Abstract

The traditional Mediterranean diet (MedDiet) is a well-known dietary pattern associated with longevity and improvement of life quality as it reduces the risk of the most common chronic pathologies, such as cancer and cardiovascular diseases (CVDs), that represent the principal cause of death worldwide. One of the most characteristic foods of MedDiet is olive oil, a very complex matrix, which constitutes the main source of fats and is used in the preparation of foods, both raw as an ingredient in recipes, and in cooking. Similarly, strawberries and raspberries are tasty and powerful foods which are commonly consumed in the Mediterranean area in fresh and processed forms and have attracted the scientific and consumer attention worldwide for their beneficial properties for human health. Besides olive oil and berries, honey has lately been introduced in the MedDiet thanks to its relevant nutritional, phytochemical and antioxidant profile. It is a sweet substance that has recently been classified as a functional food. The aim of this review is to present and discuss the recent evidence, obtained from in vitro, in vivo and epidemiological studies, on the potential roles exerted by these foods in the prevention and progression of different types of cancer and CVDs.  相似文献

Meat has exerted a crucial role in human evolution and is an important component of a healthy and well balanced diet due to its nutritional richness. The aim of the present review was to shed light on the nutritional composition of horsemeat and their benefits for human health. One of the reasons for such interest was the occurrence, in Europe several years ago, of dioxin, Bovine Encephalopathy and foot-and-mouth disease problems in farm animals. Therefore, consumers began to look for alternative red meats from other non-traditional species. There is no carcass classification system on horses designated to meat consumption. It would be advisable to standardize the equine meat market to reduce variations that may reflect differences in meat quality. The nutritional composition of horsemeat by comparison with pork, beef or poultry is characterized by low levels of fat and cholesterol (about 20% less), relatively high concentrations of n− 3 fatty acids and heme iron indicating that its consumption may be beneficial for health. Therefore, horsemeat may supplement the meat market with good quality products, although as in other dietary components moderation is advisable.  相似文献

Nitric oxide (NO) has emerged in the last 30 years as a key molecule involved in many physiological processes in plants, animals and bacteria. Current research has shown that NO can be delivered via donor molecules. In such cases, the NO release rate is dependent on the chemical structure of the donor itself and on the chemical environment. Despite NO's powerful signaling effect in plants and animals, the application of NO donors in agriculture is currently not implemented and research remains mainly at the experimental level. Technological development in the field of NO donors is rapidly expanding in scope to include controlling seed germination, plant development, ripening and increasing shelf‐life of produce. Potential applications in animal production have also been identified. This concise review focuses on the use of donors that have shown potential biotechnological applications in agriculture. Insights are provided into (i) the role of donors in plant production, (ii) the potential use of donors in animal production and (iii) future approaches to explore the use and applications of donors for the benefit of agriculture. © 2016 Society of Chemical Industry  相似文献

Berries are a relevant source of micronutrients and nonessential phytochemicals, such as polyphenol compounds, that play a synergistic and cumulative role in human health promotion. Several systematic analyses showed that berry phenolics are able to detoxify reactive oxygen and nitrogen species, blocking their production, to intervene in the cell cycle, participating in the transduction and expression of genes involved in apoptosis, and to repair oxidative DNA damage. As a consequence, the improvement of the nutritional quality of berries has become a new quality target of breeding and biotechnological strategies, to control or to increase the content of specific health‐related compounds in fruits. This work reviews, on the basis of the in vitro and in vivo evidence, the main berries' phytochemical compounds and their possible mechanisms of action on pathways involved in several type of diseases, with particular attention to cancer, inflammation, neurodegeneration, diabetes and cardiovascular diseases. © 2015 Society of Chemical Industry  相似文献

The development of H2/air alkaline membrane fuel cells (AMFCs) enables the use of non-platinum group metal (PGM) catalysts which are intrinsically stable and have an activity similar to platinum in alkaline media for the oxygen reduction reaction (ORR). As opposed to PEMFCs, the research and development of these types of catalysts for AMFC has had little attention and even less has been given to the development of alkaline membranes and ionomers. Acta S.p.A. has developed recently new non-PGM ORR catalysts with activity higher than Pt in alkaline media. More importantly, a new anionic ionomer derived from cheap starting materials with optimum performance has been produced. In this paper we demonstrate the use of this new ionomer in H2/air AMFCs showing the first polarization and durability data, with current densities higher than those recently reported in the literature. Furthermore, we report the effect of CO2 on AMFC performance, showing the possibility of use of such alkaline devices not only in outer-space applications, but also with atmospheric air for large scale devices.  相似文献

A simplified growth/no growth (G/NG) model, conceptually derived from the Gamma model and making direct and explicit use of growth limits of bacteria through a normalization constant (η), was proposed. The η value, which quantifies the product of the cardinal optimal distances for growth probability, is a species-independent constant. This is of importance when experimental data is missing or insufficient. The simplified G/NG model was developed including the effect of temperature, pH and water activity, and was expanded incorporating the preservative effects. As a practical application, the model was investigated for its ability to describe published data. The successful validation of the simplified G/NG model is discussed in regard to its potential applicability as a first estimate method for the development of safe food products.  相似文献

In the present study magnetic resonance imaging (MRI) was used to evaluate the effect of storage conditions, 0 °C and 90% relative humidity (RH) or 20 °C and 70% RH, on minimal structural changes of kiwi tissue. Storage time was 35 days at 20 °C and 65 days at 0 °C including shelf life. Ethylene and respiration were followed during the experiment as well as commercial quality parameters such as sugars and firmness. MRI images weighted for proton density (ρ) and transverse relaxation times (T2), were recorded after 10, 20, 35, 55 and 65 days. A decrease of the diameter was clearly visible in samples stored at 20 °C after 3 weeks and a coarse contour of the pericarp appeared after 40 days. Accumulation of water in the pericarp was found, suggesting a migration towards the outer regions occurs and that the fruit water loss due to evapo-transpiration is slower than the migration process. Samples stored at 0 °C showed no relevant changes in dimension and structural features for the whole period considered except after removal to shelf life. The observed variations of the internal morphology were correlated with the transverse relaxation times of defined areas and with softening of fruits. Measured T2 profiles showed double-exponential decays, a fast- and a slow-relaxing component, indicating the existence of two different types of water molecules within cellular tissues: strongly and weakly bound, respectively. The relation among MRI data, ethylene and softening is discussed.  相似文献

In this study low-acid sausages were studied to characterize their physicochemical, microbiological, and textural properties during ripening. The final a(w) was 0.87-0.88, whereas pH values stayed around their initial values during processing. Lactic acid bacteria increased very slowly in number and a small increase of Micrococcaceae was also noticed. Low-acid sausages showed low hardness and cohesiveness, and were easily distinguishable by sensory analysis from other industrial and artisan sausages. Under the conditions of the study, observed volatile compounds were mainly from spices and wine. The respective contribution of muscle and indigenous bacterial enzymes to proteolysis was determined by comparing changes in low-acid sausages to those containing an antibiotic-antimycotic mixture or sugar. A large part of the degradation of myofibrillar proteins appeared due to endogenous enzymes, although bacterial proteinases contributed to the degradation of these proteins. The role of microorganisms in proteolysis was more evident in the degradation of sarcoplasmic proteins.  相似文献
