The effect of protein types and low molecular weight surfactants (LMS) on spray drying of sugar-rich foods has been studied using sucrose as a model sugar and sodium caseinate (NaCas) and pea protein isolate (PPI) as model proteins. Sodium stearoyl lactylate (SSL) and Polysorbate 80 (Tween-80) were chosen as model ionic and non-ionic LMS. The sucrose:NaCas and sucrose:PPI solid ratios were maintained at (99.5:0.5) and (99:1), respectively and spray-dried maintaining 25% solids in feed solutions. It was found that the proteins preferentially migrated to the air–water interface reasonably swiftly and the addition of LMS resulted into partial or complete displacement of the proteins from the air–water interface. More than 80% of amorphous sucrose powder was produced with the addition of 0.13% (w/w) of NaCas in feed solution. PPI was not as effective and produced less than 50% recovery even at 0.26% (w/w) in feed. Addition of 0.01–0.05% SSL displaced 2.0% and 29.3% of proteins from the surface of sucrose–NaCas–SSL droplet, respectively, resulting in a 6.5 ± 1.2% to 51.9 ± 1.9% reduction in powder recovery. The extent of protein displacement was higher when SSL was added into sucrose–PPI solution; however, the powder recovery was not much affected. The addition of 0.01% Tween-80 in sucrose–NaCas solution resulted in a 48.2 ± 1.5% reduction in powder recovery and at 0.05% concentration, it displaced a substantial amount or all the NaCas from the droplet surface and no powder was recovered. The addition of 0.01% and 0.05% Tween-80 into sucrose–PPI solution resulted into very low powder recoveries (24.9 ± 0.4% and 29.5 ± 1.8%, respectively). The glass transition temperature (Tg) results revealed that the amount of protein required for successful spray drying of sucrose–protein solutions depends on the amount of proteins present on the droplet surface but not on the bulk concentration. X-ray diffraction and scanning electron microscopy results showed that the powders of sucrose–NaCas/PPI and sucrose–NaCas/PPI with 0.01% SSL were mostly amorphous while those with sucrose–NaCas/PPI–Tween-80 (0.01%), sucrose–PPI–Tween-80 (0.05%) and sucrose–NaCas/PPI–SSL (0.05%) were crystalline.  相似文献

The role of soluble and insoluble aggregates induced by soy protein isolate (SPI) processing in the gelling properties of myofibrillar protein (MP) was studied. Incorporating soluble SPI aggregate could greatly improve (< 0.05) the elastic modulus (G’) and water‐holding capacity (WHC) of MP gel, but had no notable effect on MP gel strength. In contrast, incorporating the insoluble SPI aggregate significantly enhanced the G’, strength and WHC of MP gel, although the improvement in WHC was smaller than that produced by the soluble aggregate. The results of environmental scanning electron microscopy showed that the soluble SPI aggregate induced a less randomly composite gel structure, which may explain its notable enhancement of WHC. However, the insoluble SPI aggregate appeared to be granules embedded in the continuous MP gel matrix, which may be related to the reinforcement of gel strength. Hence, the results of this study suggest further means of processing commercial SPI for use in meat products.  相似文献

An elevated coupled coplanar waveguide is proposed and analyzed with a view to exploit the advantage of miniaturization that is possible with elevated coplanar waveguide structures. The influence of elevation on the directional characteristics of the elevated coupled coplanar waveguide has also been studied. The role of inner-layer (interphase) in fiber-reinforced composites is often assessed by measuring the interfacial shear strength of single fibers embedded in matrix blocks. Interfacial shear strength is calculated using simple shear lag analyses (Kelly and Tyson model). This paper shows that application of Kelly and Tyson's equation may result in gross overprediction of interfacial shear strengths if the thickness of the inner-layer is not negligible in comparison with the fiber diameter.  相似文献

Shrimp oil is extracted from shrimp (Litopenaeus vannamei) cephalothorax and subjected to the removal of cholesterol by β‐cyclodextrin (βCD). Different oil/βCD ratios (1:2, 1:3, and 1:4, w/w) and homogenization times (1, 10, and 20 min) are used. Cholesterol deduction is attained with increasing βCD levels and homogenization time. Astaxanthin content is augmented, while cholesterol concentration is reduced. Nevertheless, oil yield and astaxanthin concentration of treated oil are decreased as βCD levels are increased. To increase the oil yield, the used βCD is further extracted for three times with ethyl acetate at 1:10 (w/v) ratio, in which yield is increased from 44.6% to 64%. Cholesterol removal of 95% is obtained, while astaxanthin content is increased. Lipid oxidation is lowered as indicated by the lower TOTOX value, peroxide value, thiobarbituric acid reactive substances, and p‐anisidine value. However, lipid hydrolysis is slightly increased after treatment. Volatiles, especially aldehydes and alcohols, are decreased after treatment. FTIR spectra confirm the removal of phospholipid, which might be associated with the decreased oil yield after treatment. With the developed process, total fatty acid is increased by 15.6%, in which monounsaturated fatty acid (MUFA) and polyunsaturated fatty acid (PUFA) are augmented. βCD could remove cholesterol, increase astaxanthin and fatty acid content. Practical Applications: Shrimp oil has been known to be a rich source of astaxanthin and PUFAs with health benefit. However, it also contains cholesterol, which can be a drawback for consumption as the supplement. The removal of cholesterol, while maintaining PUFA and astaxanthin could pave a way for promoting the intake of shrimp oil. Use of βCD for oil treatment with subsequent extraction of remaining oil in the used βCD could be implemented with ease. Another advantage of the developed process is to increase both fatty acid and astaxanthin contents in the resulting oil. As a consequence, shrimp oil with lowered cholesterol can be directly used as food ingredient and also for neutraceutical purpose.  相似文献

Aspergillus species are ubiquitous environmental moulds, with spores inhaled daily by most humans. Immunocompromised hosts can develop an invasive infection resulting in high mortality. There is, therefore, a pressing need for host-centric therapeutics for this infection. To address it, we created a multi-scale computational model of the infection, focused on its interaction with the innate immune system and iron, a critical nutrient for the pathogen. The model, parameterized using published data, was found to recapitulate a wide range of biological features and was experimentally validated in vivo. Conidial swelling was identified as critical in fungal strains with high growth, whereas the siderophore secretion rate seems to be an essential prerequisite for the establishment of the infection in low-growth strains. In immunocompetent hosts, high growth, high swelling probability and impaired leucocyte activation lead to a high conidial germination rate. Similarly, in neutropenic hosts, high fungal growth was achieved through synergy between high growth rate, high swelling probability, slow leucocyte activation and high siderophore secretion. In summary, the model reveals a small set of parameters related to fungal growth, iron acquisition and leucocyte activation as critical determinants of the fate of the infection.  相似文献
