Interactive effects of casein micelle size and milk calcium and citrate content on rennet‐induced coagulation were investigated. Milk samples containing small (SM) and large (LM) micelles, obtained from individual Holstein cows, were modified by addition of calcium and/or citrate and milk coagulation properties were evaluated in a full factorial design. The results showed that LM milk had a higher relative proportion of casein, coagulated faster, and resulted in a stronger gel than SM milk. Addition of calcium slightly decreased casein micelle size, while addition of citrate slightly increased micelle size. Calcium addition resulted in a shorter coagulation time and the strongest gels, while citrate addition increased the coagulation time and resulted in the weakest gels. Addition of calcium and citrate in combination resulted in intermediate coagulation properties. The interactive effect of micelle size and citrate was significant for gel strength. Microstructural differences between the milk gels were consistent with the rheological properties, for example, the micrographs revealed that a more homogeneous network was formed when calcium was added, resulting in a stronger gel. A more inhomogeneous network structure was formed when citrate was added, resulting in a weaker gel. Thus, variations in casein micelle size and in calcium and citrate content influence rennet‐induced coagulation in bovine milk. The calcium and citrate contents in Swedish milk have changed over time, whereby calcium content has increased and citrate content has decreased. In practical cheese making, calcium is added to cheese milk, most likely altering the role of inherent citrate and possibly influencing casein micelle size. The observed interaction effect between casein micelle size and citrate in this study, suggests that larger micelles with moderate citrate level will result in firmer gels, whereas a higher citrate content reduced gel strength more in case of large than SM. Since firmer gels are likely to retain more protein and fat than less firmer gels, this interaction effect could have implications in practical cheese production. 相似文献

The aim of the study was to evaluate the chemical composition, colour and sensory profile of rennet goat cheeses, taking into account their geographic region of production. The relationships between the botanical composition of the goats’ pasture to the fatty acid (FA) profiles and health indicators of the fat of cheese produced from their milk in artisanal conditions were also determined. Grazing of goats on natural pastures with greater floristic richness and, above all, the presence of more meadow species and herbs, not only increased the proportions of beneficial FAs in the cheese but also improved sensory characteristics valued by consumers. 相似文献

The diversity of rotifers was studied in three artificial water bodies (Azure Lake, Yellow Lake, and Purple Lake), which were once pyrite mines. The physicochemical parameters and the zooplankton composition of the water were determined. Azure Lake had a pH of 3.4–6.9, conductivity values of 165–194 µS cm??1, and low concentrations of sulphate, calcium, magnesium, copper, and iron, while the other lakes had a pH of 2.6–2.9, a conductivity of 1636–3400 µS cm??1, and high concentrations of sulphate (up to 2863 mg dm??3), Cu (up to 2650 µg dm??3), and Fe (up to 178.3 mg dm??3). The rotifer community in the lakes comprised 27 taxa (15 in Azure Lake, 13 in Purple Lake and 14 in Yellow Lake). We also found two species that are rarely observed in Poland (Aspelta cincinator and Elosa spinifera), and three species commonly found in acidic water (E. worallii, Cephalodella delicata, and C. hoodi). The types of rotifers in Azure Lake differed from those in the other two lakes. The Shannon–Weaver biodiversity index (H′) was the highest in Purple Lake (H′?=?1.255) and lowest in Azure Lake (H′?=?0.455). Molten carbonate fuel cells (MCFCs) are promising high temperature power generating devices. However, unlike solid oxide fuel cells (SOFCs) they utilize a liquid electrolyte which must be immobilized in a porous matrix.In this paper, a slurry composition for lithium aluminate (γ-LiAlO2) matrix was developed and green matrices were subsequently formed by the tape casting method. In order to achieve the desired structure of the matrix (pore size, porosity) γ-LiAlO2 powder was milled in a planetary ball mill for 18 h with a solvent, dispersant and defoamer. After this step, other ingredients were added, including a binder and plasticizer to obtain optimal rheology of the slurry. Cell tests confirmed optimal performance of the matrix compared to the third party reference γ-LiAlO2 matrices. Burned out matrix was characterized by scanning electron microscopy (SEM) and laser diffraction in order to determine the γ-LiAlO2 powder particle size and morphology. The results show that high-energy milling enabled a fine pore structure and high specific surface area of the matrix to be obtained in a relatively short time, compared to conventional fabrication routes. The matrix structure obtained within this study is suitable for high performance operation of MCFC. 相似文献

AbstractThe article presents an analysis of the influence of the natural ageing time on the strength parameters of steel cord conveyor belts. The investigated phenomena include the influence of temperatures both above and below 0 °C, as well as exposure to sun, rain and snow. The tests were performed on conveyor belts which have been operated in the Be?chatów lignite mine for 30 years, transporting ROM material. The tests included adhesion of the steel cords to the belt’s core rubber and the tensile strength of both the carry and the pulley covers. The obtained results allowed determining the number of years after which belts operated in mines lose their properties. The results also indicate how long a conveyor belt, after launching it into service, retains such strength parameters that enable its further usage after revulcanisation. This information is of significant importance for the splicing and regeneration processes. 相似文献

