control of this wounding response is a major obstacle that must be overcome. To prolong postharvest life, respiration must be reduced while producing enough energy to maintain the “energized state”. The central roles of membranes and calcium in maintaining quality are discussed.     

On the capacity of a cellular CDMA system

It is shown that, particularly for terrestrial cellular telephony, the interference-suppression feature of CDMA (code division multiple access) can result in a many-fold increase in capacity over analog and even over competing digital techniques. A single-cell system, such as a hubbed satellite network, is addressed, and the basic expression for capacity is developed. The corresponding expressions for a multiple-cell system are derived. and the distribution on the number of users supportable per cell is determined. It is concluded that properly augmented and power-controlled multiple-cell CDMA promises a quantum increase in current cellular capacity     

Occurrence and Preclusion of Terpene Chlorohydrins in Citrus Essential Oils

ABSTRACT: Screening commercial cold-pressed oils revealed the presence of terpene chlorohydrins, which may have quality and safety implications for end-users. Concentrations of (1R, 2R, 4R)-2-chloro-8- p -menthen-1-ol in some citrus essential oils ranged from less than 1 to 140 ppm. More than half of the oils tested contained less than 2 ppm of (1R, 2R, 4R)-2-chloro-8- p -menthen-1-ol. A pilot plant study used different concentrations of chlorinated water during the oil-recovery process. Cold-pressed oil, produced from a 30-ppm chlorine solution, contained (1R, 2R, 4R)-2-chloro-8- p -menthen-1-ol at detection threshold. The presence of (1R, 2R, 4R)-2-chloro-8- p -menthen-1-ol in citrus essential oils results from processing conditions and can be reduced through the reduction of chlorine levels in treatment water.     

Flavor Fade in Peanuts During Short-term Storage

ABSTRACT: Flavor characteristics of roasted peanuts over short-term storage were explored through sensory and chemical analyses. The volatiles from freshly roasted peanuts were evaluated over short-time (21 d) storage using gas chromatography, chemosensory techniques, and a sensory panel to quantify and identify pyrazines and hexanal over a 21-d storage period. A significant decrease ( P < 0.05) was noted in 2,3-diethylpyrazine, 2-methoxypyrazine, 2,3-dimethylpyrazine, 2-ethyl-3-methylpyrazine, and 2,3,5-trimethylpyrazine concentrations over a 21-d period. No significant difference ( P > 0.05) was noted in the 2-methylpyrazine and 2-ethylpyrazine concentrations. The hexanal concentration significantly increased ( P < 0.05) over the 21-d period. The peroxide values and sensory analysis agreed with these results. A significant increase ( P < 0.05) in peroxide value was seen at days 14 and 21, and a significant decrease ( P < 0.05) in fresh roasted peanuty flavor from day 0 to 21 and significant increases ( P < 0.05) in painty, cardboardy, and bitter flavors from day 7 to 21 with the sensory analysis. The electronic nose successfully separated day 0 and 21 samples from day 7 and 14 samples, which were also separated but with some overlap.     

Evaluation of Time-Intensity Sensory Responses using a Personal Computer

A method is presented which utilizes a personal computer to measure time-intensity (T-I) sensory responses. The judge uses a game paddle which moves an “X” along a fixed scale appearing on the monitor screen to indicate the attribute intensity at each instant in time. A clicker device on the game paddle can be used to record the occurrence of events such as initial mouth entry and time of swallowing. Data acquisition is continuous with the data stored on discs. This technique has advantages over strip chart recorder methods. Disc storage allows rapid and efficient data analysis. Judges can perform the evaluations virtually unsupervised with only minimal training.     

The controversy over recovered memories.

Comments on the article by J. L. Alpert et al (see record 2000-13581-002), which presented the report of the American Psychological Association Working Group on Investigation of Memories of Childhood Abuse. The authors discuss 4 issues in this commentary: (a) the assumptions and evidence used to support the case for dissociated and recovered memories (noting that the evidence is weak and the assumptions internally inconsistent as well as contradictory to a mass of experimental evidence about human memory); (b) the process by which dissociated memories are said to be recovered (events that were originally very poorly encoded as fragmentary, kinesthetic memories cannot be recovered with accuracy later); (c) 4 bodies of relevant, but neglected, research on human memory (reminiscence and hypermnesia, effectiveness of retrieval cues, priming in implicit memory tests, and intentional forgetting); and (d) the issue of appropriate research strategies to gain evidence on the thorny issues of long-delayed retrieval of information. Current evidence does not support the conclusion that memories of repeated abuse are dissociated and recovered with accuracy years later. DDFSGEN

This paper presents a functional compiler for the automatic design of Direct Digital Frequency Synthesizer (DDFS) integrated circuits (ICs) using a ROM based table look-up architecture. The compiler allows the user to specify high-level specifications such as the acceptable spurious response and it generates the IC architecture, floorplan, and layout. To construct the layout for different specifications, a library of parameterized macrocells has been developed in 1.2 m CMOS technology.A test chip with a quadrature DDFS module has been generated, using the compiler, and fabricated. The chip has two input signals: one is for frequency control while the other is for phase initialization. Input and output word lengths are 16 bits and 6 bits respectively. The chip complexity is approximately 12,000 transistors (DDFS core) and the die size is 4.8×2.9mm ². A maximum sample rate of 80 MHz has been attained implying a maximum sine (cosine) output frequency of 40 MHz and a frequency resolution of 1.22 kHz. The maximum spurious level measured is –46 dB.
