The present paper demonstrates that a nonstntggling slaughter method can delay degradation of type V collagen in meat of chub mackerel Scomber japonicus and softening of the meat during postharvest chilled storage. The fish were slaughtered by piercing a knife into nape (nonstruggling method) or by leaving on ground (struggling method) and then stored in an ice box. Sensory study revealed that the postharvest softening of the meat was moderated at 4 and 8 h by the non‐struggling slaughter method in comparison with the struggling method. On the basis of the specific solubilization of type V collagen and reduced tyrosine content in it, a cleavage of the nonhelical regions (telopeptides) of the type V collagen occurred during the chilled storage in the fish slaughtered by the struggling method. The degradation of type V collagen was also slower in the meat of the fish slaughtered by the nonstruggling method, which can be directly linked to the moderation of the postharvest softening.  相似文献

Phosphatidylethanolamine (PE), which contains highly unsaturated fatty acid (HUFA) specifically in sn -2 position, was synthesized by porcine pancreatic phospholipase A2-catalysed esterification of lysophosphatidylethanolamine with HUFA. the use of glycerol containing only a little water as solvent was the important key to this reaction. A 27% yield of up to 94.5% sn -2 eicosapentaenoic acid (EPA)-containing PE was obtained using >99% EPA as a substrate HUFA.  相似文献

Prolonged steeping of rice grains in hot or warm water was examined to study the gelatinization process of rice starch. Rice treated at 75°C for 8–18 hr showed the same type “V” X-ray diffraction pattern as that of cooked rice. Rice treated at 50–60°C for 24–72 hr showed a strengthened type “A” pattern. The gelatinization degree of the 75°C treated rice determined by the β-amylase-pullulanase method and Brabender amylography was as high as that of cooked rice. The value of the 50–60°C treated rice was lower than that of raw rice. The gelatinization temperature of rice varied with the two types of treatment.  相似文献

The distribution and heat inactivation of peroxidase (EC 1.11.1.7) isoenzymes in the pericarp, germ and endosperm of three sweet-corn ( Zea mays ) hybrids (Hawaiian hybrid H68, high-lysine hybrid o2su COMP 1c, and a high-sucrose hybrid sh2 SYN 2e) were investigated. Polyacrylamide gel electrophoresis showed that the isoenzyme content of all three tissue fractions were complex with the pericarp having the largest number of isoenzymes. Isoenzyme distributions in the three varieties were similar but with exceptions, the most notable being the relatively simple distribution in the endosperm of H68. Studies on relative heat stabilities of the peroxidase isoenzymes at 71°C showed that no fraction was completely heat resistant although most bands did contain some heat resistant forms. Only one isoenzyme fraction, which was present in all three varieties, was completely heat labile. In contrast, some isoenzyme bands in the germ and endosperm were completely heat labile in some varieties but not in others. These results suggest that heat inactivation and consequently, residual peroxidatic activity found in processed corn is determined not only by isoenzyme content but also by the variable heat resistance of some isoenzyme fractions.  相似文献

This paper gives a new criterion for the inverse regulator problem in terms of polynomial matrix fractions. The generalized Kalman equation in polynomial matrix form leads to a necessary and sufficient condition for a stable feedback law to be optimal for some (unknown) quadratic performance index. This criterion consists of (i) a symmetric factorizability of a polynomial matrix, and (ii) a polynomial-type criterion that guarantees detectability. The relationship between the Riccati and Kalman equations is also established. Finally, an example is given to illustrate the new result in contrast with the existing result.  相似文献

激光焊接时较快的冷却速度,有可能促进凝固热裂纹的生成,而凝固热裂纹的生成与凝固温度区间内的残留液体金属行为直接相关.采用由高速摄像机和光学显微镜头组成的摄像装置,针对SUS304,SUS316,SUS310S等3种奥氏体不锈钢激光焊接熔池后端残留液体金属的凝固行为进行高速高倍在线观察,对不同焊接速度下的熔池凝固行为进行了分析,并对3种材料凝固前沿残留液体金属的存在范围进行了量化比较.结果表明,在线观察法可辨别的残留液体金属是固液相共存区间的一部分,在线观察得到的残留液体金属的存在范围与热裂纹试验获得的热裂纹敏感性有较好的对应关系.  相似文献