BACKGROUND
The oxidative deterioration of vegetable oils is commonly measured by the peroxide value, thereby not considering the contribution of individual lipid hydroperoxide isomers, which might have different bioactive effects. Thus, the formation of 9‐ and 13‐hydroperoxy octadecadienoic acid (9‐HpODE and 13‐ HpODE), was quantified after short‐term heating and conditions representative of long‐term domestic storage in samples of linoleic acid, canola, sunflower and soybean oil, by means of stable isotope dilution analysis–liquid chromatography‐mass spectroscopy.RESULTS
Although heating of pure linoleic acid at 180 °C for 30 min led to an almost complete loss of 9‐HpODE and 13‐HpODE, heating of canola, sunflower and soybean oil resulted in the formation of 5.74 ± 3.32, 2.00 ± 1.09, 16.0 ± 2.44 mmol L–1 13‐HpODE and 13.8 ± 8.21, 10.0 ± 6.74 and 45.2 ± 6.23 mmol L–1 9‐HpODE. An almost equimolar distribution of the 9‐ and 13‐HpODE was obtained during household‐representative storage conditions after 56 days, whereas, under heating conditions, an approximately 2.4‐, 2.8‐ and 5.0‐fold (P ≤ 0.001) higher concentration of 9‐HpODE than 13‐HpODE was detected in canola, soybean and sunflower oil, respectively.CONCLUSION
A temperature‐dependent distribution of HpODE regioisomers could be shown in vegetable oils, suggesting their application as markers of lipid oxidation in oils used for short‐term heating. © 2017 The Authors. Scanning technology is now widely used in coordinate metrology and is increasingly used for the measurement of small features. The high density scans now possible results in a new context which can be called high definition coordinate metrology. The availability of such high point density allows the proposition of a new approach to the old problem of probe ball tip radius correction based on the successive positions of the probe tip envelop. The resulting outer boundary is made of a succession of arcs, each of which potentially defining a likely contact point with the measured surface. The method aims at selecting the most likely contact point for each successive arc by applying geometrical criteria and a fuzzy logic estimator. The method is particularly, but not exclusively, suitable for the metrology of features with small radii as well as metrological discontinuities. It does not require obtaining the normal vector traditionally used for probe tip correction. The algorithm performance was verified experimentally on a Mitutoyo Legex 910 CMM equipped with a MPP-300 scanning probe. 相似文献

Rheumatoid arthritis (RA) is a chronic multisystem disease, therapy of which remains a challenge for basic research. The present work examined the effect of unconjugated bilirubin (UCB) administration in adjuvant-induced arthritis (AIA)—an experimental model, in which oxidative stress (OS), inflammation and inadequate immune response are often similar to RA. Male Lewis rats were randomized into groups: CO—control, AIA—untreated adjuvant-induced arthritis, AIA-BIL—adjuvant-induced arthritis administrated UCB, CO-BIL—control with administrated UCB. UCB was administered intraperitoneally 200 mg/kg of body weight daily from 14th day of the experiment, when clinical signs of the disease are fully manifested, to 28th day, the end of the experiment. AIA was induced by a single intradermal immunization at the base of the tail with suspension of Mycobacterium butyricum in incomplete Freund’s adjuvant. Clinical, hematologic, biochemical and histologic examinations were performed. UCB administration to animals with AIA lead to a significant decrease in hind paws volume, plasma levels of C-reactive protein (CRP) and ceruloplasmin, drop of leukocytes, lymphocytes, erythrocytes, hemoglobin and an increase in platelet count. UCB administration caused significantly lowered oxidative damage to DNA in arthritic animals, whereas in healthy controls it induced considerable oxidative damage to DNA. UCB administration also induced atrophy of the spleen and thymus in AIA and CO animals comparing to untreated animals. Histological signs of joint damage assessed by neutrophils infiltration and deposition of fibrin were significantly reduced by UCB administration. The effects of exogenously administered UCB to the animals with adjuvant-induced arthritis might be identified as therapeutic, in contrast to the effects of UCB administration in healthy animals rather classified as toxic. 相似文献

In this research we subjected samples of poly(L-lactide) (PLLA) extruded film to ultraviolet (193 nm ArF excimer laser) radiation below the ablation threshold. The modified film was immersed in Simulated Body Fluid (SBF) at 37 °C for 1 day or 7 days to obtain a layer of apatite ceramic (CaP) coating on the modified PLLA surface. The samples were characterized by means of optical profilometry, which indicated an increase in average roughness (Ra) from 25 nm for the unmodified PLLA to over 580 nm for irradiated PLLA incubated in SBF for 1 day. At the same time, the water contact angle decreased from 78° for neat PLLA to 35° for irradiated PLLA incubated in SBF, which suggests its higher hydrophilicity. The obtained materials were investigated by means of cell response fibroblasts (3T3) and macrophage-like cells (RAW 264.7). Properties of the obtained composites were compared to the unmodified PLLA film as well as to the UV-laser irradiated PLLA. The activation of the PLLA surface by laser irradiation led to a distinct increase in cytotoxicity, while the treatment with SBF and the deposition of apatite ceramic had only a limited preventive effect on this harmful impact and depended on the cell type. Fibroblasts were found to have good tolerance for the irradiated and ceramic-covered PLLA, but macrophages seem to interact with the substrate leading to the release of cytotoxic products. 相似文献
