The objective of the present study was to determine the diversity and causative factors in the textural profile of the Artisan Ranchero Cheese (ARC), a popular soft cheese made with raw cow's milk, which is consumed fresh. These factors included climatic conditions, production zone, cheese supplies, cheesemaking procedure and chemical attributes. Texture attributes were determined using texture profile analysis method. The relationship between texture and chemical attributes of the ARC were determined by a Factor Analysis. An Agglomerative Hierarchical Clustering Analysis was used to differentiate the ARC manufactures into groups. Two groups were identified, production zone being the variable which explained the variation in the data. Finally, a Discriminant Analysis was performed to determine standardisation of the ARC attributes through the sampling periods. The 89% of cheese samples were correctly classified into their own cheese manufacture. This last analysis demonstrated that there was an important degree of standardisation of the cheesemaking procedure within each cheese manufacture, something that was not demonstrated before with artisan cheesemakers.  相似文献

Nixtamalised flour from transgenic maize (genetically modified maize with the cDNA of amarantin) and its tortillas were evaluated for some technological and nutritional properties and compared to the commercial brand MASECA. Nixtamalised transgenic maize flour (NTMF) showed higher protein content, total colour difference, pH, water solubility index, essential amino acids content and lower Hunter “L” value, water absorption index, resistant starch and retrograded resistant starch than MASECA flour. Tortillas from NTMF had higher protein content (12.64% vs 8.93%, db), essential amino acids content and calculated protein efficiency ratio (C-PER; 2.05 vs 1.04) than tortillas from MASECA. Tortillas from both nixtamalised transgenic maize and MASECA flours showed similar sensory properties (puffing and acceptability). The use of transgenic maize for flour and tortilla preparation may have a positive impact on the nutritional status of people from countries where maize is the basic staple food.  相似文献

Despite the high prevalence of lactic acid bacteria in dark fermentation (DF) processes, their ecological role is not yet completely elucidated, preventing their systematic use as “helpers” for hydrogen production. The aim of this study was to investigate the microbial community structure of a lactate-driven DF process that successfully produced hydrogen under carbohydrate-limiting conditions using tequila vinasse as a substrate. Microbial responses to stepwise decreases in hydraulic retention time (HRT) from 24 to 4 h were assessed by using Illumina MiSeq sequencing. HRTs above 12 h and below 6 h led to a lower hydrogen production rate (HPR; 0.2–3.3 L/L-d) and process stability (HPR variations within 25–65%), which were associated with the presence of Acetobacter lovaniensis, Clostridium luticellari, Blautia coccoides, and the high abundance of propionate and lactate. Interestingly, transient conditions from unsteady-to-steady state occurred at an HRT of 12 h, where species richness and evenness decreased remarkably. Accordingly, HRTs between 12 and 6 h resulted in higher HPRs of up to 11.7 ± 0.7 L/L-d with HPR variations of less than 10%, which closely matched with the dominance of Clostridium sp., and butyrate and acetate as the main aqueous products. Overall, the results indicate that the successfulness of exploiting the ‘unwanted’ LAB proliferation through lactate-driven DF processes requires the enrichment of lactate-consuming and hydrogen-producing bacteria, which entails the selection of proper biocatalysts and operating conditions/strategies such as the operation of DF reactors under carbohydrate-limiting conditions and low HRTs.  相似文献

