DEVELOPMENT OF THE ARMOUR TENDEROMETER FOR TENDERNESS EVALUATION OF BEEF CARCASSES

A simple rapid non-destructive test and apparatus were developed for quantifying tenderness of beef carcasses. A probe with ten 1/2 inch diameter needles mounted on a manifold is pressed manually two inches into the rib eye. Measurements of maximum force during penetration into the cold rib eye on the day after slaughter correlated well with subjective panel tenderness scores on the same meat cooked after one week of aging.

Phytoplankton pigment patterns in the Canary Islands area as determined using Coastal Zone Colour Scanner data

Abstract

Data from the Nimbus-7 Coastal Zone Colour Scanner (CZCS) were analyzed to determine the phytoplankton pigment patterns in the ocean surrounding the Canary Islands. Two different pattterns were observed in this region. One pattern was associated with the influence of the northwest African coastal upwelling system on the ocean surrounding the Canary Islands and the other was associated with individual islands, probably due to the disruptive effect of the Canary Islands on the flow of the Canary Current     

RENEWAL IN A WORKING-CLASS BLACK NEIGHBORHOOD

ABSTRACT: This article assesses the progress of community development corporations (CDCs) in renewing the physical and social environments of urban neighborhoods, particularly working-class black neighborhoods. Specifically, the author documents the work, outcomes, and challenges of CDCs in South Jamaica, Queens, one of New York City's oldest working-class black neighborhoods. In this instance, CDCs are attempting to reinstill the social community by rebuilding the physical community. Their vision of the social community is characterized by a greater concentration of owner-occupied housing units, attractive properties, and a growing middle class. To this end, the CDCs in South Jamaica have encouraged home owner-ship, incumbent upgrading, and middle-class resettlement. The work of CDCs in South Jamaica has yielded some positive results in terms of the trajectory of this working-class black neighborhood. However, there are daunting challenges ahead for the CDCs in South Jamaica, as well as those attempting renewal in other working-class black neighborhoods.

Data servicesprovided over mobile radio, cable, terrestrial broadcast andDirect Broadcasting Satellite likewise are excused from mostforms of rate, content and carriage regulation. Data has longbeen the ‘incidental’ service tagged onto somethingelse order and more important. As such, data has been the fotunatebeneficiary of regulatory accident, inattention, neglect andindifference. Wires and radios alike will all soon be digital,and bandwidth is increasing rapidly in every medium. ‘Data’traffic is growing far faster than analog voice or video. Andon broadband digital channels ‘data’ encompasseseverything. The data inmates ate taking over the regulatoryasylum.     

Effective diffusivity of total solids and pectic substances from apple tissue

The effective diffusivities of total solids and pectic substances from apple tissue were determined at 40 and 60°C in water and buffer; the addition of pectolytic enzyme in buffer at 40°C was also investigated. the Fickian model for unsteady-state diffusion was applicable in all cases. Effective diffusivity values both for total solids and soluble pectic substances in deionized water were temperature dependent. the effective diffusivity values for total solids loss were reduced by the presence of buffer at 40°C but not at 60°C. the effective diffusivity values for soluble pectic substances were not affected by buffer at 40°C but were noticeably lower at 60°C compared to deionized water at the same temperature. the addition of a pectolytic enzyme preparation did not improve the mass transfer of either total solids or soluble pectic substances.     

Global Change And Local Politics: Economic Decline and the Local Regime in Edmonton

ABSTRACT: The literature on urban politics shows the global economy has a massive influence on local decisionmaking and that the character of local politics varies markedly from city to city. Less attention is devoted, however, to the relative impact of global and local forces on a particular city. This paper addresses that gap by testing the views of Peterson, Mollenkopf and Stone against a case study. The Edmonton case study provides an ideal research setting: economic reversal followed by a series of abject capitulations to the pressures of developers who promised to restore some of the lost business. The economic reversal is shown to have been externally generated. The local response is examined with a view to determining what maneuvering room remained in the face of these circumstances. The author argues that the ultimate effect of externally generated pressures was not predetermined, but was mediated by a complex local political process that could have taken a different course. The theoretical importance of the case is discussed and evaluated.