Protein and total calcium, iron, and zinc were determined in 70 accessions of wild and weedy common bean (Phaseolus vulgaris L) from different sites in two Mexican states (Jalisco and Durango). Protein digestibility, essential amino acid profiles, tannins, phytic acid and extractable iron were determined in selected accessions. The phytate/zinc and the phytate × (calcium/zinc) molar ratios were also determined as predictors of zinc bioavailability. For comparative purposes, two cultivated common beans were included. The wild and weedy beans contained more protein and similar protein digestibility compared with cultivated samples. The contents of sulfur amino acids were low in all samples; additionally, beans from Jalisco had higher contents of sulfur amino acids than cultivated ones. Beans from Durango showed higher leucine, valine and aromatic amino acids contents than cultivated beans. Some wild and weedy beans from Jalisco and Durango showed high contents of calcium (7470 mg kg−1), iron (280 mg kg−1), and zinc (33.1 mg kg−1). The phytic acid × (calcium/zinc) molar ratios of some wild and weedy beans were similar to those of cultivated beans. This paper presents a theoretical analysis of the problem of cuttings transport for a two-region system composed of a fluid bed (ω-region) and a stationary bed of drill cuttings, which is considered as a porous medium (η-region) in the two-phase system. The ω-region is made up of a solid phase (σ-phase) dispersed in a continuos fluid phase (β-phase), while the η-region consists of a stationary solid phase (σ-phase) and a fluid phase (β-phase). The volume averaging method was applied in this study. Volume-averaged transport equations were derived for both the fluid bed and the porous medium regions. These equations are based on the non-local form of the volume-averaged momentum transport equation that is valid within the bounded region. Outside this region, the non-local form reduces to the classic volume-averaged transport equation. From these equations, a one-equation model was obtained, and the constraints that the one-equation model must satisfy were applied. For estimating the averaged pressure drop and the averaged velocity, the one-equation model was solved numerically by using the finite-difference technique in the implicit scheme. Numerical results are in agreement with experimental data and theoretical results reported in the literature.  相似文献

A cost effective production of the membrane electrode assemblies (MEA) is a crucial issue for the generation of electricity by proton exchange membrane fuel cells (PEMFC). The deposition of the exact catalyst content on the electrodes in a single printing step is desirable to save processing time and enable cost reduction. In this study, an innovative MEA production process by screen print is developed to produce high performance catalyst layers. The control of the surface tension of the catalyst ink is fundamental to allow the catalyst layer deposition in a single printing step. The electrodes prepared in this way show higher performance than those prepared in several steps. The optimal ink developed shows a viscosity of 2.75 Pa s, a total solid content of 33.76 wt.%, a density of 1.294 g cm−3, and tack value of 92 U.T.  相似文献

The ferromagnetic perovskite oxide BiMnO3 is a highly topical material, and the solid solutions it forms with antiferromagnetic/ferroelectric BiFeO3 and with ferroelectric PbTiO3 result in distinctive polar/nonpolar morphotropic phase boundaries (MPBs). The exploitation of such a type of MPBs could be a novel approach to engineer novel multiferroics with phase‐change magnetoelectric responses, in addition to ferroelectrics with enhanced electromechanical performance. Here, the interplay among crystal structure, point defects, and multiferroic properties of the BiMnO3–BiFeO3–PbTiO3 ternary system at its line of MPBs between polymorphs of tetragonal P4mm (polar) and orthorhombic Pnma (antipolar) symmetries is reported. A strong dependence of the phase coexistence on thermal history is found: phase percentage significantly changes whether the material is quenched or slowly cooled from high temperature. The origin of this phenomenon is investigated with temperature‐dependent structural and physical property characterizations. A major role of the complex defect chemistry, where a Bi/Pb‐deficiency allows Mn and Fe ions to have a mixed‐valence state, in the delicate balance between polymorphs is proposed, and its influence in the magnetic and electric ferroic orders is defined.  相似文献

This work develops a methodology for the determination of costs associated to products generated in a small wastewater treatment station. The methodology begins with plant units identification, relating their fluid and thermodynamics features to each point indicated in its process diagram. Following, a functional diagram and a formulation are developed in exergetic basis, describing all equations for these points, which are the constraints for optimisation and are used to determine costs associated to products generated in a Small Wastewater Treatment Station – SWTS. The methodology is applied to a hypothetical system based on SWTS plants and presents consistent results when compared to values based on previous experiments and evaluations.  相似文献
